korean chicken rice bowl
recipe/ info below cut :)
chicken marinade ingredients:
2 tbsp gochujang
1 tsp gochujaru
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp honey/ sugar
2 tsp minced ginger
2 tsp minced garlic
recipe:
marinade a butterflied chicken breast for however long suits you. I think I left it for 1 hour but really any time from 30 mins or more is good. tofu would make a good vegetarian alternative here.
to cook, you could pan fry, bake or air fry. I air fried and it took ~10-12 mins. really the result you’re looking for is cooked through and with some crispy bits. also, especially in a pan or an air fryer, don’t be afraid to let it get some ‘burnt bits’- these genuinely add so much flavour to your chicken.
to plate, I served it with cooked white rice (done in the rice cooker), edamame and some carrot that I quickly pan fried in some sesame oil.

has not eaten human food in two centuries and doesn’t want to start now. since he mentions that wine tastes bad to him he’s probably like the vampires in wwdits and projectile vomits after eating so when it’s his turn to cook he just lays raw ingredients out for other people to deal with

has been living in a convent where she probably didn’t have to learn how to cook ever. overcooks whatever she does cook and tries to pass it off as a “style”. is the equivalent of a “one iced coffee for the entire day” girl so is surprised when people are still hungry after eating a small bowl of gruel

Stepping into her kitchen was the most relaxing feeling ever, it had been a while since y/n had the chance to dine in with a recipe she carefully put together or found on pinterest and craft something nice. Spending hours on end not thinking about her own problems and just focusing on a hobby she enjoys. 
After her overly embarrassing text messages hinting to Minghao that she slightly hoped he was single had her desperately wishing they wouldn’t come back to bite her in the ass. 
Cleaning out the insides of the chicken and placing them in a bowl saved for her next soup stock, she massages pads of butter or seasoning onto it’s skin and placed it in her hot oven, before moving onto the thinly silenced potatoes and root vegetables she had prepped that morning, boiling and simmering them. 
A chime from her doorbell stole her away from her stress free time in the kitchen. She was excited to see Minghao but it wasn’t him who was waiting at her threshold. opening it to reveal a small package, wrapped in brown paper and tied with a matching twine bow. 
No note was attached on the outer side revealing who may have left the wrapped item for her to find. So she decided to ignore it, just for now at least and get back to preparing her meal for a friend. 
An hour had passed since the last time someone was ringing the doorbell and left waiting for her to quickly wash her hands. 
“Y/n?” 
Minghao. 
“Sorry, one second I just need to wash my hands.” 
She yelled, leaving the water running and rushing herself to the guest bathroom next to the door, making sure she looked alright and didn’t miss an out of place hair or swipe of flour on her face. 
Opening her front door, she revealed Mingaho standing with a paper bag in his hand as well as a bouquet of her favorite flowers, Hydrangeas swinging to his side. 
She looked him up and down forgetting she invited him here and still not inviting him in. He was dressed in a perfectly ripped pair of jeans and matching long denim coat, underneath she caught a glimpse of a white button down top missing the clasps of the top three buttons revealing his chest. He looked incredible. 
“Can I come in?” 
“Oh, shit. Sorry. Yes, please.” 
“This is for you, some wine and snacks for after dinner. I picked them up from the chinese market near my gallery.” 
“That’s so thoughtful of you, thank you. The flowers are beautiful, how did you know I liked hydrangeas?” 
“I saw on Seokmin’s instagram that he took you to a flower farm last year, I just assumed.” 
“Ah. Well you assumed right, they’re really gorgeous.” 
“What are you making? It smells so good.” 
“Roast chicken and root veggies, with some wild rice and my mom’s very special, very secret recipe sauce. 
Minghao was amazed watching y/n move around the kitchen with ease, seemingly like she was dancing around the marble floor. 
“I have to admit, I really thought you were joking when you told me you could cook. I almost expected you to order food and make it look like you were the chef.” 
“Ouch. That hurts my pride a little bit. Actually, my dad was a chef. He used to own a restaurant. I spent a lot of time there as a kid helping him.” 
“Was? What happened if you don’t mind me asking?” 
“He passed away when I was a teenager. It’s a long story.” 
“I’m sorry.” 
“Don’t be. It’s okay, I miss him, but cooking helps me feel close to him.” 
“Now I’m very sorry I ever doubted your skill.” 
