Gluten free Bao buns, take #2
I gave this recipe another go, with some adaptations. https://www.tumblr.com/somewhatdelicious/682514008758255616
Add to the mixer:
1 pack dry yeast, equivalent of 50 gr fresh 400 ml tepid water
Swirl around and let sit while you measure the rest
Mix together:
600 gr gluten free bread mix (preferably without psyllium husk, I used Schär type B) 1 dl sugar 1 dl milk powder 1 tbsp sea salt 1 tsp baking powder
Add the dry into the yeast, and also add: 25 gr fat
I used coconut oil.
Mix until combined The dough should be solf and stretchy and resembling play dough
Divide the dough: In half Each half in 4 Each piece in 4
This should result in 32 pieces Form each piece into balls Gently flatten Oil the top of the bun and fold over a greased chop stick Slide out the stick, cover and let rise for about an hour Steam each batch 10 minutes The buns should be eaten while warm, but can be frozen and reheated in steamer.
I served with pork, bacon, peanuts, chili, spring onions and pickled carrots. I also made a coriander / chili oil since the coriander was not looking great and I wanted the taste at least, even though the crunchines was also missing.

Afternoon tea
I made this today as an afternoon snack. We had a big brunch, and a late pancake supper so this was more than enough for the hours inbetween. I have one that is event fluffier, but it's maybe too fluffy for making pretty sandwiches :)
Gluten free Classic Scones
Mix together: 2 cups GF flour ( I used Schär Pattisserie) 3 tsp baking powder 3 tsp caster sugar 1 tsp salt
Add and mix until it just holds together: 1 cup full cream Bake out into 2 cm thickness, and cut into circles Brush with milk and bake at 220C at about 10-12 minutes Sprinkle with caster sugar

Carrot cake (Gluten free)
I have been reluctant to make a carrot cake since my husband has always said he doesn't like them. Made in now -10 years later- only to find out it's the CONCEPT he disapproves of, and EATING them is, apparently, fine. So I guess it's my own fault for listening to him in the first place. And now I will definitely make it soon again! It was lovely and moist, and not too sweet :)
Whisk together:
1 1/2 cups brown sugar 1/2 cup sugar 1 cup neutral vegetable oil 4 large eggs 3/4 cup apple sauce vanilla to taste
Mix together, then add to the wet, then mix:
2 1/2 cups gluten free flour ( I used Schär pattisserie) 2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 2 tsp five spice powder
Fold in:
4 large carrots, grated ( I used a mixer instead )
Pour into 2 round molds, sprinkle with: 1 Cups coarsely chopped nuts (I went with walnuts)
Bake at 180C for 30-35 minutes
Cream Cheese frosting
Mix together:
450 gr cream cheese, room temp 1/2 cup (113gr) butter, room temp 4 cups confectioner's sugar vanilla to taste a pinch of salt
Assembly
Spread frosting between layers and on top.
Sprinkle with: 1 Cups coarsely chopped nuts (I went with walnuts)

Chocolate fondant (GF)
Melt together in microwave at low heat, and mix: 160gr dark chocolate (I used dark with chili!) 160gr butter
Mix together: 200 gr sugar 50 gr gf flour (I think plain rice would work, but I used Schär) 4 eggs Pinch of salt
Add the chocolate mixture and mix until uniform.
Add to well greased ramekins or muffin tins, and bake for approximately 8-12 minutes at 200C. Make sure the outside is hard enough to be possible to unmold, and the inside is still gooey.
I served them with vanilla ice cream, whipped cream and some fresh berries.

Prettiest biscuits in town (GF)
I was excited to try baking my biscuits in the electrical dessert iron that I bought recently, and I must say that it exceeded expectations :) The one I used is meant for small pies, and I imagine you could use a muffin iron or I guess a waffle iron also.
I used my trusted pie cutter as usual when crumbling dough. I really don't know how I managed before.
Cut up in small squares and keep in freezer why you measure the rest: 100 gr butter
Give a quick mix: 7 dl gluten free flour 1 tbsp gluten free baking powder 1 tsp salt 0.5 dl sugar 1 tsp psyllium husk
Give a quick mix: 2.5 dl buttermilk (or 2.5 dl milk and a tbsp lemon juice) 1 egg
Mix the butter into the flour until crumbly and resembling wet sand Add the buttermilk and mix until it barely holds together
I then used two teaspoons to add a small amount of dough in each cavity, closed the lid and baked until golden and crisp.
Obviously you can bake them in the oven instead: Roll and fold 3 times, roll into 2.5 cm thick sheet and cut into 5 cm rounds Place on a greased baking sheet or iron pan
Bake at 200C for 15-20 minutes
We had them like a bread roll with savoury fillings like ham, mayo and cheese or ham, butter, honey and mustard. Delish!

