Your canning pantry is looking amazing! If you don't mind me asking, how did you learn to can? I'm terrified of accidentally poisoning myself, but really want to learn!
Thanks! I think I cobbled together a lot of my understanding from internet forums back in the day (ie before everything like that moved to fb), but what you should really do to start out is go straight to the source: either get yourself a Ball Blue Book (here's the 2020 edition, but any from the past couple decades will do) or, my preference, use the National Center for Home Food Preservation website. It is also possible to buy a printed copy of the USDA's Complete Guide to Home Canning here, if you'd like a physical book from the same guidelines as made the NCHFP website.
All of those will give you step by step instructions for thoroughly lab tested methods that will absolutely not poison you if you follow the directions. There's a ton of extra safety, above & beyond minimum requirements, built into their methods.
You could also contact your local Cooperative Extension Service, if such a thing exists where you live, and see if they offer classes in home food preservation. It'll be free or low-cost. Even if they don't, they'll likely know about it if anyone else is running that sort of class.
This stuff can be intimidating! There's science, & stories of people poisoning their grandma, & a lot of steps. I used to teach pickle & jam classes back in Chicago, not because they're actually that complicated to make & can, but because a lot of people just feel better learning from a person. But you really can teach yourself online - just stick with official sources to start, and don't listen to "Betty Sue's Rebel Canner Group" or w/e until you really know what you're doing, and can tell bending the rules apart from throwing them out entirely.
Start with high acid foods & water bath canning. Easier learning curve than pressure canning, plus less specialized equipment & risk of botulism. You can do tomatoes, whole fruits & sauces, jams & jellies, and all manner of pickles in a water bath, which is just submerging properly prepared jars of food in boiling water for a specified length of time. Jam & pickles are easy & fun, and you can make just a little bit to ease into it. Tomatoes are where it's really at, imo, in terms of payoff. We use a lot of them in winter cooking (Italian husband), and there is no way to eat tomatoes in January that taste like August except to can them yourself. Store-bought canned tomatoes do not compare, and if I was going to can only one thing to preserve the summer harvest, tomatoes would be it.