Your laugh made Minghao happy, he knew he probably struck a chord in you but it was nice that even when you were sad you could still find humor in anything. 
“Need my help with anything?” 
“Just for you to either open that bottle of wine or make me a cocktail, dealer's choice.” 
“Got it.” 
Y/n’s dining partner strode off to the chrome bar cart and twiddled his fingers around the various bottles of liquor, some full and some half empty, giving him an indication of the things she chose for herself. 
“Here you are, chef.” 
“Wow, thank you bartender. What is it?” 
“Try it and find out.” 
Y/n took a sip from the slightly pink cocktail glass, swishing it in her mouth for dramatic effect. 
“Okay, so.. Gin, Campari, a splash of grapefruit bitters, and lemon?” 
“Wow, are you like a weird super taster or something? What the fuck.” 
“No, just a girl who loves gin old fashioneds.” 
“You are one surprising specimen.” 
“Shut up. Come on, let's eat.” 
After basically finishing every edible thing on the plate, Minghao offered to clean up for you as a thank you for the efforts of you cooking him one of the best dinners he’s had the pleasure of eating. 
Y/n switched into her role as bartender and opened a beautiful bottle of red wine for the pair to sip on as their night continued on. 
“Thank you for cleaning. I’m sorry again about the whole weird ass texts I was sending you. I was way too drunk to be alone with my thoughts and access to the internet.” 
“I told you it’s alright. I actually found it sort of cute.” 
“Cute? Maybe you are crazier than I thought you were.” 
“No, come on. You know you’re cute. Everyone tells you all the time, I agree with them.” 
“Shut up, THE Xu Minghao thinks I’M cute? I’m so flattered.” 
Minghao playfully slapped y/n’s hand off of her chest, knocking the red liquid around in her cup, causing it to fall onto the white fabric of her pants. 
“Shit. I’m so sorry.” 
“It’s ok, I can just go throw them in the wash. One second.” 
Y/n departed into her room, changing into a pair of pink pajama bottoms, not removing her corseted tank top in the process, fleeing quickly into the laundry room at the end of the hall to wash the stain out. 
Minghao in the meantime caught a glimpse of the twine wrapped package on her coffee table and went over to see what it could possibly be. In the time he spent inspecting it he didn’t notice his female counterpart entering back into the room. 
“Someone left that for me at my door. Weird right?” 
“Yeah, sort of. Should we open it?” 
“I’m kind of scared to be honest.” 
“Okay, I have an idea.” 
“I’m not sure how I feel about that.” 
“Trust me?” 
“Maybe.” 
Minghao stepped back to the now familiar bar cart and grabbed a bottle of whiskey that had been left unopened until this night, placing two shot glasses in front of them both. 
“What does taking shots have to do with us opening the package?” 
“What doesn’t it have to do with the package? It’s brown, similar to the wrapping. It’s sealed, maybe because you don’t like it or it’s not something you’re sure of. And it’s interesting. So we take two shots, then we open it, then regardless of what it is, we play a game. The game selfishly is for me to get to know you deeper. I feel like I’ve spent so much time with you and I don’t know that much about you, other than what was exposed. So, you in?” 
“Yes.” 
Y/n and Minghao cheered to their now growing connection and he placed the small package in her lap, holding onto her knee, getting the feeling that she needed moral support based on mutual gut feelings. 
“Okay.” 
“I’m sure it’s not bad.” 
As y/ns hands ripped apart the brown paper and untied the rope around the mysterious box, it revealed a soft purple journal, now torn apart, pages basically falling out from end to end all over the couch between them. 
“My journal.” 
Her voice shifted, she was no longer happy or full of anticipation, she was confused and slightly disappointed as her precious and private life fell out in front of her, photos, entries, and shards of her life. 
“Oh, y/n. I-” 
“No. Don’t say sorry, please.” 
“Why the fuck do people care? Just like why am I someone's target? Especially if it’s someone I know, what is so bad that you can’t just fucking talk to me about it? Sorry, I don’t know if that makes sense at all, but I just don’t get it.” 
“I think some people are just scared of genuine conflict, so instead of asking they make things about themselves and take the other person's feelings out of the equation to feed their own.” 
“Why give it back now? Am I expected to just ignore my privacy being invaded and be like well it’s over good? This makes me feel even more uneasy.” 
