moving to the UK has made me develop an irrational fear of ordering take out
#i simply refuse to order at this point like here you go :#i was craving taco bell after ages and i got back from work at 11:45 p.m and placed an order. like literally they were gonna close in#2 mins. and so i wait and i'm so hungry and i open and it's meat. when i'm a vegetarian and i couldn't even order anything else because#it was already midnight#THEN i ordered taco bell in the afternoon next day and same fucking thing happened#THEN one time i was at work it was a long shift and every one of my supervisors know i'm a vegetarian#so they made sure to tell the guy who was serving food to get me the veg lasagna#and i take my food and go to the backroom and it looks suspicious and luckily my friend was around and i#made him take a bite and he was like yep it's meat#and so because of all of this bullshit instead of ordering take out i went to mcdonald's down the road recently#because i was like absolutely not. and i order a veggie burger. and peep in and check to see it's a green box before heading home#and me and b are sat watching gogglebox and i finish my fries and open this green ass box and lo and fucking behold#it's a meat burger. INSIDE a fucking green box that says veg on it#but i was craving mcdonald's badly so i ordered it online. and guess fuckin what. meat again#i basically stopped ordering food and just physically go out to places to eat#and today it's cold and i'm tired so i ordered food from a mexican place and it took two hours for them to#deliver the food#and it was legit supposed to be veggies beans and rice. and guess fucking what. they put meat in it#i can't even get my money back anymore because i've complained too much but what the fuck honestly#YOU keep sending me meat 😭😭😭😭😭#i'll just make some quick pasta and call it a day 😔✊#food mention

I'm not saying my family panicked last year about having to do one meatless dish at the Christmas dinner table, I'm just saying we weren't able to make it, we were 400km away from the impact site, and we were still involved in a 3 hour video call on the subject of "all vegan ground meat is sold out; the veg(etari)ans will surely starve to death if they only have the starter, soup, dessert, cake and coffee with cookies".
This year, I'm very very casually asking a month in advance what they're feeding the plant based folks. Just because. No reason. I need weekend dinner inspo. I'm feeling festive. Yep. Totally that.

