1 cup peanut butter + 1 cup sugar + 1 egg. Mix well.
tablespoon scopes on cookie sheet & flatted w/ fork.
350 F/175 C oven, 8-10 minutes.

Its funny. I soften struggle to feed myself, let alone make real food or healthy food. But i also dont live in the most comfortable place; the kitchen is always dirty and cluttered, the pans are slowly shedding their antistick lining, the dishes are half-clean and stored in likewise half-clean cabinets, and even everything outside the kitchen is pilled high with other peoples stuff. Which is fine, i mean, its not my house. But that doesnt help either, having that constant feeling that none of these spaces were meant for me, not even my own room. But i didn't think those things were strongly affecting my diet...
Well. Im house sitting elsewhere for a couple weeks and today is day 2. I already made more 'real' food than i have in months prior. I made soup! And eggs! And sandwiches and tea, and i ate an apple.... I think maybe part of it is my brain being stimulated by a new environment or something, but. It feels good, to have this kind of freedom.
Anyway. Heres hoping i have the best 2 weeks of food.

A week from hell. Used up all my spoons, emotional, social, etc.
My executive function is non existent.
I thought I’d try to follow my daily routine and get food but forgot portion sizes and now I’m in agony.
Don’t even have the energy to get dressed so I’m wrapped up in a blanket watching Netflix. I’ve made sure to keep a drink of water next to me so I don’t get another headache.
This week has taught me so many things and I really need to process it all so I can write it all down and grow from it all 🌿🌱

I love this site, and I love this recipe. It's simple, vegan, gluten-free, and pleasing to a wide variety of palates. 
This is a low-spoon recipe for me because there's no (no!) chopping. The main ingredients do need to be rinsed and drained, however, so either make sure you have prep bowls and space, or quick reflexes! 
I find this to be a fairly gentle recipe as far as digestive complaints go, and have even  served it to a friend as her first real post-surgery meal. (She loved it.) If you have trouble digesting beans, however, I'd maybe keep this to a side dish. If you can't digest/tolerate alliums (garlic, onions, and the like), you could probably leave the garlic out without losing too much of the richness, because the mushrooms are pretty awesome. You could try experimenting with a little bit of white wine and/or chopped celery and or/celery seed, or use both sweet and smoked paprika. 
Note: the recipe calls for a large sauté pan with lid, which I don't technically own. I usually cook this in my stir fry pan (like a wok but flatter) but I have also made it in a 6-qt soup pot when I didn't have anything else. You must have a pot big enough to let the mushrooms fry in a shallow layer and deep enough to hold the mushrooms, chickpeas, and raw spinach. It must have a lid. Beyond that, it doesn't really matter. 
Serves 3-ish as a main dish or 6-ish as a side, depending on whether or not you doubled anything. This recipe is extremely forgiving and flexible, so feel free to experiment. 
Ingredients
3 tbsp olive oil
8 oz sliced white mushrooms
I often double this because I love mushrooms. I've also made it with 10 oz or 12 oz of mushrooms. Baby bellas also work if they're on sale. 
1/2 tsp crushed red pepper flakes, or more to taste
Meh. You won't miss it if you don't care for spicy things. 
1/2 tsp dried basil 
Use more if you increase the mushrooms, or you feel like it. 
1/2 tsp paprika
Use more if you increase the mushrooms, or you feel like it. 
1/2 tsp crushed garlic
I always use 2 to 10 times as much garlic as is called for. I use minced garlic from a jar for everything, because why not? For this recipe, I use a dinner fork's scoop of garlic, which is probably a bit less than 2 tsp. 
2 cans chickpeas/garbanzo beans (15 oz. each), drained and rinsed
3 cups spinach or baby kale, tightly packed (5 ounces) 
I always use exactly one package of prewashed spinach. I think it's 8 oz. 
Salt and black pepper to taste
2 tbsp roasted salted sunflower seeds (optional topping)
Use this. It's good. Just don't go overboard or you will drown out the flavor of the actual dish.
Heat olive oil in a sauté pan over medium till hot but not smoking. Place the mushroom slices into the pan. Let them fry undisturbed for 3 minutes. (I always disturb them. What fun is cooking if you can’t poke things with a spoon? But do try to mostly leave them alone. Get your rinsing done now.) 
Stir and continue frying till the mushrooms are golden brown. Season with salt and pepper. Add the dry spices. Stir to coat the mushrooms. Add the garlic. Stir and cook for 1 minute till fragrant.
Stir in the chickpeas till all ingredients are well combined. Let the chickpeas heat up for 2 minutes, stirring as they warm.
The recipe here calls for adding 2 tbsp water. I always have liquid in the bottom of the pan, from the wet chickpeas and the cooked mushrooms. If your mixture is bone-dry, add 2 tbsp water now, otherwise, just bring the liquid in the bottom of the pan to a boil, then dump the fresh spinach on top of the chickpeas.
Reduce heat to medium low. Cover the pan and allow spinach to cook for about 5 minutes, or until wilted (sad and shrunken and bright green and limp). Stir the spinach into the chickpeas and mushrooms. Season with more salt and pepper to taste. 
Turn heat to medium and let the mixture continue to cook till excess liquid has evaporated. (I generally cook for a few minutes, then get annoyed and turn the heat off and eat it as fast as I can, because the house smells good and I'm hungry. If you don't cook off all the excess liquid, you won't suffer.)
Sprinkle with roasted sunflower seeds (optional, and red pepper flakes, extra optional) and serve