“Maybe they left you a clue or something by giving this back?” 
Minghao collected the various contents that were left as ashes for you, feeding you more alcohol and not talking while he did so. 
“y/n? Here.” 
A small envelope, matching the shade of purple of the cover of your journal was tapped inside the cover, inside a typed note. 
‘Just because it comes back to you, doesn’t mean it’ll always stay the same. See you soon. Xo.’
“What the fuck does that even mean?” 
“I guess they’re trying to tell you more will come out? And that they have no purpose for keeping the evidence anymore.” 
“Can we.. maybe, just for the rest of the night ignore this? I cannot focus on this anymore and it’s ruining my chance to have fun with you.” 
“Please. Let me distract you.” 
“Do you want to change? Or need clothes? I know Seokmin and Joshua left some stuff here in case they ever stayed over.” 
“They wouldn’t mind?” 
“No, of course not. I’ll be right back.” 
Y/n ran back into her room, gathering various styles of t-shirts and sweatpants to make Minghao more comfortable. 
“Here, there's some options. I know you care a lot about your style, so pick what you want.” 
Mingaho grabbed a black t-shirt with a logo from Joshua’s coffee shop on the front and an odd pair of Seokmin’s disney character pajama pants, just to make the air go back to it’s lighthearted space. 
“Oh my god, you look amazing.” 
“ I just wanted you to smile.” 
“Mission accomplished, Mickyhao.” 
“That is an awful nickname.” 
“Shut up, don’t be a dick.” 
“Got it. Okay, so let’s play a little game, y/n. I’ll ask you some questions, if you don’t want to answer you can drink and you can do the same for me. Got it?” 
“Got it. You go first.” 
“Okay, so what stops you from going after the things you want?” 
“Hmm, I’m shy, I guess? I don’t want to risk changing how things already are any more than they have changed on their own. I think confessions and love declarations are unnerving, I could ruin something good just for a single chance. Not knowing shit freaks me out.” 
“So you’re a control freak, got it.” 
“No. Not a control freak, just a loser.” 
“That’s accurate.” 
“You’re stupid. Okay, Minghao. What made you want to pursue art?” 
“I guess it was just always something I was good at? I loved being able to tell the truth about stuff without having to say it outloud, people can perceive anything they want, but I know how I truly feel and nobody can take it away from me. The truth, I mean.” 
“How are you so certain that its the truth?” 
“Well, it's my truth.” 
“Touche” 
“Why didn’t you tell Minnie about Seungcheol? Were you ever going to?” 
“Yikes. I guess, I didn’t feel like it was important. We hooked up way before they ever dated, he was just helping me out with something that scared me, which I didn’t think was a big deal. I knew she liked him, but she told me she’d never confess. I guess I didn’t think it was as big of a problem until it was. Does that make sense?” 
“Yeah it does, how did it happen?” 
“No, no, no. One question at a time. How did it happen for you?” 
“My virginity? I was at a party, junior year before college and I met a girl. She was nice, really pretty, and she seemed to enjoy my company. I guess I just asked her if she wanted to fuck and she agreed, but after she told me she had a boyfriend and that was that.” 
“So she cheated on her boyfriend just to fuck you? Alright, good for you I guess. Bad for the boyfriend.” 
“Have you ever cheated on someone?” 
“Me? God no. I haven’t even had the chance to be with anyone that seriously considers sleeping around cheating. I don’t think I could do that. Why? Have you?” 
“Nope, but I guess I’ve been the person someone used to cheat, so it feels sort of like cheating.” 
“Since we seem to be two overly honest people for this game, want to drink just for fun as well?” 
“Please. Cheers.” 
“Okay y/n, I have a question.” 
“Yes?” 
“What was it about Joshua or Mingyu that attracted you to them?” 
“With Shua it was how kind he was, everyone knows it and can see that. It just sort of radiates around him. I mean he’s beautiful, they both are. In such different ways. I’ll probably always view him as that first boy I loved, he’s really special to me. As for Mingyu, I guess I never knew why at first. He was just my hot friend that I hooked up with sometimes, but the more and more we hung out the more I realized how smart he was and how intriguing his character is.” 
“Do you still have feelings for them?” 
“I’m not sure what my feelings are for anyone at this moment, no.” 
“What about me?” 
“What about you?” 
“Would you ever consider me the way you consider them?” 