meal ideas!
low energy ("do not ask me to do any prep work at all, so help me god")
mozzerella cheese wrapped in pepperoni ("pizza tacos"!)
hummus and pretzels or naan (putting the naan in the microwave for like 10 seconds...heavenly)
canned chili (with shredded cheese and sour cream if you have it! boom done!)
instant miso soup (warm and lovely! put tofu in it for protein!)
cheese and cured meat, olives, canned fish, crackers, dried fruit, or whatever easy "charcuterie" type items you like
alternate bites of apple and spoonfulls of peanut butter (mixing honey or chocolate chips to the peanut butter is my favorite)
a "deconstructed sandwich": bites of lunch meat, pickles, cheese, cherry tomato, etc (I love roast beef and white cheddar for this)
yogurt and granola or fruit
put frozen potstickers + frozen edamame in the steamer/rice cooker, chill elsewhere with a timer set, then boom
tortilla chips + canned refried beans + cherry tomatoes + cilantro + jarred salsa con queso (or warm shredded cheese on top of the chips in the microwave for 30 seconds)
bagel + cream cheese + lox
microwave scrambled eggs (add things like green onion, soy sauce, or anything else you like!)
cottage cheese and fruit (mixed together or just on the side)
bowl of shredded rotisserie chicken + buffalo sauce + a bit of mayo + green onion (use a kitchen scissors to cut them right in!)
medium energy ("I'll boil water but don't ask me to chop shit")
boiled eggs and fresh veggies (put a little salt on top of the eggs!)
buttered noodles (my go-to nausea meal, it has never failed me. ideas of things to add: frozen peas, imitation crab, roasted garlic)
baked potato with toppings (I like cheese, bacon, broccoli, green onion, and sour cream)
quesadilla (add some canned beans, cilantro, or avocado!)
pot roast (requires a lot of time but not a lot of actual work. I love it with peas!)
cuban sandwich (bread, swiss, pickle, mustard, ham... my favorite thing to panini-ify by far)
pan-fried tofu with scallion sauce (this sauce goes well with everything and tofu is no exception)
pancakes or waffles! (I love mine with jam)
ham, pickle, and cream cheese roll-ups
fried eggs (with toast and lots of butter...so comforting)
fruit smoothie (bananas, frozen strawberries, yogurt...or whatever!)
I hate salad but could write essays on this copycat olive garden salad (throw it in a bowl! chopping required if you use onion)
spaghetti (controversial maybe but angel hair > spaghetti noodles)
pasta salad (olives broccoli fresh mozerella... those little mini pepperonis... yeah)
stir-fried thai garlic shrimp (I like using the mini frozen salad shrimps, it's easy! use jarred minced garlic to avoid chopping!)
tuna mayo onigiri
slow cooker ribs
buffalo chicken wrap (or any number of other wrap options! shred pre-cooked rotisserie chicken to make it easier)
if your local grocery store sells pre-cooked gyro strips, that can turn into an easy wrap with store-bought pita & tzatziki with tomatoes and onions!
couscous and chickpeas
tortellini + pasta sauce + spinach
high energy ("I don't mind chopping some things up!")
stuffed shells with spinach
chicken and roasted garlic (oh my god.....one of my all time favorites)
beef tacos (I like mine with cilantro and onion, and when I'm feeling especially high energy I love a tomatillo salsa)
chicken alfredo
tom kha gai (a thai soup and my absolute favorite! you just need access to galangal)
lasagna! (freezes well and then boom! low energy meal for later)
pad thai! (not as hard as you'd think, as long as you have access to tamarind paste!)
potstickers! (this is a lovely group activity if you want to cook with housemates!)
rice and beans
bang bang shrimp (ogughfhgfuh I love it. you can also do bang bang tofu!)
minestrone soup (so many nice veggies!)
fried rice (put whatever you have on hand in there! broccoli, peas, carrot, and beef is my favorite combo)
broccoli cheddar soup
spring rolls and peanut sauce
skewers (such as beef, onion, zucchini, bell pepper... you don't need a grill, oven works!)
roasted turkey with garlic parmesean asparagus
pork chop with mashed potatoes
panang curry
chicken gnocchi soup (use store bought gnocchi or make your own if you have a high energy day!)
bibimbap (super customizable depending on what veggies you like best)
butter chicken
plus! things that have helped me meal plan:
whenever you think of a meal you'd like to make, take 3 seconds to google search it, take a screenshot of the image results, and put it in a "food ideas" folder. instant visual menu!
the concept of "meal prepping" makes me recoil but I've learned that it can simply mean preparing shredded chicken, boiled eggs, or some other simple protein that you can customize throughout the week. shredded chicken can turn into wraps, salads, pasta dishes, etc... you don't have to meal prep yourself into the same meal all week!
when I have difficulty working up an appetite, I'll scroll through my favorite restaurant menus! there might be some foods I can't make at home, but many times they're very simple to recreate because the ingredients are literally listed!

And that’s as far down the lasagna as it will let me go. Pretend there’s at least more veggies & sauce below that.
I realize that a noodle layer right under the top mozzarella layer is unconventional, but don’t knock it til you try it. Cheese right on pasta, it’s my favorite part of the lasagna.
I’m so turning off the notifs on this one, I can’t even imagine how vicious people can get about lasagna ingredients.

