Papoula Pomfrey (1935 - )
Rolanda Hooch (1940 - )
Sybill Trelawney (1953 - )
Charity Burbage (1963 - 1997)
I don't have many specific headcanons for these characters. Some of them:
* Pomona was friends with Minerva since their Hogwarts days, she never had children and was not very maternal.
* Sybill lost her sister, with whom she was very close in the early 90s, triggering her frequent drinking habit.
* Rolanda was a professional Quidditch player for more than 20 years before retiring, in addition to teaching, she writes about the sport in some specialized magazines.
* Charity was a great friend of Quirinus and before his sabbatical he appointed her to teach at Hogwarts, she tried to get closer to him when she returned investigating his strange attitudes, this made Voldemort start to hate her and was one of the reasons for killing her.
** I've read great Charity/Severus fics, but I believe it would be impossible for him, so emotionally attached to the people he loves, to see her die and do nothing. In fact, that's one of the only things I imagine would break his cover.

Snape/Trelawney
Mundungus/Mrs.Figg
Umbridge/Tom Riddle
thank you very much for the ask, anon!
severus snape/sybill trelawney
i think there's a huge amount of potential in this one, actually - particularly in the hands of someone who wanted to focus on the shared experience snape and trelawney have of being outcasts among the hogwarts staff, considered faintly physically ridiculous by everyone they encounter, and compelled to remain in the gilded prison which is the castle because of a prophecy whose impact on their lives they had no way of fully realising at the time.
arabella figg/mundungus fletcher
canon, i reckon. the way she's giving out about mundungus abandoning his watch over harry at the beginning of order the phoenix very much has the vibe of a couple who have been married and annoying each other for fifty years.
tom riddle/dolores umbridge
i'm going to go with the fact that you've gone for tom riddle rather than lord voldemort to assume we're talking about the teen version. and - as someone who has become committed to making tom riddle and moaning myrtle have a teen romance to end all teen romances, i am now oddly compelled by the idea of these two finding each other as school-age sadists and actually quite enjoying the results.
i think she'd annoy him - obviously - but i do also think that meeting someone who's fond of following the rules would be quite good for young tom. and i think meeting someone who has a slightly better grasp of aesthetics would be good for dolores.

...and Professor Trelawney broke into hysterical sobs during Divination and announced to the startled class, and a very disapproving Umbridge, that Harry was not going to suffer an early death after all, but would live to a ripe old age, become Minister for Magic, and have twelve children.