“Can I take a shot?” 
“Sure, but you still have to answer the question. Come on.” 
“Yeah, I would. I like getting to know you, I appreciate how fiercely committed you are to riding for the people you love. I like that you’re artistic like me, that we can laugh about wild stuff, but also be honest and talk about anything and everything in between. You’ve really made me happy even in the short time of knowing you. And to say that I’d have to think about considering you is silly, because I definitely already have. Seokmin and Jun think I have a crush on you.” 
“You don’t?” 
“Nobody needs to know.” 
“I do.” 
“You do what? Need to know if I like you?” 
“No, like you.” 
“Wait.” 
“A lot actually. More than I ever considered I would. I think you’re actually a really spectacular person despite everything.” 
“Oh. Thank you.” 
“Can I kiss you?” 
“Yeah. You can.” 
The smell of whiskey on Minghao’s breath made the hair on Y/N’s arms stand up as she fell into his touch, the kiss exploded into more and more touching and exploration of the pair's bodies. And continued on through the night, more than once. 
The next morning y/n woke up with a headache, checking the clock on her phone revealing it was almost time for Joshua to come and whisk her away from her new found bliss in bed next to Minghao. 
“Going somewhere?” 
“What?” 
“You have a suitcase in the corner and you keep checking your phone, is everything alright? I wasn’t that bad was I?” 
“No, but I’m going to see my mom this weekend with Joshua, I almost forgot. He’s on his way.” 
“Oh, shit. I’m sorry.” 
“Stop apologizing. I’ll just shower quickly and sneak out. You can stay as long as you need, I have an extra key in the blue jar next to my door, just lock it up for me?” 
“Sure, but come here quickly.” 
Minghao pulled y/n in for a long sweet kiss, before she ran into the warm water of her shower. 
Minghao propped himself up in her bed, collecting himself before making an attempt at a small getaway. Coming face to face with the unlocking door of the same apartment he spent his night in before. 
“Y/n, hey can I- Oh, Minghao. Hey.” 
“Joshua, Hi. Sorry I was just leaving.” 
“Without saying goodbye?” 
“What?” 
“To y/n, she’s in the shower, you’re just leaving?” 
“I don’t need to explain myself to you, for your information we already said a very thorough goodbye. Have fun on your trip, take care of her.” 
“Hah. Alright.” 
“I’m serious. Make sure she knows I’ll miss her.” 
“I’ll be sure to do that.” 
Minghao grabbed his jacket and slid out of her front door, looking behind him before walking away from y/n already feeling jealous she’d be spending her weekend with Joshua and not him, but he had things he couldn't tell her. Not yet.
"Oh, Joshua. I didn't think you were coming yet. Sorry, let me just grab my stuff."
"No it's fine, I just wanted to grab some snacks, hope that's okay?"
"Of course, take whatever you want. Give my five?"
"I saw your overnight guest on his way out."
"Yeah, he stayed over. I made him dinner, we just got drunk I didn't want him to have to drive home like that. Unsafe, you know."
"Right, well I'll meet you in the car."
"No need, I'm ready. I cannot wait to have the Boston Creme Pie from Boi's, I'm literally salivating thinking about it."
"We should go when we get into town and order an entire one."
"I see why we're friends now. Come on."
Joshua grabbed y/ns luggage, waiting for her to lock up her apartment and the pair headed to his car waiting outside.

plz share ur recipes if u can🙏 I'm 23 and just learing how to pack lunches because I'm substitute teaching everyday and painfully learning that I really can't work 8 hours on just celsius😭
oh, my darling..
if you have a rice cooker, rice is one of the easiest things to prep and have on hand. I recently upgraded ours and it says it will make oatmeal, too, but I haven't tried yet. This weekend, I made honey Sriracha chicken. you'll need:
2-3 pounds of boneless skinless chicken cuts of your choice- breasts or thighs work well
1/3 cup soy sauce
1/3 cup honey
2 tablespoons tomato paste
2 tablespoons Sriracha sauce
4 cloves of garlic, minced (you can also use what I lovingly refer to as "jarlic"- it's minced garlic in a jar, usually found in the produce section at the grocery store. it doesn't taste as good as fresh garlic, but it's easy and quick)
1 tablespoon rice vinegar
2 tablespoons corn starch
Mix all of this together and pour over chicken in a slow cooker. cook on low for 7-8 hours or on high for 4. shred the chicken when it's fork tender. if you're packing lunches with it, let it cook completely (along with the rice) and divide it up into containers. I really like the glass storage containers (these are the ones I have). honestly, if you make enough rice, this will get you through a week of lunches!
