SWEET POTATO SALAD
Ingredients for 1 person
one big sweet potato
100 gr lacto fermented tofu
Mushrooms
1 avocado (half is fine too)
Soy sauce
Sesame seeds (optional)
Lemon
Green salad
Vegetable (olive) oil
Preheat your oven at 200° C. ⠀ Cut the sweet potato into thin slices without cutting it completely, leaving the bottom part whole. Place it in the oven and top it with 1 tablespoon of vegetable oil, cook for about 20 minutes at least, depending on its size. *** Cut and place the lacto-fermented tofu in a bowl, add a little bit of lemon juice, garlic, pepper and mix it all with a blender or a fork. Wash the green salad and dry it. Wash the mushrooms and cut them into thin strips, place them on top of the salad (leave them raw), add 1 tbsp of soy sauce, vegetable oil and lemon juice to taste. Cut and place the avocado as well. *** Once cooked, you can place your sweet potato on the salad dish. Top with the lacto-fermented tofu and sesame seeds (optional)!

Teriyaki Tofu! Need vegan protein?
For two people you wanna use 400 gr of tofu, but I only used 200 grams for myself.
----- 
For the sauce: 4 tablespoons of soy sauce, 1 tablespoon of white wine vinegar or apple vinegar, 1 tablespoon of sugar, 1 teaspoon of grated ginger, (optional) a bit of garlic powder and, to make it thick, 1 tablespoon of flour or cornstarch. Add a few tablespoons of water to the sauce, about 3. 
Mix well and set aside. Remember that for one person you have to divide the ingredients by two, or at least use less soy sauce and less sugar. ----- 
Cut the tofu into slices and roast it on a hot pan with a little oil. Don't forget the other side! It must be golden brown. Now you want to turn the heat off, because the pan will be already warm enough. Pour the sauce on top of the tofu and move it a bit with a spoon so that all the tofu is marinated in the sauce.

I decorated the tofu with sesame seeds and served with steamed asparagus on a bed of spinach. You're done!!!

This coffee and banana smoothie is amazing for breakfast but even to awaken your afternoon when you're feeling unproductive.
Ingredients for 1 person:
Half a banana, cut into slices
1 small espresso shot
150 ml of your favourite plant-based milk
1 pitted date
A spoon of brown sugar (or even just a teaspoon)
Blend everything well and pour on a glass full of ice! I personally topped it with cinnamon, but you can also use cocoa powder, grated coconut...

My afternoon snack: chia pudding!
1 tablespoon of chia seeds
8cl of vegetable milk
1 teaspoon of grated coconut (optional)
half a banana
Maple syrup or agave syrup
Cinnamon
Red fruits (strawberries, berries...). 
Whisk the chia seeds with the vegetable milk and, if you have it or like it, the grated coconut. Let sit for 20 minutes. In the meantime, cut your strawberries or whatever type of fruit you like and put it at the bottom of your favourite glass. Pour the pudding in the glass, cut the banana into slices and arrange them on top of the pudding. You can play with the layers of pudding/fruit as you wish, really. Add a teaspoon (or more) of maple/agave syrup on top and sprinkle with cinnamon if you like it. Let it rest in the fridge!

Homemade hummus!! Wanna make this?
1 tin of chickpeas (around 450 g when drained) 100 g of tahini sauce The juice of 1 lemon Salt, pepper 1 tbsp cumin 50 g of olive oil 1 clove of garlic 
Drain the chickpeas, place them in a blender with the squeezed lemon, crushed garlic, salt, pepper and cumin.
Add olive oil, mix well and serve! That’s it!

Green detox smoothie:
For 1 person
One green (granny) apple 🍏
One kiwi 🥝
The juice of one lime (half is okay too)
A handful of spinach (trust me, you won't even notice the taste and YEAH it tastes great btw)
200 ml of fresh water
Mix everything together and serve...
Maybe with an ice cube or two? If you want ❄️

Vegan BANANA BREAD 🍌
Ingredients :
- 80 g of peanut butter;
- 50 ml of vegetable milk (soy, rice, almond...);
- 300 g of flour;
- 60 g of potato starch;
- 3 ripe/brownish bananas; 
- 150 g of brown sugar;
- 135 g of seed oil;
- 1 sachet of baking powder;
- 1 pinch of salt.
Optional: cinnamon
In a large bowl, mash the bananas with a fork. Add: the flour, the potato starch, the sugar (and cinnamon), the baking powder and a pinch of salt. Mix everything together. Add the oil and mix. Add the peanut butter and mix. Add the milk and mix everything well. Pour the dough into a rectangular mold (about 25 cm long), with baking paper if it isn't non-stick. Bake at 180°C for 50 minutes.

Caramelized tempeh with sweet and sour sauce
How to cook tempeh and make the sauce for this recipe: For 200 grams of tempeh:
Cut the tempeh into cubes; in the meantime, heat a tablespoon of sesame oil on a pan. Toast the tempeh in the pan until it turns brown. Set it aside only when it’s really golden brown and crispy.
Then, in a bowl, you can prepare your sweet and sour sauce:
3 tablespoons of soy sauce
2 tablespoons of agave syrup (or maple or other syrup)
the juice of a lime (half a lime is fine too)
a teaspoon of peanut butter (you can also double it)
1 or 2 teaspoons of corn or potato starch
Mix everything with a teaspoon. Now, at home I had spinach and mushrooms, but you can cook any kind of vegetable in the same pan where you had previously toasted your tempeh. Put the tempeh back in the hot pan with your veggies, just to warm it up a bit. Turn off the heat and pour the sauce on the tempeh and veggies.This way, the heat of the pan will caramelize everything and the sauce will become thick. Mix well, so that the sauce does not stick to the pan. Serve!

Scrambled tofu (yup, it’s vegan): Olive oil, turmeric (makes it yellow and gives it a great taste), salt, pepper. Scramble in a bowl and then pan fry with a tiny little bit of oil.