Life Updates and Such...
Soooo.... many things! At the moment, I've finally pulled myself somewhat out of the doldrums caused by lack-of-job + job-search-sucks and am making all the preparations for celebrating the end of this year and the start of a new one.
I think I've binged something like 30+ anime series in the last month or so, along with reading many many books.
Today, I've finally got some bots working in the Creator's Cave discord, to make things a bit easier there. There are more updates I still need to do, but it's a start.
My hope for this week, is that in addition to my preparations for New Year's, I'll be able to actually finish my project of turning some of my flower photos into TS3 art. No promises, but I'm hopeful.
Below the cut, for the curious or nosy, the menu and preparations for New Year's.
Before anyone starts to wonder... two of the friends coming to my place for New Year's are really really into Pumpkin, so this is reflected here. Yes, this is probably too much food and drink for... 6 people, but hey... leftovers.

Bruno Bucciarati
Bruno loves to cook.
But, he’s not a very good cook.
One time, he tried to make his world famous minestrone.
Everyone ended up with food poisoning.
No one has the heart to tell him that his food sucks.
He just gets so excited to cook for others so they just grin and bear it.
Everyone dreads when Bruno cooks.
They suggest that they go out to eat, instead.
Leone Abbacchio
Abbacchio isn’t a huge fan of cooking.
He eats raw potatoes for a reason.
But if he has to cook, it’s always just bulk frozen foods that you heat up in the oven.
One time, he made bulk lasagna.
That was the most effort he put into a meal.
He does, however, enjoy making a good cocktail every now and then.
There is artistry behind that!
Pannacotta Fugo
Fugo’s a huge fan of eggs.
He can make any type of egg your heart would desire.
He also taught Narancia how to make scrambled eggs (which Narancia called Scraggle Eggs).
He particularly enjoys making veggie omelettes.
Mushrooms, onions, green peppers, and garlic with cheddar cheese.
He makes it at 3am when he thinks no one is awake.
There is always someone awake.
Narancia Ghirga
He can’t cook.
He tries but he grew up stealing his food and then eating from the garbage.
He’s not a picky eater, because of this.
In fact, he eats a lot.
Bruno taught him table manners and tried to teach him to cook.
Fugo had to un-teach Narancia those atrocities.
Narancia can now make ‘scraggled eggs’ and cinnamon toast.
Guido Mista
A true chef.
He claims to not be a picky eater.
But he enjoys quality food.
He is fond of roasting meat, in particular.
He makes an amazing whole roasted chicken.
Whenever he cooks, everyone is extremely satisfied.
He has tried to ‘help’ Bruno cook (aka do the cooking).
But Bruno somehow always manages to ruin the dish.
He looks away for .02 seconds and then Bruno does something and it’s immediately destroyed.
Giorno Giovanna
Giorno can’t cook.
He also thinks that Bruno’s cooking is fine.
He was the only one not to get food poisoning from the minestrone (dubbed monsterstrone by the others).
Abbacchio swears this means that Giorno is a demon.
Giorno does make a good salad, though.
As long as he doesn’t have to cook.
He can also make bread.
But that is baking.

