Saturday 2 March 2024
A member of the brassica family Brassica rapa var. nipposinica (mizuna, Asian greens, Japanese mustard greens, California pepper grass, spider mustard) can grow with protection through the winter. The feathery leaves have a mild mustard flavour which are sweet enough for salads and older leaves can be cooked like spinach. This biennial plant was in its second year and so was producing flowers.

my kids came over yesterday and we sat at my kitchen table telling our tales of the week and talking nonsense about nonsense and we laughed and laughed and laughed until the sun started to set and the streetlights came on
tomorrow morning at finnie's house we'll all get together and our partner's too and have our monthly big breakfast and visit some more. i know this window where we are all so near and we can get together so often, i know it will close eventually. i am trying so hard to pay attention to every minute
i had dark dreams and restless sleep last night but boba kept me company the whole time. i got so hungry thinking about tomorrow, i made myself a big breakfast this morning too and it felt so good. it's a sunny day. i am finishing my coffee. boba is warming herself in a bright spot and chirping happy thoughts. i have a new poetry collection waiting for me at the library and i'm going to walk up the hill and across the park and through the woods to go get it and i'll see where the day goes from there

A 'new' name for the fourth consecutive day! The name 新納 is usually read Niiro or Niino, but also potentially Niinō, Shinnō, Niina, Ninō, Niiru, Shintō, Shinno, Niuno, or Arano.
新 means new, and it’s read atara.shii, ara.ta, nii, or shin. Its radicals are 斤 axe on the right, and 立 stand and 木 tree on the left.
納 is a first for this blog! The radicals are 糸 thread and 内 inside, which makes sense because the verb 納まる (osa.maru) means to fit (in a box, frame, or category), to settle a matter (or taxes), to occupy or settle into a position, to subside or be sorted, all kinds of gentle sorted meanings. Its counterpoint 納める (osa.meru) means to pay taxes/fees (or to make an offering).
It can also be read nō, natsu, na, nan, or tō, as in 納税  (nouzei) paying taxes, 納得 (nattoku) convince, or 納豆 (nattō), those fermented beans that are so slimy but if you know what to do with them they do actually taste nice.

Walk with me: Weeds in the Dingle
I feel like we spend so much time talking about the standard "desirous" herbs and plants. Today, I wanted to talk about the weeds. Specifically the weeds in the dingles that grow in the marshy areas in between the houses in my neighborhood.

Meet garlic mustard. They're actually sort of pretty when they flower and quite tasty if you eat them early enough in the year - you know - if you like garlic and mustard as the name suggests. You can make a pretty tasty garlic mustard pesto without too much effort.
Note: the dingles in my neighborhood are definitely not safe to eat from - I live in an old mill town and then low ground (especially if there's groundwater involved) is quite polluted. Please do your own research before eating any plants you find in the wild.

Japanese knotweed is considered to be one of the most invasive plants in my area (I believe that this may be true of the whole North East). The young tender stalks are edible and taste like what would happen if rhubarb and beets had a strange, strange lovechild. It is definitely what I would call an acquired taste.
Texturally, knotweed is pretty similar to rhubarb as well so it makes sense that most sources online suggest treating it as such: I've made cocktails syrup from some with moderate success and intend to try my hand at making a crisp. (With some from my coven mate Dora's backyard, not from the dingle)

Lastly, I believe that this plant from the dingle is Greater Celandine. The only reason that I am unsure is because I've personally handled it and was told that Greater Celandine causes skin irritation (from an only sometimes reliable source, though). In any case, it, like all of the other plants I've mentioned, is invasive to the area.
There's not much left that isn't. Lots of goldenrod and some staghorn sumac in the wilder places. All of the gardens and meadows are overgrown with milkweed. The American Elm belongs here but the Black Locust certainly doesn't. Or...didn't. How do you account for climate change when you think about the natural range of plants?
I find myself full of these questions - like the days that I wonder how many more years these old sugar maples will survive without a deep freeze.
At least Black Locust is an American tree. (And I adore mine so)
Soon the flowers on these early spring weeds will be gone and the vines will grow tight against each other for another year. I won't be able to see through the cracks in our civilization. The animals and plants will retreat to their separate worlds. But for now, I see them.

