Ingredients:
     - 1 pack 𝐌𝐢𝐫𝐚𝐜𝐥𝐞 𝐑𝐢𝐜𝐞 (prepared according to package instructions)
     - 1/2 cucumber, diced
     - 1 cup cherry tomatoes, halved
     - 1/4 cup red onion, finely diced
     - 2 tbsp chopped parsley
     - 2 tbsp lemon juice
     - 1 tbsp olive oil
     - 1 tsp Dijon mustard
     - Salt and pepper to taste
  Instructions:
     1. In a large mixing bowl, combine the Miracle Rice, diced cucumber, cherry tomatoes, red onion, and chopped parsley.
     2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper to make the dressing.
     3. Pour the dressing over the salad and toss until everything is well coated.
     4. Serve chilled or at room temperature.
