Fro-yo girl here. It’s been so long since I’ve been to Los Gatos. The last time I went was to get froyo at Yumi Yogurt (RIP). Well, froyo brought me back to downtown Los Gatos. Easy Breezy opened last month in the heart of downtown Los Gatos. It’s the first Easy Breezy in the South Bay.
I visited recently and I’m happy to report that EB Los Gatos continues to serve the freshest, highest quality froyo – and it’s self-serve. I believe it’s the first self-serve froyo shop in Los Gatos. It’s certainly the only self-serve froyo shop in Los Gatos right now. The premium quality and cuteness really suit Los Gatos.
Their soft serve is hand-crafted and made with proprietary recipes. They use organic ingredients whenever possible. They also use the best soft serve machines, so their froyo/soft serve texture is better – thick, smooth, creamy, but not dense. And there are so many options: custard, yogurt, and vegan soft serve.
There were four machines serving 8 flavors. It’s self-serve like the other Easy Breezy locations. Toppings included warm sauces, candy, cheesecake, mochi, cookie dough, popping boba, fresh fruit (the blueberries and strawberries were organic), brownies, chocolate chips, yogurt chips, coconut, cereal, nuts, sprinkles, etc. I love the Belgian butter waffle cookies they have. It’s $0.94 cents an ounce. Yes, it’s not cheap but it’s Los Gatos and the product is high quality.
Flavors of the day:
Vanilla custard
Chocolate custard
Original tart: oooh, so good, quite tart and tangy, tastes like real yogurt, lovely thick, smooth texture
Vanilla bean yogurt: creamy, thick, yet not heavy, lots of visible vanilla bean specks, not super sweet, natural tasting
Root beer
Coconut crème pie (vegan, coconut milk)
Vietnamese coffee (vegan, coconut milk)
Strawberry Breeze (vegan, coconut milk): obviously made with lots of fresh strawberries, tasted very natural, could taste the coconut milk too. The texture was creamy and thick.
Ask for samples and get a stamp card.

Oh these two babies 😭 I can totally see this too.
There's an extra level of it too bc I also headcanon Wanda as vegetarian.
They have some compromises tho- yes on dino nuggets as long as you also get the vegan option.
Yes on the bag of frozen vegetables as long as there are no mushrooms involved.
Some things Wanda likes that reader doesn't.
"How about yogurt?"
"No. No, god no. I hate that stuff." You shake your head with a grimace.
"Okay, I'll just get a pack for me then."
Some the other way around.
"Do you like strawberries?"
"I hate strawberries. The seeds make me want to gag. Absolutely not."
So you two make a list of different foods and circle it if you both like it, and do a check if one of you like it in your corresponding color, and cross through it if you don't.
It's not a varied list really, but that's okay. You two know what you like and feel safe around each other to support one another 🥰🩷

Autumn (Fall if you're from US😅) Meal Prep!
Vegan, budget-friendly, for one person. You can double or triple ingredients depending on your needs. Buy more seasonal fruits and vegetables to keep it budget friendly.

Disclaimer. In the morning, I usually eat overnights oats with frozen berries and/or crushed nuts. Here, I prepared food for lunch and dinner.
My menu:
baked pumpkin
baked vegetables: brussels sprouts, carrots and zucchini
marinated mushrooms
eggplant spread
salad: arugula, green beans, tomatoes, cucumbers, grain of your choice (mine was buckwheat)
0. Preheat the oven to 200C.
1. Marinated mushrooms prep. It takes time so let's start with mushrooms. Cut 7 white button mushrooms in quarters and slice 1 medium red onion. Add dry rosemary, smoked paprika, and 2 tbsp balsamic vinegar. Mix well and put it aside to get it marinated for 15-20 minutes.

2. Meanwhile, cook buckwheat (or grain of your choice) according to the instructions on the package.
3. Buckwheat is being cooked; mushroom are being marinated; time to bake vegetables. Cut the pumpkin and brussles sprouts in halves, 1 eggplant, 1 zucchini, and 1 carrot like on the photo below. Put vegetables in the preheated oven.

4. Marinated mushrooms cooking. Fry mushrooms with onion in the frying pan for 10-15 minutes.

5. Keep an eye on vegetables in the oven. Small pumpkin needs approx. 35-40 min. Remove vegetables from the oven once cooked. Brussels sprouts are shy as they don't look good in photographs like carrots and zucchini🙃 ok I forgot to take a photo of them.

6. Eggplant spread. Put the roasted eggplant, 2 tbsp tomato paste, black pepper, and salt in the blender and mix to get the smooth spread.

7. Salad. Mix grain, arugula, tomatoes, cucumbers, and beans of your choice. I cooked frozen green beans. I mixed mustard, soy sauce, sriracha, and maple syrup for the dressing. Everything is to your taste. I add the dressing to the salad when I am ready to eat it to keep the salad fresh.
Meal prep is done. As I said, my go-to breakfast is overnight oats, and lunch/dinner is different combinations of what I cooked above, e.g., baked pumpkin and the salad, sandwich with the eggplant spread and vegan cheese, baked vegetables with tofu or canned chickpeas, fried mushrooms on toast, etc. Note: it's not everything what I ate during the last week but this meal prep helped a lot when you're hungry and don't have time to cook everything from scratch. I also are different fruits, berries, nuts, vegan yogurt.

Avocado & Spinach Superfood Smoothie
Ingredients:
1 ripe avocado, peeled and pitted
2 cups fresh spinach leaves
1 banana, preferably frozen
1 tablespoon chia seeds, plus extra for garnish
1/2 cup unsweetened almond milk (or any plant milk of your choice)
1/2 cup Greek yogurt or a dairy-free alternative for a vegan option
Honey or agave syrup to taste (optional)
Ice cubes (optional, if you prefer a colder smoothie)
Edible flowers and thin slices of lime or lemon for garnish
Instructions:
Blend the Base:
In a high-powered blender, combine the avocado, spinach, banana, chia seeds, almond milk, and Greek yogurt. If you like your smoothie a little sweeter, add honey or agave syrup to taste.
Adjust Consistency:
Blend until smooth. If the mixture is too thick for your liking, add more almond milk to reach the desired consistency. If you didn’t use a frozen banana and want your smoothie colder, add a few ice cubes and blend again.
Garnish:
Pour the smoothie into a tall glass. Sprinkle additional chia seeds on top for an extra nutrient boost.
Decorate:
Decorate with edible flowers and citrus slices for a beautiful and appealing presentation.
Serve:
Serve immediately while fresh and enjoy! This smoothie isn’t just a treat for the eyes; it’s packed with vitamins, fiber, and healthy fats. The avocado provides creaminess as well as heart-healthy monounsaturated fats, the spinach offers iron and other minerals, and the chia seeds add a good dose of omega-3 fatty acids. It's a perfect start to the day or a refreshing pick-me-up in the afternoon!