わかめと昆布サラダ / Wakame to konbu sarada (Seaweed and kelp salad)
A wide variety of seaweed-based salads are made by Japanese home cooks. They may contain only a mix of seaweeds and a dressing, but may also feature vegetables including cucumber, carrots, lotus root (レンコン / はす), daikon (だいこん), corn, edamame (枝豆), or onion. Dressings are as varied as cooks, and may be based around sesame oil (ごま油), rice vinegar (米酢), miso paste (みそ / 味噌), ponzu sauce (ポン酢), or mayonnaise (マヨ).
This recipe is a good way to use up reconstituted kombu and wakame that were steeped to make soup stock. It includes instructions for two dressings: one based on rice vinegar and sesame oil, and another with a sesame-mayo base.
"わかめ" or "ワカメ" ("wakame") is likely from "若" ("waka," "young") +‎ "海布" ("me," "seaweed"); it is a particular species of edible seaweed (Undaria pinnatifida) that is farmed in Japan, Korea, and China. It is sometimes called "sea mustard" in English. Without further specification, "wakame" in a culinary context is taken to mean the leaves of the seaweed; these are the same leaves that are eaten in miso soup (みそ汁).
The etymology of "昆布" ("kombu" or "konbu") is unknown. It may be a phonetic Japanese reading of the Middle Chinese "昆布" (Mandarin: "kūnbù") (itself from "綸布" "*krūn pās," "green ribbon" + "cloth"), used to refer to various types of kelp and seaweed. In Japanese, the term refers to any of a few species of edible kelp from the Laminariaceae family.
Dried kombu is steeped to make one type of dashi ("出汁" / "だし"), a stock that is used in various soups and sauces. Once reconstituted, it may be steeped again to make 二番だし ("niban dashi," "second dashi"), sliced and simmered as one ingredient in a 煮物 ("nimono," simmered dish), or roasted and combined with other seaweeds and spices to make 振り掛け ("furikake").
"サラダ" ("sarada") is probably derived from the English "salad."
Note that the "seaweed salad" served at Japanese restaurants in the U.S. is not commonly eaten in Japan. It is shipped out to restaurants and stores pre-packaged, and is made with colored オゴノリ ("ogonori"; "agar" on ingredients lists), きくらげ ("kikurage"; "wood ear mushroom" or "fungus" on ingredients lists), and byproducts of wakame including 茎わかめ ("kukiwakame," wakame stem) and メカブ ("mekabu," wakame sprouts; both listed as "wakame" or "seaweed" on ingredients lists). You may be able to find this salad in the freezer section of your local Asian grocery store. If you want to approximate the texture of this salad at home, try buying some mixture of ogonori, kikurage, kukiwakame, mekabu, モズク ("mokuzu"), and/or ひじき ("hijiki"). Instructions for the dressing are below.

Ingredients:
For the salad:
2 cups total reconstituted kombu, wakame, hijiki, or other kelp or seaweed
Vegetable additions to seaweed salads are possible and common. Try adding some cucumber, julienned carrots, sliced lotus root, sliked daikon radish, corn, edamame, or sliced onion that's been soaked in plum vinegar for 15 minutes.
If you're including cucumbers, slice them, salt them, allow them to drain in a colander for about 10 minutes, then gently squeeze them of excess liquid, to avoid making your salad watery.
For dressing 1:
1 Tbsp unseasoned rice vinegar (米酢)
1 Tbsp toasted sesame oil (煎りごま油)
1/2 kosher salt
1/2 tsp vegetarian granulated sugar
1/2 tsp Japanese soy sauce (しょうゆ / 醤油) (such as Kikkoman's)
2 tsp toasted sesame seeds (いりごま)
To make U.S. restuarant-style seaweed salad, omit the soy sauce; replace the sugar with high fructose corn syrup; and add a pinch of cayenne pepper, 1/4 tsp of onion powder or yeast extract, and a pinch of MSG.
For dressing 2:
2 Tbsp vegan mayonnaise
1/2 tsp unseasoned rice vinegar (米酢)
1/4 tsp dried ground shiitake mushroom, or vegetarian dashi powder
1/4 tsp vegetarian granulated sugar
Drop of djion mustard
Pinch kosher salt
1 tsp Japanese soy sauce (しょうゆ / 醤油) (such as Kikkoman's)
Drizzle of mirin (みりん)
2 tsp toasted sesame seeds, ground in a mortar and pestle or spice mill
If you eat eggs, you can replace the first five ingredients with 2 Tbsp Kewpie mayo (キューピーマヨ).
For a halal version, replace the mirin with an extra pinch of sugar.
Instructions:
For the salad:
1. Slice kombu into very thin strips. Slice wakame into thin strips, or leave as-is, as desired. Slice other flat dried seaweed into thin strips or bite-sized pieces.
For dressing 1:
1. Whisk all ingredients except sesame seeds together in a small bowl. Toss with seaweed. Top with sesame seeds and serve cold.
For dressing 2:
1. Whisk all ingredients together in a small bowl. Toss with seaweed. Serve cold.

