BORTHA: roasted garlic, fried onions , salt , chillies, coriander, aubergine , spices are optional . - slice your aubergine then drizzle with oil & salt allow to rest for a short time - now dry fry them in a pan with the lid on making sure to turn( this avoids frying in oil and having a really oily Botha) - do this for all the aubergine and in the meantime roast garlic & cook your onions (add your spices to the onions ) - place all ingredients in a bowl and give it a good squish taste for seasoning and spice then add to taste - URI & EGG BAZI . Onions, salt, tumeric, chillies , uri , coriander, eggs . 1: fry your onions Then 2: add salt and chillies 3: once softened add tumeric 4: now add the beans and cook 90% 5: make a well in the centre of the pan and add your eggs then scramble these .
