Chipotle Chicken Queso 1 lbs ground chicken ½ cup shredded cheddar ¼ cup heavy cream 2 oz cream cheese 2 tablespoon fresh salsa 1 tablespoon avocado oil 1 tablespoon chipotle purée ½ diced red bell pepper 3 scallions chopped ¼ tsp paprika ¼ tsp chili powder Salt & pepper to taste. ¼ tsp xanthan gum (optional) tightens sauce. Garnish: (all optional) 1 sliced avocado 1 tablespoon sour cream 1 tablespoon queso fresco (crumbled) 1 tablespoon fresh salsa ½ tsp Sriracha sesame seeds Pinch of fresh parsley 1 tsp sriracha Instructions: Brown chicken, bell pepper and scallions in avocado oil Add salsa, chipotle and seasoning.
