Daniel Humm, chef and owner of New York鈥檚 3-Star Michelin restaurant, @elevenmadisonpark let it be known that when his Manhattan dining room reopens next month, after over a year of pandemic closure, seafood and meat would no longer be on the menu. 鈥淭he current food system is simply not sustainable, in so many ways,鈥 Humm acknowledged. 馃尡 Since it鈥檚 inception, the Ranch has promoted the power of plants through our world class cuisine, and those who have been visiting for decades credit their annual returns to the kitchen鈥檚 delectable dishes. Here鈥檚 one of our favorite recipes to try: Tofu Steaks 鈥 1 lb. firm Tofu 鈥 1/2 cup Nutritional Yeast 鈥 1/2 cup Tamari **Optional:聽 sesame seeds Slice the block of tofu into 10 even slices.聽 Dip each slice in tamari and then dredge in nutritional yeast.聽 Fry the slices in a small amount of oil on medium or low heat.聽 Sesame seeds added into the yeast are a nice edition. Yeast Gravy This gravy is extensively used as a side dish in the FPR kitchen. It is great over tofu steaks, burgers, baked zucchini, grains, etc鈥 鈥 1/2 cup Rice Flour 鈥 1/2 cup Safflower oil 鈥 1/4 cup Nutritional Yeast (plain, no additives) 鈥 2 tsp. Tamari 鈥 1/2 tsp. Basil 鈥 1 1/2 tsp. garlic powder 鈥 1/2 tsp. thyme 鈥 2 cups lukewarm water Heat the oil and whisk in flour, 2 tablespoons at a time.聽 Add lukewarm water, stirring until smooth.聽 Then add the remaining ingredients.聽 For a richer gravy, use milk instead of water.聽 Serve hot. Cooking Notes: Sometimes, it can take a few minutes for the gravy to thicken.聽 Just keep stirring, to avoid lumps and give the sauce time to come together.聽 If it is still too thin for your liking, you can always add an extra tablespoon of rice flour to help the thickening along.