I also make a big bowl of fruit salad. any kind of fruit you like! just wash, cut, and store in an airtight container or divide into your meal prep containers and it's a good snack on the go. Adult lunchables are fun too. Get yourself some fancy crackers and some kind of meat (salami, turkey breast, ham..), a brick of cheese that you can slice up, and trail mix or nuts. some of the meal prep containers have dividers if you shop around and are good for storing these.
Those bagged salad kits are really nice. You get all the stuff you need and only have to mix it. You can add protein if you like, but they're also great on their own! I also always keep simple things on hand for snacks- string cheese, protein bars, good old pb+j, carrot sticks, celery, and cucumbers are favorites around here.
Casseroles are always nice, and they keep well for a few days. You can throw just about anything you like in a baking dish and have a meal for a few days. This Chicken Bacon Ranch pasta is one that even my picky eater loves. Another easy idea is sandwiches. You can be as creative or simple as you like! Grilled or baked, any kind of bread or veggies you want. The possibilities are literally endless.
Honestly, if you do a little Google searching for what you like, there are millions of recipes out there- ranging from super simple to complicated (but ultimately rewarding!). I'm happy to point you in the direction of what my family loves, but I'm sure you have your own taste and preferences, too.

Melissa Clark’s Harissa Chicken
Ingredients 1.5 lb bone-in, skin-on chicken thighs and drumsticks 1.25 lb yukon gold potatoes, peel and cut into 1 inch chunks 3 tsp salt ¾ tsp freshly ground black pepper 2 tbsp harissa ½ tsp ground cumin 4.5 tbsp extra-virgin olive oil 2 leeks thinly sliced ½ tsp grated lemon zest ⅓ c plain yogurt 1 garlic clove 1 c mixed fresh herbs Fresh lemon juice as needed
Directions ✨Combine chicken and potatoes in a bowl and season them with salt and pepper. ✨In a small bowl combin harissa, cumin and 3 tbsp of olive oil and pour the mixture over the chicken and potatoes and let stand at room temp for 30 minutes. ✨Combine leeks, lemon zest, ¼ tsp salt and 1 ½ tbsp olive oil. ✨Heat oven to 425°F ✨Place chicken and potatoes on a baking sheet and roast for 20 minutes. Then toss the potatoes and scatter the leeks over the baking sheet. Roast until chicken is cooked through and everything is golden and slightly crisped. ✨Place yogurt in a small bowl and grate garlic clove over the yogurt. Season with salt and pepper. ✨ Spoon yogurt, olive oil and lemon juice over the chicken and vegetables and enjoy

Nutrient-dense meal prep recipes that are both healthy and delicious -
1. Quinoa and Roasted Vegetable Bowls:
- Cook quinoa according to package instructions.
- Roast a variety of vegetables (such as bell peppers, zucchini, and broccoli) with olive oil, salt, and pepper in the oven until tender.
- Assemble bowls with quinoa, roasted vegetables, and a protein of your choice (such as grilled chicken or tofu).
- Drizzle with a homemade vinaigrette made with olive oil, lemon juice, and herbs.
2. Turkey and Sweet Potato Chili:
- Brown ground turkey in a large pot with diced onions and garlic.

- Preheat oven to 400°F.
- Place a piece of salmon fillet on a large piece of aluminum foil.
- Add trimmed asparagus spears, cherry tomatoes, and sliced lemon on top of the salmon.
- Drizzle with olive oil, salt, pepper, and herbs (such as dill or parsley).
- Seal the foil packet and bake in the oven for 15-20 minutes, or until salmon is cooked through.
- Serve with a side of quinoa or brown rice.
4. Chickpea and Vegetable Stir-Fry:
- Sauté diced bell peppers, broccoli, and carrots in a large skillet with olive oil.
- Add in cooked chickpeas and a sauce made from soy sauce, garlic, ginger, and a touch of honey.
- Cook until vegetables are tender and sauce has thickened.
- Serve over brown rice or quinoa for a satisfying and nutrient-dense meal.

