RECIPE (5 servings, 15min prep time):
-188g dark chocolate (at least 50%)
-166ml warm water
Add the warm water to the chocolate and stir to melt and combine.
Place the bowl over ice and mix 10mins by hand or with a hand mixer.
As soon as it starts to get firmer, take off the ice and keep whisking until it's like a mousse.
At this point you can adjust the sweetness by adding sugar or alternatives.

Easy and quick snacks for sweet tooth
Chocolate pudding (alpro is a good one) with cherry jam and any topping you have at home (granola, banana chips, raisins, nuts, etc.)
Vegan plain yogurt but add cashew and dried apricots for more nutrients. This combo is 😋

Chocolate ballz
I've got a small party today, and thought I'd try something different for snacksy dessert. Two of the attendees reacts to dairy, so I thought it might be fun to try to make it using a vegan margarine we usually use to fry with in Norway (flott). The traditional recipe calls for butter, but this was vary nice, and I am also sure it would work with straight up coconut fat also.
Chocolate balls
Mix thorougly:
300 gr vegan margarine (coconut/shea/rapeseed), room temp
1 tsp fine sea salt (unless you use butter)
3 dl sugar
6 heaped tbsp cocoa
2 tsp vanilla sugar
2tbsp hot water + 2tbsp coffee instant coffe, mixed or 4tbsp expresso
8 dl oats
Leave to harden in fridge for about an hour
Roll into balls, and cover in shredded coconut or pearl sugar
Keeps in fridge for a couple days, ready to eat when they are nice and cold

Veggie owl! I’ve made this before and this time I wanted to make a lion or a bunny, but Cosima was desperate for me to make “owl food” again, so I did.
The eyes are a vegan ranch dip I made from 3/4 cup vegan mayo mixed with a splash of almond milk, 1 tsp apple cider vinegar, a clove of crushed garlic, 1/2 tsp each dried parsley, dill, onion powder, paprika then salt and pepper to taste.