please share a refresher of some of your food flavor and texture opinions. I'm having a discussion with my wife about our various Autistic Food Rules and she didn't believe me when I said y'all had similar palettes.
I have a really strong sense of taste (the same exact thing but two different brands may as well be night and day to me; pepsi and coke are as different as apple juice and orange juice) and yet I STILL find that texture is more important, and soft textures are almost always better. French fries are best soft, moist and limp the way they make them at East Coast barbeque pits and board walks. All meat is best as tender and juicy as possible and if a meat is safe to eat raw it is always best raw. The fat is also the best part, but I mean the buttery fat that melts away, not the hard chewy gristly fat which is horrible.
Cookies are never good completely crunchy. Raw dough is good but the very best cookies are half-baked extra chewy ones, especially if they have soft doughy centers and only lightly crispy edges, with chips still melted from the oven. Chocolate in general is better warm than cold especially when it's softened up as much as fudge, and fudge is also good. Eggplant is the best vegetable particularly stir fried until it's all buttery smooth. The only food that's good crisp and crunchy is fruit, any fruit that can be crisp such as apples or pears should be as crisp as possible. Crispy grapes are the very best but they're also the hardest to come by. I end up pinching grapes at the store hoping to find some that have absolutely no give. The best pizza topping is in fact anchovies as long as they're properly cooked into it. Anchovies are also delicious when baked into spaghetti sauce or lasagna. Pineapple however is also good when cooked on pizza, even if it doesn't go super great with anchovy.
In fact, all fruit is actually pretty good when cooked and paired with something savory. Sweet + savory is great in MOST contexts, there's no food in the world that honey can't go on.
Peanut butter, and I mean the sweetened kind from a jar, is also great in savory dishes like curries.
I know this is a very hard sell but peanut butter + pickle chips in a sandwich or on crackers are an actual snack some people enjoy and once I tried it I thought it was awesome. I don't care for the flakiness of most cooked fish but I love canned tuna for whatever reason, tuna salad is like the most reliably palatable food in the world to me? The much reviled Spam and its imitations are in fact delicious pan fried, all the authentic Hawaiian recipes are amazing and Spam musubi is amazing.
I don't mind waffles but I think they're inferior to good pancakes, maybe because waffles have that drier and more rigid surface? Love when pancakes are a bit stretchy. Stretchy white bread like a super fresh French baguette is one of the most good things in the world with nothing at all added to it.
The only common food I find totally revolting is corn. Peas and beans also gross me out a little, all the plants that come in little round nodules. Not fond of most pot pies and stuff with a bunch of different little chopped up veggies in them, don't know why, maybe because all of those veggies would be so much better a little pan-seared on their own? I also find it genuinely kind of annoying and sad when people even “jokingly” comment on these posts about how gross some of these are, none of them are really that uncommon in my experience except maybe the peanut butter pickle thing but I still don’t get why people feel so strongly about some of it. Almost all food is good and I don’t hate the alternatives I can stomach rigid crispy SOULLESS french fries just fine when I really have to

Do you have any particular pasta or meat recipes you enjoy?
I don’t really cook with meat a lot because I cannot stand the texture of 99% of raw meat. Straight up cannot handle it without having a freak-out incident. It’s like the one texture issue I have with food. Fish and ground meat feel fine, for whatever reason. And sausages, usually (though that’s ground meat in a tube). This was something I was a little self-conscious about for a long time, but it wound up okay in the end because my partner is vegetarian & that helped me get more comfortable with cooking vegetarian stuff that doesn’t suck ass. Main thing I can think of here for Meat Recipe is “putting a ham hock in pea soup when you’re making the stock is A Really Good Idea”, but I feel like someone out there would say this barely counts. Too bad. It’s my post.
I’ve got a lot of pasta recipes I like but most of them boil down (ha ha) to “cook some garlic in oil & also some other veggies” or “simmer the everloving shit out of some tomatoes and maybe a bit of wine, maybe braise some veggies in it”. There’s others that don’t fit this bill but this is most of my pasta rotation. I’m dogshit at lasagna right now but I want to get better at it.

Oh gosh food is a big thing for me because of tastes and textures, LOL.
For eating, the only thing I can recall ever weirding people out is that I HATE my food all touching. Like my rice has to be separate from my veggies which has to be separate from my meat, etc. I have been teased relentlessly all my life because of it, and honestly it kind of hurts because I just GENUINELY have an issue with it. I KNOW it's all going to the same place... I just don't like it all touching on my plate. The only time it CAN touch is if it's SUPPOSED to, like spaghetti and sauce etc. I also use ranch dressing for all my meats. I only eat my fries with mayo and salt, nothing else (apparently this is weird????). Don't like ketchup on anything except my eggs. So yeah, I'm a bit neurotic, but living alone is a godsend when you have food issues like this.
So yeah, that's my weird self LOL.