Popcorn! Air popped without any butter or salt is around 30 cals per cup! unseasoned popcorn just tastes better than popcorn with butter imo <3
Sugar free gum bc duh! I really like the watermelon flavored gums cuz they taste soso good and they fill my sweet tooth!
These low cal cookies! 50 cals each, love baking these and pairing them with black coffee <3
Cauliflower rice! 27 cals per cup, and super filling! I dont usually eat it by itself, I like to mix it with some protein or veggies!
Rice cakes bc you know the drill, 35 cals each yum yum, I usually pair plain rice cakes with greek yogurt and a few of these stevia-sweetened dark chocolate chips!
Diet Arizona Green Tea! Tbh just any diet drinks, but this ones a personal fan fav! 0 cals, as all drinks should be <3
Shirataki noodles! Tons of fiber, only 5 cals, and filling! Make sure to look up a good way to prep them! I usually boil and stir fry them before eating them!
Boiled eggs! 78 cals each, but still super good for you <3
Teas, teas, and more teas! Theres a tea for everything from metabolism speeding to sleep aid, drink some tea!
Greek Yogurt! This isn't a revelation I've figured out by myself ofc but still! 100 cals per cup, and super healthy! Plus its a great substitute in a lot of cooking!!!!
Canaloupe! 19 calories for a WHOLE wedge! A whole medium sized canaloupe is 180 cals!
Pickles! 7 cals each and suuuuper yummy imo <3 cucumbers are also a major safe food of mine I have them almost every day for a snack!
Soup!!!!! Tomato soup has around 80-100 cals for a whole bowl and its so yummy imo!!!!
Casabella peppers! (yall know those little peppers at in-n-out?) 10 cals each, literally any peppers are my favs, but my friends love to go to in-n-out together with me and I always love getting a diet coke and some casabellas to munch on <3
Chicken! Just in general! 120 for a whole chicken breast is the best thing ever <3
Almond milk! I've always been lactose sensitive so I've never genuinely had regular milk, plus almond milk is 30 cals per cup and full of calcium which is super important for hair and nails!
Miso Soup! My dad's made this stuff for me since I was a wee little kid, its just one of my favorite foods, period! When i found out it was only 50 cals per cup I was absolutely THRILLED
Healthy Choice power bowl microwaved meals. Oh my goodness absolute godsend! 170 for a whole DINNER!!!! Super filling, high protein, literally just put it in the microwave and bam omgggg its so nice to have these when I need them <3

Low cal versions of my favorite meals! I've been experimenting with a bunch of low calorie recipes of different stuff and they've all been great! 3 Kingdoms Chicken Recipe
This one's a little more involved than burrito glop, but I'm up to making it most nights and I'm a depressive lump who can barely drag himself out of bed half the time so it's gotta be relatively low-spoons, right? Right.
First things first: the name is a joke. It's got nothing to do with the 3 kingdoms period in Chinese history. Instead it's because the dish includes chicken (animalia), lots of veggies (plantae) and mushrooms (fungi).
You will need:
rice and a means of making rice
a big pot
a pan (if you've got non-canned chicken)
boneless chicken breasts, thighs, or canned chicken
butter or sesame oil
cream of mushroom soup concentrate
chicken broth
bok choi, broccoli, carrots, mushrooms of your choice.
seasonings of your choice.
My seasonings:
powdered garlic (lots)
onion flakes (also lots)
soy sauce (not as heavy as the garlic but not light)
kitchen bouquet/maggi (a modest amount)
fish sauce (a modest amount; like a single 'bloop' per can of soup. you can sub with oyster sauce if you've got that instead; both are good, if a bit different end results)
lemon juice (added in to cut the flavor if it gets too heavy/dark, to taste)
pepper (as desired)
sesame seeds (as desired)
chilli powder (as desired; I go light, you do you)
Prep:
Chop up your vegetables (and mushrooms if they're not pre-cut)
Defrost your chicken, tenderize it such that it's relatively flat and will cook more evenly.
Cooking:
Dump the can(s) of cream of mushroom concentrate into the big pot. Add about half a can's worth of chicken broth per can you're using. Set the burner to a low-ish heat, like 3 to 4.
Add your seasonings to the soup, stir thoroughly. Add your vegetables and turn the heat up to 4 or 5. Cover so it heats up faster, but leave the lid off once it's bubbling well so some of the liquid can boil off.
