Apple Crisp~
Apple Crisp recipe I tried today on this lovely Sunday afternoon. They came out really well so I thought I'd post.
To get started, preheat your oven to 375°.
For the filling, you'll need:
🍎 4-5 peeled, cored, and diced apples
🍏 1/4 cup sugar
🍋 a squeeze of lemon
🤌🏾a pinch of cinnamon
Place this filling in a 2qt or 8" greased baking dish (or a small 6oz dish like I've used here- I happen to come across these at the dollar store😌)
For the topping, (or the bottom if you prefer), mix:
🍯1 1/2 cup Oats n Honey granola (or some of your own oats rolled in honey)
🍞1/4 cup of flour
🧈 1/2 cup melted butter/coconut oil
Cover and bake for 45 minutes until the top is golden, and the apples are tender.
Can be used as an offering to a chosen diety, or a treat for you and another. Or both, why not.😊 This recipe serves 2-4, I've cut mine is half for 2 servings and saved the rest of my apple mixture for breakfast time.✨️

Homemade Granola
I’m usually an oatmeal girl, but my go-to breakfast during these hot summer days have definitely been Kefir with fresh strawberries and granola.
I have tried and tested many store variants of granola but unfortunately most contain a lot of added sugar and are also quite expensive. I always keep a big jar of oats and many types of nuts and seeds at home, so I figured I could try and make my own.
The result was a crunchy but neutral granola which can be paired with just about anything. I would have liked to have bigger chunks though, so next time I’ll try using two egg whites instead of one, and maybe use a smaller pan to make it more compact during baking.
instagram
Here's how to make it:
Ingredients
3 cups oats
0,5 dl almonds
0,5 dl pistachios
0,5 dl pecans
0,5 dl walnuts
0,5 dl sunflower seeds
0,5 dl pumpkin seeds
2 tsp ground cinnamon
0,5 tsp salt
1 dl honey
1 dl coconut oil
2 tsp vanilla extract
1 egg white
Instructions
Preheat the oven to 160°C
Chop all of the nuts and seeds roughly and mix in with the oats in a big mixing bowl.
Add cinnamon and salt to the bowl. Stir.
Melt the coconut oil over low heat in a small pan and let cool for a bit. Remove from heat, then add in the honey and vanilla extract. Drizzle over the oats and nuts and make sure it is evenly distributed.
Gently whisk an egg white in a separate bowl until it is frothy. Stir into the oat mixture. (This is to bind the granola).
Line a baking tray or a large baking tin with parchment paper. Pour the granola and use your hands or a spatula to press it into place.
Bake in the middle of the oven. Set a timer for 10 minutes. After 10 minutes of baking, stir to make sure the granola is baked evenly. Then set a time for an additional 10 minutes.
The granola should be golden and crunchy. Let cool before storing in an airtight container. Serve with yoghurt and fresh berries. Enjoy!

Cocoa nut granola!
Tumblr media
Hello!!!
As my first offering, here's my recipe for a bangin' crunchy low-sugar chocolatey granola. I measure with cups and spoons, but in case you just have kitchen scales, I've put approx grammages as well.
Dry ingredience:
3 cups rolled oats, toasted (290 g)
1 cup puffed buckwheat (15 g)
1/3 cup buckwheat, toasted (68 g)
¼ cup rice or oat flour (40 g)
¼ cup nuts (45 g) (I use a mix of brazil nuts and blanched hazelnuts)
3 tbsp cocoa nibs (30 g)
1 tbsp cocoa powder (9 g)
2 tsp cornflour (8 g)
Liquid ingredience (aka delicious glue):
¼ cup hazelnut oil (60 g)
¼ cup cocoa butter (40 g)
¼ cup rice syrup (95 g)
1 tbsp hazelnut spread (30 g)
2 tsp vanilla (13 g)
Steps:
Preheat oven to about 180 °C/350 °C
Get an oven-proof dish and chuck the oats in it. Put them in the oven for 15-ish minutes (they shouldn't really be browned at all, I do this step because I find it makes the finished product tastes less oaty)
Do the same with the buckwheat kernels (not the puffs)
Cut the brazil nuts into 4-5 pieces and squash the hazelnuts with the flat of a knife
Put all the dry ingredients into a big bowl and mix 'em
Get an microwave-proof bowl, put the oil and cocoa butter in it, then microwave it until the butter melts. Add the syrup, hazelnut spread and vanilla and mix them in vigorously with a fork (they won't completely mix, and will continue wanting to separate, so if you let it sit before the next step, it's a good idea to mix it again)
Put the liquid stuff into the dry stuff and mix well until all the dry stuff has wet stuff on it.
Put the baby granola into the ovenproof dish and (if you want a chunky granola) squash it down with the back of a spoon until you get a nice firm even surface
Bake for 30-35 mins (err on the shorter side if your oven runs hot)
Take out of the oven and let it cool completely in a dry area (it won't stay crunchy if it's humid)
If you wanted a chunky granola, chisel out the slab of granola (easiest to do this if you wedge a spoon into one corner and lift/twist until bits come free), then break the granola into whatever sized chunks you want, using your hands.
Store in a clean dry airtight container
If you can't do nuts, leave out the nuts and substitute the hazelnut oil for either more cocoa butter or a low-flavour oil like rice bran or sunflower. If you want the granola sweeter, add more syrup. If you don't like the flavour of buckwheat, substitute with another kind of (unsweetened) puff, like millet or rice. I'm not the boss of you, please change it to suit your needs and wants (✿◠‿◠)