Nosy nabour mince
'Tis the season to be spooky, and I am loving it. I made this to bring to a party yesterday, and I can't say that it was a raving success, but that can easily be attributed to
we had too much to eat
it was hard to seperate
Both of these issues could easilly be remedied though, the first with some moderation and the second with a sharp knife. I liked the taste though, and if I had more time to spend on the presentation I am pretty sure it would look spectacular. I like presentation, but I don't believe in sacrifycing taste, and in that respect this is a good bet.
Mix together in a non stick pan over low heat until melted: 600 gr or 21 oz marshmallows 50 gr or 4 tbsp butter Add and mix: 3 tbsp peanutbutter Add and mix: 6 cups or 14 dl rice crispies As you can tell this is quite a big batch, speaking of moderation :)

Taiyaki (glutenfree)
I recently purchased this electrical taiyaki iron. I have been looking for one with a reasonable price that will ship to Norway for many years! I am so happy right now. I made some with cheddar, and some with Nutella. Both were nice, but sadly the cheese was a bit bland and not very mature and could have been better. You really want cheese that packs some umami I think to balance the sweetness :)
I adapted one of the recipes from the notelet included.
Mix together:
3 1/2 cups gf cake flour ( I used Schär pattisserie)
4 tsp sugar
1 tsp salt
8 tsp baking powder
Add and mix well:
3 cups milk
Add and mix:
5 eggs
Add and mix well until fluffy:
1 cup or 2 sticks or 240gr butter, softened
I have seen people using metal spoons to spread the mix in the pan, but I would suggest using a wooden spoon or a silicone spatula instead in order to not harm the non stick coating.
As you can see the recipe calls for a lot of butter. You can find all kinds of variants of batter if this sounds like too much to you. I will however say that this made them satisfyingly crunchy on the outside and wickedly soft and moist on the inside, and then you can decide for yourself :)

Return of the mini mini bagel
I had a craving for this little beaut after too many days of crumbly tasteless cardboard bread. I tried adding maybe a dl or a bit less than half a cup of sesame seeds to save me from cleanup if I added it on top. It was nice, but I don't think as nice as the old method. Not as pretty either. Try the original instead 😀
I love when I am making small things and you can't tell because the plate is small too. Also I hate it because then you can't tell how small it is. So that's life I guess. Win some, lose some.

Amber chocolate Madeleine (GF)
I have this really beautiful chocolate that I buy sometimes with a real interesting taste profile. It's got some caramel or maybe more accurately milky fudgey notes, and is very rich and creamy.
I made some chocolate muffins the other day for my children's school, and I thought I would seize the opportunity to make some lovely Madeleines. I first baked them in the mold, let them cool, cleaned the mold and then covered the molds in melted chocolate, before pressing the Madeleines into the mold.

Gluten free fruity loops
Came across a recipe for fruity loops, and adopted it to be gluten free. It's hard to find fun gluten free cereal.
Mixed together: 2.5 dl gluten-free flour blend 1/2 tsp baking powder 0.5 dl brown sugar 1.5 dl coconut milk 2 tbsp canola oil 4 tbsp cocoa powder or 1 tbsp fruity powders (I used some dried berry powders that's meant for smoothies)
First baked in oven in silicone molds, then decanted from molds and baked for a while longer. I think at about 150C.

Lemon no-bake cheesecake (gluten free)
The difference between gluten free and not here is just a matter of using the right digestive crackers, so feel free to change :)
Mix together, and push into a tin: 130 g butter, melted 20 digestive crackers
Prepare the jello according to the instructions on the package, but use half the amount of water. Let cool.
Whip together: 3 dl cream, lightly whipped 3 dl Creme fraiche, rømme or similar 150 g confectionary sugar 200 g Philalphia or other cream cheese Add and gently fold: 1 package prepared lemon Jello or similar Add the cheese mixture to the tin, let cool in fridge at least 3 hours or overnight. If you want to add fresh berries and fruit, or a thin layer of jello to the top.