Cleaning out the fridge! For the main, brown rice and a delicious veggie stir-fry: bok choy, carrots, and onions cooked in chicken fat, seasoned with torigara boullion, mirin, ginger, and soy sauce.
For sides, a recent favorite go-to: mizuna (Japanese mustard greens but you could use arugula) and thinly sliced red onion, tossed in lemon juice, fish sauce, and sugar, finished with chili flake and toasted sesame seeds. Also shirataki and bean sprouts in mentsuyu (eh, needs work) and the last few bites of leftover broccoli gratin. Satisfying and full of veggies!

Truly, spring is upon me, and I am working this health improvement for everything it's worth.
Four days ago, I managed to finish weeding the front herb beds, making this the first time I can recall that they were actually all caught up on weeding simultaneously. Weeding them is a skilled task, because it takes a trained eye to realize that in the middle of that clump of deadnettle and chickweed you're about to yank out, there is a single stem of French Tarragon that has somehow survived. I have yet, however, to give the last area I weeded a quick cultivation and then spread seeds for dill and cilantro and poppies.
Two days ago, I managed to clear and plant a solid twenty square feet of my kitchen garden (calling this and the field garden "gardens" feels....aspirational, given how much of them is actually just grass and weeds). So now I've got spinach and lettuce that may or may not recover from the wildlife, mustard greens, broccoli, cauliflower, collards, and kohlrabi planted. And then yesterday and today I managed to gather enough grass clippings to mulch it all. Grass clippings aren't an amazing mulch but they're certainly the one I have. The Boy helped rake, and @phantomtheraccoon collected the clippings and mulched the last of the garden, while I weeded the long-neglected space where the goth garden was two years ago and planted in a bunch of Solomon's Seal and Myoga (Japanese Ginger) I got off FB Marketplace.
There's more Solomon's seal yet to plant, but I'm going to put it in the odd shady nook at the front of the house that we call the Sculpture garden (also very much aspirational, as there are no sculptures), along with the lovely mix of ferns, heucheras, and hostas I've been collecting for the spot. All of which also need to be planted. I think that's like...fifteen plants plus a sack of solomon's seal that's been out of the ground bare-root for a week now. And I gotta clear turf to plant them. It's fine; don't worry about it.
Today after the raking and the hauling and the weeding and the planting, Phantom and I went on a whirlwind tour of the beautiful, sun-drenched (ow, the sun) spring countryside and grabbed cardboard boxes from a friend to mulch with, cheap strawberry and lily plants from another FB Marketplace listing, chick feed for the chicks that grow like balloons, and parsley from Walmart. Ahh, Walmart garden center. You suck, but you came through for me on this one thing. You had some really nice parsley.
And now, though it is dinner time if you're sensible, I have to see how much of the family I can rouse so we can prepare a bed for these strawberries, which are at this moment blooming and healthy and sitting, freshly dug today, in a plastic grocery bag on my deck.
All of which entirely ignores prepping ground to plant seeds and onion sets and in a week and a half it's time for peppers and tomatoes and EVERYTHING else to go in. Also the twenty or so trees and shrubs sitting behind the house in pots waiting to be planted out before the heat of summer comes.
Also this sack of sunchokes that is currently sprouting and growing sitting on my kitchen table, which I haven't yet figured out where to plant.

Okonomiyaki Kinki cuisine
Okonomiyaki is a local Japanese dish that is popular in Osaka and Hiroshima, Japan, and is made from a mixture of cabbage, meat, seafood, tenkasu (or udon or soba), and eggs that is grilled on a griddle. Osaka-style and Hiroshima-style are the most representative, each with their own distinct styles.
