Spicy Southwest Breakfast Bowl Recipe 
How to make a filling breakfast bowl loaded with vegetables, grains, and protein.
Ingredients:
2 Tablespoons Olive Oil
1/2 Chopped Yellow Onion
1 Celery Stick, Chopped
1/2 Yellow Bell Pepper, Chopped
1/2 Orange Bell Pepper, Chopped
1 Jalapeño, Chopped Small
1 Roma Tomato, Chopped
1/2 Teaspoon Oregano
1/2 Teaspoon Thyme
1 Teaspoon Parsley Flakes
Salt & Pepper to Taste
Dash of Cayenne Pepper
1 Cup Cooked Brown Rice
1 Cup Cooked Black Beans
2 Eggs (optional)
Directions:
In a large frying pan, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally, until almost translucent, about 4 minutes. Add the celery, bell peppers, and jalapeño; cook until tender. Add the tomato, oregano, thyme, parsley, salt, pepper, and cayenne. Stir to combine. Add the brown rice and black beans; cook only until heated through.
Serve warm. Optional: Add 2 cooked eggs on top.

Sausage, onion, peppers (sadly had none for this), eggs, cheese and homefries/hashbrowns. If im feeling fancy I'll add spinach, garlic powder and paprika to it. SO easy and quick.
You can use bacon or ham or no meat at all if you want to.

NOTE TO SELF: Eggs were over hard, artichoke hearts were completely absent, as was any crawfish, and the bechamel was nearly absent. My third meal here and easily the worst. I'll come back, but I hope they fix whatever happened in the kitchen today.
