Minestrone Soup 🍅🧄🥕🧅
INGREDIENTS:
1 Tbsp extra-virgin olive oil
1 Tbsp plant butter
1 medium onion, chopped
2 sticks celery, chopped
3 medium carrots, peeled & sliced
3 cloves garlic, minced
1 (28 oz) can organic crushed tomatoes
4 cups bone broth or veggie broth
1 small zucchini, chopped
1 cup fresh green beans, chopped
1 (14 oz) can red kidney beans
1 (14 oz) can white kidney beans (cannellini beans)
1/2 tsp Italian seasoning
3/4 cup uncooked whole grain elbow macaroni
Himalayan salt & pepper to taste
(Optional) fresh basil
DIRECTIONS:
1. Add oil, butter, onion, celery, carrots, and garlic to large soup pot. Sautee for 7-10 min.
2. Stir in the broth, crushed tomatoes, zucchini, green beans, red kidney beans, white kidney beans, and Italian seasoning. Increase heat to high, and bring to a boil.
3. Once the soup is boiling, reduce the heat so it’s simmering and cover the pot with the lid slightly open. Cook for 10 minutes.
4. Stir in the pasta. Continue simmering the soup (lid off) for another 15-20 minutes until pasta and veggies are tender. Stir occasionally to prevent pasta from sticking to bottom.
5. Before serving, season with salt and pepper. Stir in basil.

Spicy cauliflower bowls with coconut rice 😍
This tasted so much better than I imagined! All you need to do is season and roast cauliflower for 20 minutes, microwave rice, smash the avocado add some lemon salt and pepper then prep the rest of the veggies.
This is definitely one of my go to dinners, highly nutritious loaded with fibre, vitamin C, monounsaturated and polyunsaturated fats, potassium and vitamin E.

🫑Breakfast Stuffed Bell Peppers🫑 Eat them for dinner too! 😋
INGREDIENTS:
6 eggs
9oz ground lean turkey
6 Tbsp non-dairy cheese shreds
3 bell peppers, halved & seeded
3 cups spinach
Seasoning: Himalayan salt, pepper, & herbs
DIRECTIONS:
1. Preheat oven to 400F. Bake halved bell peppers cut side up for 15 minutes.
2. Cook ground turkey until browned.
3. Mix eggs, salt, pepper, and herbs.
4. Sautee spinach with light olive oil 2-3 min.
5. Cook egg mixture and combine with spinach and ground turkey.
6. Divide into the 6 bell pepper halves. Top each bell pepper half with 1 Tbsp non-dairy cheese shreds.
7. Bake 3-5 minutes until cheese is melted.

  (1).Early Sleep
early sleep is a bigger challenge then  early wake up for us. if we want to wake up early we need to sleep early .and we know that wake up  early  is easier for who sleeps at 10 pm than 12 pm .Actually  sleeping at 10 pm is easy than late night because melatonin hormon in  our body at higher level at 10 pm . melatonin is a hormone which governs our sleep higher and deep.
 melatonin harmone level increases  after sunset and again decrease with the time after 10 pm . so at 10 pm it's at higher level . which increases the easiness of sleep and quality also . it means nature also want that we should sleep early night by which we can wake up early in the morning. it is the scientific data, not given as theoretical concept.