made granola with cranisins and raisins today.
melt a stick of better + 1 c brown sugar + 1/4 t salt + 1/4 c water and cook for 2-3 minutes. stir it a little.
+1/2 t cinnamon and 4 cups of oats. Mix well.
45 minutes in 350 F oven.
Take out and stir every 15 minutes.
dried fruits? nuts? yes please!

baked eggplant and broccoli
(english isnt my first language so forgive me if the language is a little odd) 
im a vegetarian and lactose intolerant and an extremely picky eater because of autism, so its hard to find good lowspoon dishes, but this works for me! this is a 2-3 spoon recipe i think. i broke it into very small steps for simplicity's sake. 
youll need: 
1 eggplant
1 broccoli 
Olive oil
Spices
cut the eggplant into slices 
cut the broccoli into smaller pieces 
pour some olive oil into a small bowl and mix with your spices of choice - i usually go with salt, pepper, some chili, and garlic powder or fresh garlic, depending on my spoon level 
cover the baking pan with a baking paper sheet so you wont have as much of a clean-up. 
put the eggplant slices in and use a small spoon or a cooking brush to cover both sides in the oil 
put the broccoli pieces into a plastic bag 
pour the rest of the oil over the broccoli and shake the bag
put the broccoli into the pan next to the aubergine 
bake on 180 degrees celcius for about 20 minutes! 
theres not much a cleanup after this and its very easy to make. i guess you could also fry it on a pan instead of putting it in an oven. if you have the spoons you can also use a cheese grater to sprinkle some parmesan over the aubergine!

Spinach and Potato Bake with Fried Brown Eggs (Low Spoons 2/10)
As a kid, my grandparents brought brown eggs home to me every time they visited Florida. I guess they knew a farm that had them, and this was before they were common to find in grocery stores. Anyway, they were always a treat for my dad and I because my mom doesn’t like Brown Eggs.
For that reason, I haven’t had them since I was a kid. The other day b I have in and got myself a dozen. They’re all for me, and I honestly might start buying them more often. This meal was so rich in flavor! I’m still not over how delicious it was.
Breakfast for dinner? I guess I’ve been watching too much Hannibal. Okay, in truth, I have been binge watching again, and it once more sparked my passion for cooking, even if it’s as simple as breakfast for dinner.
Ingredients: 1 bag Diced potatoes 1 package Frozen buttered spinach Salt Pepper Herbs de Provence 1/3c shredded mozzarella Brown Eggs Butter/margarine
Directions: Season and bake potatoes until one side is brown Stir in defrosted spinach and bake a little longer Stir in mozzarella, continue baking until eggs are done Fry your eggs on stoveb seasoned to taste Serve and enjoy.
I had leftover potatoes, so I’ll either fry more eggs tomorrow or I’ll pair it with baked chicken or something. Maybe steak. We’ll see.