his favourite meal was a sunday roast.
nothing hit home like a big dinner filled with a large section of assorted meats, his favourite green veggies (and the other ones), potatoes and whatever else the chef has to offer.
he's not really fussy with food, forever having a big appetite and all. he's just grateful to be eating.
he does however have an extremely sweet tooth, especially for chocolate.
that was one thing he always carried around with him and would eat at the most inappropriate times. you vividly remember him coming over, opening a box of chocolates and complaining about how tony had scolded him for eating chocolate during a conference meeting.
you put it down to being his comfort food.
pineapple on pizza? yes.
fruits on any savoury food was a yes for loki.
but not any fruit.
he liked bananas but hated the texture.
he found kiwis beautiful to look at but tasted otherwise.
he adored grapes so much to the point where he wanted to resurrect and then murder whoever's idea it was to make raisins.
he loved all his veggies. just not courgettes.
the first time he tried it was when you made a vegetable lasagna. he tried his best to stomach it for your sake but couldn't torture himself any longer, excusing himself from the table to spit it out. he explained that it wasn't your cooking, but just the 'deceiving overgrown cucumber'.

“So, how about we give these pancakes a try? *Grins* As I said prior, this treat is what I am most excited to try! I found this recipe online and was excited to try it for this event. Cinnamon Pancakes! These were fun to make; I loved watching them change color on the frying pan and fluff up! *Licks lips* I cannot wait to sink my teeth into these!
*Takes a bite, face lights up* Wow. That cinnabar is potent! But it’s so tasty and goes well with the fluffy and buttery taste of the breakfast cake. And this syrup? So sweet and warm! Perfect combination, if you ask me!
And it looks like a topic of conversation just pinged. *Reads text* Oh, this is definitely on point. But it's a tricky question for sure. *Looks at camera* Why do you all make me suffer so? Just listen to what this ‘Nonny asked. If you had to choose to only ever eat lunch, breakfast, or dinner for the rest of your life, which would you choose?
*Clearly throat* First, I am going to have to have a little chat with you. I don’t usually get angry, and I am trying to hold back the inner beast here. But listen. *Face goes stern as a finger is wagged at the camera* You forgot a meal. Dessert. How could you? You cannot forget about cannolis, cakes, ice cream, and pies! *Busts into laughter* I’m just playing; I am not mad. Though there really should be that fourth choice, however, that would not be the healthiest choice.
Hmmmmm *Face deep in thought* I suppose I couldn’t pick brunch? I think that would be considered cheating. * Takes another bite of pancake* This is tough. I simply adore breakfasts; they seem the most comforting and wholesome. And nothing beats chowing down on such rich and sweet foods first thing in the morning. Well, after my morning yoga and prayers.
But my absolute favorite meal would have to be supper. To me, it’s the most filling. I love Cyber/tonian sushi, noodles with all the fixings like a sunny-side-up egg, fresh veggies, and meat. *A dreamy look appears on face* Even some of Rat/chet’s favorites are up there, believe it or not. Greasy burgers and fries, lasagna, fried cyberchicken. *Giggles* Yes, I ate plenty of the food tonight. But another reason I enjoy suppers is that Rat/chet and I usually eat these meals together. Yes, our suppers are later in the evenings, but my mech loves coming home to a fresh, home-cooked meal on the table. *Pouts* if he runs late, sometimes I have to microwave them. *Gives a sweet smile, then devours the rest of the pancakes* But we always enjoy the time spent together!
Now it’s time to move on to another dish and another ask. What shall I try next, hmmm? *Bites lip while looking over the table* Ooooo, I know. This pudding. Doesn’t it look so yummy? It has a layer of crunchies on top of some thick whipped cream, then two flavors of pudding: amber and bronzite. And the very bottom is a moist bed of hematite cake. *Grabs a spoon and takes a bite* This is so rich and creamy!