Make your rice. I recommend about a cup of rice per person you're serving, but maybe you really like rice and want to make loads of it. Don't let me stop you. Minute rice is fine, but you can literally use minute rice proportions (one cup water per cup of rice) to make basmati rice in the goddamn microwave if you don't have a rice cooker. Feel free to add a bit of ginger if that tickles you. I don't always, but sometimes I'm in the mood for it.
Heat up the pan, add a thin layer of sesame oil OR throw a pat or two of butter in and make sure it melts and covers the whole pan. Or do both, fuck, do what you want; rules are made up. Lay out your chicken breasts or thighs and sautee them, flippin' 'em and cutting them open as necessary to ensure they're thoroughly cooked.
Note: There is no such thing as 'medium rare' chicken. That is how you get food poisoning. Don't do it. Cook your chicken all the way through. No more pink should be showing. Love yourself, love your family, cook your food thoroughly.
Serve rice, serve chicken, pour soup/veggies over both. Eat it with a knife and fork unless you're the sort to pick up pieces of chicken and just tear them apart with your teeth.
Alternately, if you're not feelin' it, you can just throw some canned chicken in the pan for a bit, or even directly in with the soup and veggies and serve that over rice. If you're cooking for yourself, just throw it all in one big bowl, eat your fill, and put any leftovers in the fridge for later.
You can also cut up the chicken into chunks if you're gonna eat it with chopsticks, or if you just like it better that way. Ideally you sautee the breasts or thighs whole, then cut them up after they're cooked (they're juicier that way) but you can cut 'em up and then fry 'em if you like, make yourself happy.
This one has a lot more prep time involved (mostly in remembering to defrost the chicken, then tenderizing it, and in chopping up veggies) but you can cut corners by using pre-chopped frozen veggies and/or canned chicken. It's not as good, but it's still pretty great compared to the alternative depression meal of like, a whole sleeve of saltines or a few pre-cooked hot dogs.
There are no hard and fast rules to seasoning. I like to add it as I go, sampling the broth and judging what it needs more of. Too tangy? You overdid the lemon juice; add more carrots and a bit more kitchen bouquet/maggi. Too salty? You overdid the soy sauce; add more carrots and a bit of chilli powder to hide it from the people you're serving it to. You'll know, at least, for the next time.

Cooking Corner - Lasagna Soup

Cozy season is here! I made this soup last week, and it's an easy recipe that has protein and a veggie, and I only had to use one pot!

This recipe contains wheat, dairy, and meat. This recipe meal preps well!
Here’s what we’ll need:
1/2 pound lean ground beef
1/2 pound italian ground sausage
1 teaspoon olive oil
1/2 cup yellow onion (about half an onion)
3 garlic cloves - that's three wedges of the garlic!
3 tablespoons tomato paste
1 24-ounce jar red pasta sauce or marinara sauce
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1/2 teaspoon crushed, dried, oregano
1/2 teaspoon dried thyme
7 cups beef or chicken broth
9-10 uncooked lasagna noodles
3 cups fresh baby spinach
1/2 cup shredded parmesan cheese
1 cup fresh ricotta cheese
1 cup shredded mozzarella cheese
First, break the lasagna noodles into smaller pieces - I broke each noodle into about 5-6 pieces!
Second, put the ground beef and ground sausage in a deep pot on the stovetop. Turn the heat to medium high and stir often, it should take about 8-10 minutes to turn brown all the way! Since it's lean ground beef, I didn't have too much grease, but if you have a lot of grease, you can soak it up with a paper towel or drain it into the trash. After that, set the meat aside in a bowl.
Third, chop the onion! Add the onion and the olive oil to the pot you browned the meat in. Make sure the heat is on medium and cook the onions for about 5 minutes.
Fourth, mince the garlic - that means chop into itty-bitty pieces. Add the minced garlic in the pot with the onion.
Fifth, add the tomato paste to the pot. Remember to stir it all together!
Sixth, add in your seasonings (red pepper flakes, salt, pepper, garlic powder, oregano, and thyme), your red tomato sauce or marinara sauce, your broth, and the cooked meat. Keep stirring as you add, and keep the heat on medium!
