Chop all veggies roughly, add oil into a pan and sauté on medium heat until tender, about 10-15 minutes. 2. Add the chopped tomatoes, sugar and tomato paste. Season with salt and pepper and cook with the lid on for 15 minutes on low. 3. Remove from heat and blend until smooth.