Alright, the next question comes from Auto/bot Jerry. This is one crazy robo-mouse! Let’s see what’s on his mind. ‘Dri/ft, it’s Jerry! I always wondered how you’re able to eat so much and never get full, even from getting so huge. Speaking of, mind if I rest inside your flabs while you eat? Please? I haven’t bothered Rat/chet today, I promise!’
*Raises brow* Well, I am glad you haven’t pestered Rat/chet today, but I am banking on you saving that for another day. *Sighs* I’ll find out when you do; my lover always comes back in an extra grumpy mood when you do tease. *Eats more pudding*
How can I eat so much? Well, that’s simple. This food is just so flavorful and, dare I say, addictive. Each mouthful tastes like another! And before you know it, your dish is finished, and you are ready for another one. *Smiles and laughs* Now, about never getting full…. Well, that’s not quite the truth. Trust me, I am feeling it right now. *Rubs his grumbling belly* The dull aches are turning into a steady pain that’s radiating all over my belly. Do you hear my belly crying angrily? *Huffs out air* I just hope I can finish! *Gobbles up more pudding, licking some from his lips* My golly, I sure did get huge…Just look out how thick my thighs became and how my belly takes much of my lap!
But I am onto the best part of this treat. *Shows camera* I have reached the cake layer! *Scoops cake and pudding into mouth* Now, as for resting in my flab rolls…. Oh, I bet it would be so warm and cozy for sure! Perfect place to take a nap. Sadly, I am gonna have to decline, though. I am simply too stuffed to house a little robomouse between these rolls. I don’t think there’s enough room! Plus, my belly is all achy and quivery as is without you squirming around. You’ll have to take a rain check for another time. *Polishes off the pudding*
Well, that sure was scrumptious! And eating one sweet tastes like another. How about this Alti/hex roll? I just love this earthy-red brown shell and pink cream rolled in such a pretty little coil. And the confectionary copper flakes look ever so pretty. *Picks up the dish and shows camera* Now, this usually serves four. And I know I should save some for my conj/unx…All I can promise is to try! * Takes a huge bite, optics light up*
Hmmmmmmmm. Very tasty! The cake is light and fluffy, yet the cream filling is thick and sweet. Such a perfect combination! *A ping is heard* We have another ask from a viewer. This one comes from Soup. Oh, that is a lovely name…. soup is such a comforting food to eat on cold winter nights! But Soup wants to know my record for the most I have ever eaten in one sitting. *Raises brows*
Not to sound lame, but I think this time. I know I came close some other times, but if I finish all these plates of food, this one will take the cake. * Chuckles, eating another large slice of rolled cake* I rarely go overboard like this, to be honest. While it feels ever so lovely and cozy to be soft and squishy like this… *Kneads at pliable belly flab* …The next few days are going to be restrictive. Sure, I can walk still…*Optics dart back and forth* Well, at least I hope so. Waddling would be more like it! *Nervously chuckles, takes another bite*
 But it’s challenging. Plus, the extra weight gets tiresome lugging around and you get out of breath so quickly. I ensure I have a few days off after eating so much. *Shrugs* You know time off doesn’t come around often.
Needless to say, I cannot overindulge myself to this extent that much.
This kind of ties into another question I just received from Hoot. ‘Has your weight gain been distracting to yourself or other crew mates?’ *Tilts his helm as the last of the cake roll is consumed* Yes, it has distracted other crew members, and sadly, some of it wasn’t very nice. When I get this huge, I usually don’t go strolling out and about. Thankfully, no emergencies ever popped up that needed my presence. I typically make sure some other high-ranking officer is available.
But I have gone out and about with more of a starter belly. Most mech’s didn’t really care. *Optics glance over remaining dishes, widening upon spotting the next dish, a cinnamon bun* There would be some glances at my spare tire, and some would try to poke. *Bites lip* I don’t mind if Rat/chet pokes at me, but I do not like to be touched by other mechs. I know it wasn’t meant in jest, but it makes me uncomfortable. *Sighs*