Seventh, we want to turn the heat from medium to a low simmer. Start at medium and make sure you have some bubbling in the soup - once you're there, you're going to turn the heat down bit by bit, and you want the soup kind of bubbling the whole time. Once the heat is on a low simmer, add in the broken noodles and cover the pot. Let it cook for about 20 minutes, or until the noodles are cooked and soft enough to eat.
Eighth, add in the parmesan cheese and the spinach! It shouldn't need too long - just until the spinach gets droopy!
Ninth, get a small bowl and mix the ricotta cheese with the mozzarella. Scoop out the soup into bowls and put a dollop of the ricotta-mozzarella mixture on top, and enjoy!

If you ever need a quick & easy vegan meal to make, this is now my go-to for feeding Cute Girlfriend when I have nothing planned. (Though it helps to have a pantry stocked with some Asian food basics - sesame seeds, soy sauce, sesame oil, etc.)
My personal updates to the recipe are:
double the amount of sauce you make
simmer the tempeh for more like 10 minutes (I want to try simmering it in broth)
cook the broccoli (and any other veg you want to add) first, then set aside
once the tempeh is cooked, add the broccoli back in and carefully toss everything with the sauce

My Kitchen Essentials 
One of my favorite things about having my own apartment has been having my own kitchen. Furnishing the rest of my apartment was an expensive and sort of stressful process. The kitchen however has been a lot more fun because I inherently find kitchen gear more interesting and had enough of the basics to get started without breaking the bank. Because I keep my meals simple and only work with ingredients that I enjoy, I genuinely love cooking for myself. I shared my peanut butter overnight oats and tofu rice bowl recipes in a post about Sunday meal prep a few months ago, but am hoping to share more of my go-to meals in a proper recipe format. 
The core essentials that I brought from home include a 10-inch cast iron pan, a 1.5-quart stainless steel pot, a small wooden cutting board, a pairing knife, a chef's knife, and a pair of scissors. I also brought a basic set of dry measuring cups (¼ cup, ⅓ cup, and ½ cup) and measuring spoons. While I haven’t done any baking here and don’t follow recipes when cooking for myself, the measuring cups have been really useful for cooking various grains. A few items that I brought but haven’t used include a lemon juicer, a garlic press, and a silicone pastry brush. As for non-cooking kitchen basics, I was fortunate enough to be handed down a set of both dishes and silverware and to be gifted a nice wooden salad bowl. I also brought a utensil crock, a mini teapot, two mugs, two glasses, and a few food storage containers from home. 
To further round out my setup, I picked up a sieve (which I use for rinsing rice), half and quarter-rimmed sheet pans (which I currently primarily use for baking tofu and green beans for my rice bowls), a wooden spatula, and a potholder. I love cheese, so a personal essential of mine is a grater. I use it to grate cheddar for my cheesy polenta (which I serve with chicken apple sausage and peppers), pecorino romano for carbonara, and parmesan for Caesar salads among other things. I may eventually add a box grater to my setup, but have thus far been happy with this paddle-style grater that I picked up on my first full day in Washington State. Another item that I bought immediately, but have not personally used is a pair of kitchen tongs. (They did come in handy though for a work picnic). While I don’t regret the purchase per se, this just goes to show the true value of starting with the bare minimum and slowly building out your setup as you discover the limitations through experience. Other kitchen essentials that I picked up but that aren’t directly used for cooking include an airtight container for my rice, a glass food storage container for my lunch, a dish drying mat, sponges, and dish soap. 
It’s not essential, but one fun recent addition to my kitchen is the rice cooker I got for Christmas. The resulting rice is notably better than my stovetop rice, but I will note that it doesn’t exactly save time as the rice is supposed to soak for 30 minutes, cook for 15, and steam for another 15. Another important note is that the measuring cup that comes with the cooker is only about ¾ cup. Thus, when I made my first batch of rice I was a bit thrown off and only had enough rice for three rice bowls instead of my usual four. I made a double batch the second time around which allowed me to create five rice bowls instead. 
While I’m not set up for baking or cooking for a crowd, I truly do have all that I need to cook for myself. Nonetheless, I’m excited to continue building out my kitchen! A few items that I’m considering adding at some point in the future include a kitchen scale, a larger pot, a mixing bowl, a meat thermometer, an immersion blender, and an ice cream maker. We’ll see though because I’m not yet convinced that these items would get regular enough use to justify the cost and space they’d take up in my small kitchen.
