This might sound stupid but I’m struggling coming with occupations that aren’t your usual doctor:nurse/firefighter/cop (yuck on the last) and could do some help <3
It's not stupid, anon! When I'm stuck for ideas I always ask my friends for inspiration. In regards to your Galahd World-building: how would having multiple jobs work, if that’s even a thing for the galakhari? Like could a weapon smith also be a seamstress? What about things like Storytelling and Hunting, are those mutually exclusive, or can someone do that but also be a craftsman or an apothecary or a fisherman of some kind?

That's a good question.
Galahkari have only one job (aka the thing they earn most of their money with/use to trade). But, as all people do, they have hobbies. So you could be a weapon smith and do fibre crafts as a hobby. Maybe that person will end up selling a few home made blankets because at some point they'll drown in them.
So not multiple jobs, but many Galahkari have hobbies that sometimes earns them a bit of money on the side.
Like, the Colophon are farmers, but some of them like to make alcohol. If they make enough, they sell it. If not, then they don't.
Hunting is a bit of a special case. Most Galahakri learn how to do it, so yes, someone can be an apothecary and go hunting for their own meat no problem. But mostly that's to feed them and their family/Clan and not to sell meat on a big scale.
Storytelling is also a fulltime job. They not only learn all the stories by heart and retell them for the people to hear, the people also come to them for advice. (Basically they're the wise people of the village) But even Storytellers need hobbies. So they can also make some jewellery for fun, or dye yarn, or make furniture or what have you.

Students occupy schools and universities across Europe in climate protest
“In Germany, universities were occupied in Wolfenbüttel, Magdeburg, Münster, Bielefeld, Regensburg, Bremen and Berlin. In Spain, students in occupation at the Autonomous University of Barcelona organised teach-outs on the climate crisis. In Belgium, 40 students occupied the University of Ghent. In the Czech Republic, about 100 students camped outside the ministry of trade and industry. In the UK occupations were under way at the universities of Leeds, Exeter and Falmouth.
“The most radical actions were taking place in Lisbon, Portugal, where youngsters occupied seven schools and two universities. On Thursday, occupying pupils forced one high school to remain closed for a third day, while students at the University of Lisbon’s faculty of humanities barricaded themselves in the dean’s office.
“Young people also stopped traffic in the Portuguese capital with street blockades in solidarity with the occupations. The radical action comes despite harsh responses from teachers at one school who called police to evict pupils who began occupations last week ...
“A statement by the campaign read: ‘End Fossil: Occupy! is radicalising the youth climate movement in tactics and demands. Occupations instead of strikes. End the fossil economy instead of listen to the science. End Fossil: Occupy! is reigniting the fire of the youth climate movement last seen in 2019.’”

You wouldn't happen to know how to fast track a character into becoming a doctor/surgeon in a fantasy world? She get's apprenticed to someone when she is 8 or 9. I don't want it take 7 years or that would miss up the timeline I've kind of drafted already.
The cool thing about writing a fantasy word is that you can do literally anything you want. Seven years may be a historical number, but it's not a number that you need to feel in any way tied to.
I would assume they would start by being an assistant and then move on to doing it supervised by whoever they're apprenticing to, and then move on to probably doing simple things on their own, and then finally move on to doing more complex procedures on their own.
I would consider that 1) below a certain age, they're unlikely to have either the manual dexterity or the physical strength to do some things that are required for them, 2) depending on the level of bureucracy in this world there would likely be some sort of test or certification required to be a doctor, and 3) unless it's very common to have quick apprenticeships that start that young, a lot of people would be pretty reluctant to have a literal child perform surgery on them.
All that said, again, it's a fantasy world you're creating. You can do whatever you want with it.