But let me interrupt by showing off this little gem. Just look at all this thick icing on top of this cinnamon bun! This is going to be such a sugary snack! And it’s going to go right to my hips.
*Takes a bite* Hmmmmmmm… Very fresh, buttery taste. And the icing? Very delightful! *Smacks lips* But to continue on what I was saying. Who would think it’s alright to just walk up to someone and touch them? Does anyone else find that invasive? I’m not talking about a clap on the back or touching my arm… poking a tummy is…a bit private, I think. *Takes another bite* Some people get too handsy if you ask me.
But I noticed some turned heads as I wonder about. Some linger long enough to make me question if they like what they see. *Winks*
But then some laugh and make fun. Wh/irl was the worst. I mean, okay, I can overlook the staring at my paunch, but the calling out was embarrassing. I was at Swe/rves, and he shouted insults about my weight and appearance across the whole bar. He hollered stuff like fat pig, heifer, what a lumpy sack of slag. *Cheeks redden* And to hear the laughter erupt from other bar patrons? It was just too much! Trust me, I have been called worse but turned right around and left. *Takes another large bite of the baked good*
 They act as if chub is the most disgusting thing in the world. Like it’s some kind of disease that if you get too close, you’ll catch it. *Shakes helm* They need to learn more about contagious diseases. And understand that just because someone sports a belly, they still deserve to be treated with respect. We’re not cyber/animals, after all. *Finishes off cinnamon bun*
However, I do not wish to dwell on the bad times. Now, Have I ever distracted myself? Never during anything super important. I am good at staying focused on the tasks at hand. However, during…um... *Sheepishly smiles* I sure hope he’s not watching! But during Ult/ra Mag/nus’ long, rambling speeches, I caught myself idly groping belly flab. It just helps pass the time during the boring- I mean informative speeches. *Smiles* Really, Ult/ra Mag/nus makes several good and wise points… he just tends to get into so much detail over everything. Before you know it, you just listened to how important it is to use matching paperclips or something like that. *Shakes helm* He means well, I can tell you that.
This has been ever so fun tonight. I sure am enjoying myself so far. How about my lovely viewers? Are you having a good time? I sure hope so! I'm a bit like you I have been trying to have more meat free meals. I need some inspiration cos I am sick of death of planning dinner every night until I decompose 😂
yeah the planning thing can demotivate a lot of people. fortunately for me i adore cooking, i have a lot of fun with it, but like most people i don't have that much time on my hands which is why i'm a big fan of batch-cooking! i cook big portions every time and then save the rest in the fridge or freezer for other days of the week or for when i don't have the time or motivation to cook
and for meat-free meals well i can give you a lot of ideas as i very rarely include meat in my recipes (i try to save it for when i got to the restaurant or for family barbecues, make it a little luxurious treat... quality over quantity and all that)
my main advice is to stack your house with a maximum of legumes and starchy food like every type of beans, peas, lentils, rice and pasta (preferably wholegrain) and a maximum of vegetables. like for exemple you just cook yourself some wholewheat pasta and then add a vegetable stir-fry on top of it and call it a day.
one of my favourite meat-free meals is definitely the chickpea curry with carrots, onions and leeks (or any seasonal vegetable instead), i also love a chili sin carne, i'm crazy about anything that has squash/pumpkin in it (part of the reason i adore autumn) like a very simple oven-roasted butternut squash with honey and feta cheese, or red kuri squash gratin. off the top of my head i'm also thinking veggie lasagna, red lentil dahl or vegetable crumble! yum 🤤

