“I can’t have every food that everyone else has, my diet isn’t restricted but it’s not as expansive as it could be… I love having new foods from different cultures either when I’m here or when I’m travelling somewhere because it’s not only what it tastes like but it’s how the food is eaten as well - it’s interesting because I can compare foods that I’ve had abroad and then how they’re replicated here… For example Cups [a local Japanese takeaway] is exactly the same food that I had in Japan but it’s not the same and I can’t say why… It must just be the regional ingredients, but whilst I talk about having different types of foods from other countries my favourite food is my home food. My mum’s food is the best food ever. My mum’s roast dinner is just amazing, my mum’s Mac and cheese, my mum’s spaghetti bolognese… So good. Food means a lot to me, I eat a lot of it and it’s become quite important to me recently because I’m going to try and eat a lot healthier. 
When I went back to Australia in 2010 there’s a cafe that I had a milkshake at, and it was the most amazing milkshake that I’d ever had. When I went back this time we went past I couldn’t stop unfortunately but I could smell it and it bought back so many memories! It was like in the movie Ratatouille when the food critic eats the ratatouille and all the memories come rushing back, it was exactly like that! There’s a bakery near me that did the most amazing classic donut, it was definitely the best food that I’ve eaten but five or six years ago they closed down! They had such a specific recipe that you just couldn’t replicate. I love it how places have specific recipes unique to them and you can never get it anywhere else. It makes it so much more special.”

One pot roasting makes life much easier, especially when I'm busy prepping a clients job in the GUDD kitchen. So I roasted sweet potato, butternut squash, onions, beetroot and while cloves of garlic in their skins, 20 minutes before the vegetable were ready I threw in some halloumi to bake with the vegetables. I just whisked some of our home made tahini with some yoghurt and raw garlic and dressed the dish with this. “I love food and I love cooking when I get the time to do it, I think as I’m such a busy person food for me is fuel - and I do generally eat because I have to but when I take the time out to actually enjoy cooking and eating I find a lot of joy in the kitchen because it is quite relaxing and it brings back a lot of memories of me cooking with my dad, eating with my mum, there’s a lot of family stuff there. I love Mexican cuisine and the food of Southern America - it’s probably a very Anglicised version of what I perceive as that food but I’m always making fajitas, burritos and all of that. I love the combination of flavours, I find them all very interesting - the difference between the cool and the spiciness its all very soothing… I’m really hungry now! 
I didn’t experience this memory but it’s a family tale, but when my dad was probably my age my grandma - she has awful eyesight - she was making some rice pudding and she didn’t look at what she was doing and she used bulgar wheat instead, so she made this wheaty, sour porridge dessert and we just mock her all the time for it. I mean I wasn’t even born but that’s definitely a strong family memory there. I have family in France and again with food mishaps - my French cousin thought he was pouring custard powder the jug with milk… Turns out it was mustard powder - that was a language barrier but that was another funny story.
My dad makes a mean fish pie, when you get home from uni it’s something that I think ‘Oh what do I fancy’ as I never make it myself so going home to that is great.”

“Hi, my name is Leela and Foodies of London has been my passion project over the last month.
Living in England for the last six years has had a massive impact on how I view and value food. It really made me realise the value of my heritage and how cool it is to be mixed race! Food means a lot of things to me, first and foremost having previously trained as a dancer/performer it has always been an important source of nutrients and fuel. My mum always cooked me delicious meals from scratch with the best ingredients that she could get and I definitely owe my healthy eating habits to her. She really taught me the value and the importance of good nutrition. Secondly, it has been a large comfort in my life especially when I’ve been missing home. When I go back to Bangkok for the holidays I always make sure that I leave room for the essentials to bring back to the UK - rice, soy sauce, Mama noodles (they’re the equivalent of Thai pot noodles I guess…) and loads of other snacks that you can’t get over here. I guess it sounds a little stereotypical but I’m not even sorry, the food I get at home cannot even compare to the food over here! 
Some of the best food memories I have are cooking with my mum. She’d always let me feel important by letting me melt the butter or something but without her I wouldn’t be able to cook the delicious , comforting food that I make for myself at uni! I’m so glad that I know how to cook because I don’t think I could cope with being catered for every day. Eating to me is also a very important family event. When I lived at home I was fortunate enough to know that 90% of the time dinner would be me, my mum and my dad and it would be our family time of the day. At the time I was a bit of an angsty teenager and mad that I couldn’t eat alone in front of my laptop or whatever but now I look back and I’m forever thankful of those moments because they’re such special moments you can cherish but you’ll never get back.”

“Food means energy and healing to me, I like to heal with food. I think our body works best with good nutrition - obviously it’s a lot about enjoying with friends and family as well. For example when my daughter comes home I love to cook for her, or take her out for the food she likes to eat so it gives me joy to nourish. Food to me is about nourishing people. Food changed my life - if you change your diet and change the way you think about food then you can change your health! When I get sick the first thing I think about is what I’ve eaten to make me feel this way, or what thoughts I’ve thought to make me sick… And the next thing I think about is how I can fix it so the first thing I always do is boil up a great big pot of chicken soup, always, and I put very good ingredients in there like organic onions, carrots, tomatoes, celery and I always buy very good chicken that hopefully hasn’t got all those antibiotics and things in it - and thats how I heal! I think your body tells you what you need, so for my health I became a vegan and that really helped me but there came a time when I found that it wasn’t suiting my body anymore so then I had to go back and eat meat - so the most important thing about food for me is the fresh ingredients and them being the best quality you can get and just enjoying the real flavours. 
My favourite memory would definitely be Hainanese chicken rice as a child! Singaporean Hainanese chicken rice… It was a family meal, always a special treat and just something so incredibly delicious and you always felt so good eating it! My favourite food now in terms of cuisine would have to be Thai - it’s the best in the world. They use so many flavours, fresh herbs, spices and I like to think that it’s healthy as apart from fried fish there’s very little fried food… I like the Thai salads where they use lime and fresh herbs and things.”

“Food is happiness! Whenever I’m sad I always get some food, I love creating new flavours with different foods and cooking different meals, feeding people and knowing that if I feed them good wholesome food then they’ll be happy, especially when it’s from scratch. Food is literally happiness. My favourite meal is either Chicken Marscapone or Spaghetti Bolognese, because my mum always used to cook them for me when I was little. They’re delicious and I always remember her cooking for me. When I come home from uni she still cooks them for me in her slow-cooker and they’re so comforting, so delicious and bring back such good memories.”
