We’ve been so active outdoors with the nice weather and this learn protein, healthy meal refuels the fam for more fun! By healthymoodsf Potatoes: 1 pound fingerling potatoes 1 tsp paprika 1/4 tsp black pepper 1/2 tsp garlic powder 1/2 tsp salt 1/4 tsp dill weed 1 tsp dried Rosemary 1 1/2 - 2 tbsp olive oil Directions: Cut the potatoes in fourths and toss them in oil and all the seasoning. Baked in my convection oven at 425 for 15 minutes. CAPRESE SALAD: Ingredients: 2 small tomatoes 4-5 slices fresh mozzarella Handful of fresh basil Salt+pepper Olive Oil Balsamic glaze or Balsamic Vinegar Directions: Slice tomatoes into rounds, and layer them with fresh mozzarella cheese and fresh basil. How about this veggie-loaded ORZO GREEK SALAD 🍅🥗🥒 along with an easy, DIY bone broth🍲 Grab the delicious deets below👇🏼👇🏼by @thedishonhealthy Follow us @ketodietplanster for more . . For the nourishing bone broth 🍲👌🏼 1 whole organic chicken. Rotisserie works! 2 tablespoons of apple cider vinegar 2-3 bay leaves 🍃 2 celery stalks, chopped (veins removed) 2 large organic carrots, chopped🥕 2 white onions, chopped ~8-9 cups of water 💦  1/2 tsp of sea salt (or more, to taste!)🧂 1/4 tsp of ground pepper 3 cloves of garlic, finely minced . Instructions: in a large stock pot, add the entire chicken carcass; remove all white & dark meat. Throw in all of the ingredients- except for salt and pepper. Bring everything to a boil and then reduce heat to med/low and simmer (covered w/ a lid) for 2.5 hours. It will thicken nicely. Use a strainer to filter only the broth into a containers or tup & stir in the sea salt and pepper. .  For the Orzo Greek Salad 🌟🌟🌟🌟🌟 Vinaigrette 👇🏼 3/4 cup of good quality olive oil 1/4 cup white wine vinegar  1 tablespoon fresh lemon juice 🍋 1 teaspoon of dried oregano 1/2 teaspoon garlic salt🧂  1/2 teaspoon minced organic garlic 1 tablespoon of dried parsley🌿 1/2 teaspoon ground pepper 2 teaspoons of raw honey or agave . Pat dry chickpeas with paper towel, removing any skins that may come off. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt. I’ve had a rough few days 🤦🏼‍♀️ the type of rough days that would have led to an emotional eating binge but instead of bingeing, I’ve had no appetite which is something new to me. Creamed Spinach Tortellini 🤩🔥 Eat or Pass? 😋 📷: @dariuscooks 👌 Check out @ketodietplanster  for daily recipes 🍏 ---- Ingredients 🍱: 1 pound of stuffed tortellini, cooked & drained (use your fave) 2 tbsp of flour 1 1/2 cups of half & half 1/2 tsp of salt 1/2 tsp of roasted garlic powder 1/2 tsp of fresh ground black pepper 1/4 tsp of nutmeg 1 cup of parmesan cheese 4 ounces of room temperature cream cheese 1/2 cup of smoked gouda cheese 16 ounces of frozen spinach, thawed and drained a pinch of red pepper flakes - DIRECTIONS 👩‍🍳: In a saucepan, over medium heat, melt 3 tbsp butter. When the butter is melted, whisk in the flour and cook for about 90 seconds until the flour taste has cooked out. Then, add in the half and half and stir well to combine. It’s a good idea to make sure the heat is on high at this point and as soon as it starts to thicken, lower the heat back to medium. Add in all of the other ingredients except the tortellini and stir occasionally to combine well and to prevent from sticking. Once the sauce is thick, toss in the pasta and serve. - For the shrimp! 1 pound jumbo shrimp, cleaned 1 tbsp of Old Bay Seasoning 1/2 tsp of salt 1 1/2 tbsp of olive oil Toss the shrimp together with the olive oil, salt, and Old Bay. Get a skillet hot and then sauté the shrimp on both sides until they’re cooked through. Saucy Soy Curls with Broccoli and Brown Rice are a super yummy, nutritious, and easy to prepare. Recipe: For the sauce you need: 1 and 1/4 cups water 1 heaping tbsp cornstarch 3 tbsp coconut aminos 1 tbsp dark soy sauce 2 tbsp brown or coconut sugar 2 garlic cloves, finely minced or grated 1 tbsp sriracha (more for a spicier sauce) Juice of 1 lime (or 1 tbsp rice vinegar) Plus: 1 cup soy curls, rehydrated 1 head of broccoli, cut into florets 2 scallion, finely sliced 1 tbsp avocado or other cooking oil Brown rice for serving (Makes 2 servings) Method: Cook rice*, rehydrate soy curls according to package directions (I soak them in some vegan ‘no chicken’ broth for extra flavor instead of water), and prepare broccoli, garlic and scallions. Heat up oil in a wok or large skillet, and sauté soy curls until lightly browned, then set aside. Next sauté (or steam) broccoli to desired tenderness, then add soy curls back to the pan. Whisk cornstarch into a 1/4 cup of water until completely dissolved, then stir in remaining water, coconut aminos, dark soy sauce, lime juice, sugar, garlic, and sriracha. Add sauce to soy curls and broccoli, and bring everything to a boil. Simmer until sauce is bubbly and has thickened, and add chopped scallions at the end. Serve with rice, and enjoy!