Cooking Corner - Lasagna Soup

Cozy season is here! I made this soup last week, and it's an easy recipe that has protein and a veggie, and I only had to use one pot!

This recipe contains wheat, dairy, and meat. This recipe meal preps well!
Here’s what we’ll need:
1/2 pound lean ground beef
1/2 pound italian ground sausage
1 teaspoon olive oil
1/2 cup yellow onion (about half an onion)
3 garlic cloves - that's three wedges of the garlic!
3 tablespoons tomato paste
1 24-ounce jar red pasta sauce or marinara sauce
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon crushed, dried, oregano
1/2 teaspoon dried thyme
7 cups beef or chicken broth
9-10 uncooked lasagna noodles
3 cups fresh baby spinach
1/2 cup shredded parmesan cheese
1 cup fresh ricotta cheese
1 cup shredded mozzarella cheese
First, break the lasagna noodles into smaller pieces - I broke each noodle into about 5-6 pieces!
Second, put the ground beef and ground sausage in a deep pot on the stovetop. Turn the heat to medium high and stir often, it should take about 8-10 minutes to turn brown all the way! Since it's lean ground beef, I didn't have too much grease, but if you have a lot of grease, you can soak it up with a paper towel or drain it into the trash. After that, set the meat aside in a bowl.
Third, chop the onion! Add the onion and the olive oil to the pot you browned the meat in. Make sure the heat is on medium and cook the onions for about 5 minutes.
Fourth, mince the garlic - that means chop into itty-bitty pieces. Add the minced garlic in the pot with the onion.
Fifth, add the tomato paste to the pot. Remember to stir it all together!
Sixth, add in your seasonings (red pepper flakes, salt, pepper, garlic powder, oregano, and thyme), your red tomato sauce or marinara sauce, your broth, and the cooked meat. Keep stirring as you add, and keep the heat on medium!
Seventh, we want to turn the heat from medium to a low simmer. Start at medium and make sure you have some bubbling in the soup - once you're there, you're going to turn the heat down bit by bit, and you want the soup kind of bubbling the whole time. Once the heat is on a low simmer, add in the broken noodles and cover the pot. Let it cook for about 20 minutes, or until the noodles are cooked and soft enough to eat.
Eighth, add in the parmesan cheese and the spinach! It shouldn't need too long - just until the spinach gets droopy!
Ninth, get a small bowl and mix the ricotta cheese with the mozzarella. Scoop out the soup into bowls and put a dollop of the ricotta-mozzarella mixture on top, and enjoy!

I have to cook all the time and I'm terrible at it and don't really enjoy it so if you don't mind, would you be open to sharing one or two of your favourite recipes as inspiration?

I don't know what types of foods you like- and I'm as midwest american as they come, so I'll share a couple of my favorites. I have been doing this meal preparation thing for a long time, so I kind of take recipes as a suggestion and do my own thing a lot.
One really easy one that my family loves is this pot roast. get out your crockpot (slow cooker) and throw in a 4-6 pound pot roast (i've never been picky about the cut of the meat- i usually just buy what's on sale), one envelope of ranch seasoning, an envelope of brown gravy mix, and about 6-7 pepperocini. add just enough water to cover the bottom of the slow cooker and cook on low for like 8 hours. I shred mine before serving, but you can also just cut off pieces and eat like that, too. Serve it with mashed potatoes (I'll give you a recipe for those, too!) and a salad and bread if you're feeling fancy. any salad is good! I like the chopped salad kits in a pinch, but if you have time you can throw together a fresh salad with veggies of your choice.
mashed potatoes: you can use any potato you want, but my favorite are the yukon gold. They have a richer flavor and they cook faster than a russet or a red. Wash, peel, and dice a few potatoes (depends on how much you want to make! one good sized potato equals about 1/3-1/2 cup of mashed potato). add them to a pot with just enough water to cover. bring to a boil, reduce heat, and cook until you can mash one with a fork. drain all the water except for a little bit, then add butter, salt, pepper, and a splash of heavy cream or milk. you can use a potato masher or get out a hand mixer to whip them.
I just started typing out another recipe, but i'd be here all day if I don't stop myself now. some of our other favorites are fajitas, chicken fried rice, my "taco lasagna", spaghetti with home made meatballs, chicken noodle soup, and bbq pork sliders. my slow cooker is my best friend. if you're interested, i'll share recipes! thanks for asking, and happy cooking!