Crumbly, delicious, gluten free pies
I've thought about making quiche using the puff pastry from this recipe https://somewhatdelicious.tumblr.com/post/726002334184947712/gluten-free-puff for a while, and finally it happened. And it was glorious to behold :) The filling is spring onions, cream, egg and tomatoes for all pies, but the vegetarian option has halloumi, and the other bacon. Extremely satisfying texture and taste, will definitely do again next time I have the time :)

Churros con chocolate (sin gluten)
My daughter has asked that I make this again many times, but it's a bit of a hassle to drag out the deep fryer. I will try to make it again soon though. My younger children were really happy too :)
Heat up on the stove until melted, take off heat: 2 1/2 dl water 85 gr butter or lard 2 tbsp brown sugar Add and stir ,cool down: 190 gr gluten free flour (Schär Pattisserie) 1 tsp cinnamon 1 tsp vanilla Add one at a time: 3 eggs
Fry in oil at 190C, dip in a mixture of sugar an cinnamon Serve with thick chocolate sauce.
Chocolate sauce
Warm dark chocolate and cream together, stir You can adjust the ratio to suit you, whether you prefer thick and chocolaty or thin and mild :)

Gluten free puff pastry
Recently found this recipe for puff pastry, and knew I had to try it: https://theloopywhisk.com/2022/10/22/gluten-free-puff-pastry/ Did some tweaking and ended up with a pretty good result :)
Mix until wet sand consistency:
2 cups gluten free flour (schär type B) ½ tbsp caster sugar ½ tsp salt 40 g (3 tbsp) cold salted butter, cubed I used my pastry cutter, but you could use a blender or your fingers.
Add and toss with a fork:
120 g cold salted butter, sliced. I used a cheese slicer.
Add and toss, 2 tbs at a time:
1 dl water, iced or very cold
Form into ball, gently Put in plastic bag, roll out into square and chill for 30 mins minimum Laminate using 2 letter folds Chill again 30 mins minimum Use as you like
Bake at 200C until golden and crisp :)

Scrumptiolicious Apple Pie (GF)
My darling youngest daughter loves loves loves apples. She insists on having at least 1 each day, preferably cut into pieces. So I made these pies for when she got home after a week away on film themed summer camp.
Pie Crust
8 dl gluten free flour (500gr Schär Pattisserie) 250 gr butter 4 tbsp ice water, ca Quickly crumble the butter into the flour until it resembles wet sand Add water until the dough barely comes together, mix as little as possible Let rest in fridge for at least 2 hours or over night Add the filling, sweet or savoury Brush with a whipped egg Bake at 200C until golden
I used a pie crumbler, but if you use your hands try to be quick and use your fingers so the butter doesn't have time to melt.
Apple Pie Filling
Boil on medium heat until a bit thickened: 2 apples, cored and diced but not peeled 1 dl brown sugar 1/2 lemon, juiced 1 tsp vanilla 1 tbsp cinnamon 25 gr butter
Mix together and add:
1tsp water 1 tsp corn starch
Boil and stir until thickened
Meat pie filling
800 gr minced meat 3 cans of good quality tomatoes (1200 gr) 3 garlic bulbs Herbes de provence and parsley to taste A splash of soy sauce Chili flakes to taste
Vegetatian meat pie filling
2 veggie burgers (I couldn't get mince) 1 can tomatoes 1 garlic bulb Herbes de provence and parsley to taste A splash of soy sauce Chili flakes to taste

Party food - Grazing basket
I've been obsessed with the grazing and charcuterie baskets and boxes on Pinterest lately. So naturally I had to do something with it today when I'm having a small party :) I have two gluten free, and two dairy free, and one vegetarian option, and this was a great way to make something for everyone and make sure that everythings safe. The chocolate balls are vegan, the shark bites are made with a pancake batter made with gluten free flour, lots of eggs, vanilla sugar, fat and coconut cream. I made some without sausages for the vegaterians.
Also included are single serving tortilla de patatas, salami roses that I baked in mini muffin molds to make the shape stick, and to make them a bit snacksy. Rolls of bacon baked in the oven with a glaze of maple syrup. Gluten free or regular crackers. Gluten free baguettes, regular baguettes or brioche baguettes. Fruit and veg, manchego and cream cheese.

Chocolate ballz
I've got a small party today, and thought I'd try something different for snacksy dessert. Two of the attendees reacts to dairy, so I thought it might be fun to try to make it using a vegan margarine we usually use to fry with in Norway (flott). The traditional recipe calls for butter, but this was vary nice, and I am also sure it would work with straight up coconut fat also.
Chocolate balls
Mix thorougly: 300 gr vegan margarine (coconut/shea/rapeseed), room temp 1 tsp fine sea salt (unless you use butter) 3 dl sugar 6 heaped tbsp cocoa 2 tsp vanilla sugar 2tbsp hot water + 2tbsp coffee instant coffe, mixed or 4tbsp expresso 8 dl oats
Leave to harden in fridge for about an hour Roll into balls, and cover in shredded coconut or pearl sugar Keeps in fridge for a couple days, ready to eat when they are nice and cold
