Blessed May!! I know I don't normally post about witchy things too much but today I figured, in the spirit of one of my favorite holidays, I'd share the recipe I made to celebrate (featuring a bit of kitchen witchery). Possets are a traditional dessert that date back to the middle ages, and utilize cooked cream with lemon juice, gelatin, or egg as a stiffener to create a custard like consistency. This one uses fresh lemon juice.
Ingredients:
🌷 four cups heavy/whipping cream (fertility and abundance)
🌷 1/2 cup honey (try using local!!) (longevity and sweetness)
🌷 1/3 cup fresh lemon juice (you want that b FRESH squeezed directly from the lemon's teet iykyk) (purification and love)
🌷 1/2 cup lavender flowers (love and peace)
🌷 1/2 cup chamomile flowers (love and peace)
(i used dry flowers for mine but i recommend fresh flowers for more oomf)
Instructions:
1. Combine your cream and honey in a medium sized sauce pan and place over low heat. Stir until well combined, then add your dried flowers.
2. Bring cream, flower and honey mixture to a low simmer, and then allow to cook for 3 minutes. The cream may bubble quite a bit- continue stirring and reduce heat if necessary to avoid scorching!
3. Once three minutes is up, remove from heat and stir in lemon juice. Mix until well incorporated, and allow to cool for just a few minutes.
4. Strain out flowers and pour the mixture into small jars or parfait glasses.
5. Refrigerate to set- roughly two hours at least, but overnight is optimal. If you're really excited you could try popping them in the freezer but I haven't tried that myself so use your own discretion. You just want the custard to set.
6. Top with flowers if desired and go crazy go stupid 💕

so today we have one of the more popular recipes:
lemon possets 🍋

i’ve seen this dish a lot throughout different platforms, mostly on reels. and everyone did it a little differently, so here’s my version (о´∀`о)

we’ll need:
lemons obv
heavy cream
powdered sugar
vanilla extract
and also i added grapes. i liked it a lot, actually, i think they went great here.
most of the lemons in the videos are used as a plate (??) so if you don’t wanna make it fancy (like me lol) you can use some molds, i actually filled my silicone ice tray 10/10 convenience.
you zest and juice one lemon for around 300 ml cream, heat it up and add powdered sugar. experiment with the taste! a little more sour or sweet, whatever floats your boat atm ^_−☆
let me tell you it was hard skinning those poor lemons, some peels ripped, and therefore couldn’t be used for plating, but i do not believe in wasting products on my kitchen, so the insides of lemons were frozen for tea, and peels will be given to my papa for his compost pile :)
when your sugar is melted into cream you can carefully (unlike me) pour it in forms of your choosing! cool it down in fridge or pop it in the freezer if you’re impatient or need to write a post about it.

Lemons and grief
Today I wanted to smoke, but I quickly realized that the only cigarette I had was the one you had given to me. The one that I had kept with the small candies, the ones you take when you have a sore throat. The same ones that taste like honey and be mint.
So I smoked it, I didn’t want to but I knew I had to.
I had to let you go and nothing was better than a cigarette for this. When I took the first drag I was disappointed to say the least. It tasted nothing like it originally should have. The taste of mint took over, so did the tears. Fact is I dedicated a playlist to you and while Ride by Lana del Rey was playing and the mint burned my senses, I couldn’t help but smile.
Smile at the fact that you were still close to my heart while physically far from me. So once I was done I picked up my phone and then I remembered that recipe.
Lemon posset, I was very lucky because my mom had bought me the perfect lemon yesterday.
So I got to work :
For 6 servings you’ll need 3 lemons, 300ml of cream, 90 grammes of sugar and some vanilla extract.
I only had one lemon so I had to divide everything by 3.
First cut the lemon in two, that’s easy and doesn’t require too much efforts.
Then you need to take the flesh out without damaging the shell, that’s harder. When I was watching the video I only saw the person taking it away with a spoon but when I tried it was chaotic at best. Keep the shells as it will be the container.
Piece of advice : cut around the edge of the flesh to make it easier.
The lemon kept splashing me, I was lucky not to get any in my eyes. Just like you it was surprising but not bad.
Once you have passed this horrible step you need to cut the flesh into cubes, you don’t need to make it proper it’s just to make juicing it easier. It made me feel weird because I kept thinking about him during that part.
Therefore after cutting your cubes of lemon you put them in a strainer and press down on it with a spoon, congrats you juiced a lemon :)
Pull out a saucepan out and add your cream and sugar ( I personally did half white sugar half brown sugar because I really like the taste) then the vanilla extract or whatever you have it doesn’t really matters. I was really impatient and added the lemon juice early but I soon realized that I doesn’t matter.
Leave it on the heat until it starts bubbling, then take it out of the heat and add the juice you pressed earlier. I was really impatient and added the lemon juice early but I soon realized that I doesn’t matter.
You can now put the mixture back into the shells of the lemons and place it in the fridge for a minimum of 2 hours. ( it is apparently better when left overnight ) if you have too much mixture you can either enjoy it as is or put it in a small bowl.
And there you have it a lemony dessert that reminds me of someone.
Lemon posset is a dessert that originated from Britain it was, on its earlier versions, a drink of hot milk with ale and used as a remedy. Some people also made it with ice cream instead of cream.
