Putting on the highlights are always the most satisfying part of a painting. I explored yellows today for my #stradaeasel lockdown challenge . Due to roughly one in three Americans facing lockdown, as well as people all over the world, I'm enacting the STRADA Easel emergency challenge! Effective immediately, I'm encouraging all creative people to channel your fears and concerns into a painting or drawing from life daily challenge. Subjects can include but are not limited to household items and backyard scenery. Any medium is welcome. No specific rules, prizes or missed days to worry about on this round. The goal is to encourage and help each other learn, grow and connect in a difficult time. Remember to use the hashtag #stradaeasel so we can see each other's posts. I'm so excited! Back in September/October of last year I saved some seeds from a spaghetti squash that I had bought for supper. When I planted a couple of those seeds I didn't think any would grow, but one did!!! As the plant grew I didn't think it would produce any squashes, and I was okay with that I was just excited it was growing so well. But again it did!!! So far I have 2 growing. This beauty right here that I will eventually be able to eat, and another smaller one that hasn't grown in the last couple of weeks and I think is a dud. But hey I have this one when I didn't think I would have any! Spaghetti Squash was the main focus covered in this delicious red Basil sauce with sautéed vegetables and mildly fried mushrooms. This was a spontaneous creation focused on the Squash element which was oven roasted with EVO, salt and black pepper. I added a side of broccoli to get my greens in and for some extra protein. This was like a glass of fine red wine. I followed this up by making strawberry nice cream for the first time and topping that off with dark chocolate as a garnish. Four Cheese Spaghetti Squash INGREDIENTS YOU NEED 1 large spaghetti squash 5 garlic cloves, minced 1/2 cup water 1 chicken bouillon cube, crumbled (a good alternative to salt that gives a fuller body to the filling) 1 cup heavy cream 1 cup of Four-Cheese Italian White Cheese Blend (Mozzarella, White Cheddar, Provolone, Asiago) Fresh thyme Fresh ground pepper (buy whole peppercorns, the flavor is 300% better when you crack them straight from the pepper mill at the last minute) Parsley or chives or green onions, finely chopped DIRECTIONS 1. Preheat your oven to 400°F(200°C). Grab your spaghetti squash firmly and chop off the tip and tail. Cut in half length-wise and scoop out the innards and seeds. Place both halves on a baking sheet, maintained by a small foil ring to ensure stability. Sprinkle fresh cracked pepper over each half. 2. In a large bowl, combine minced garlic, heavy cream with 1/2 cup water, crumbled bouillon cube, chives, and fresh thyme. Mix well. 3. Sprinkle a first layer of grated cheese in the cavities of each squash halves. Divide the cream mixture on top of cheese in each halves, then top with additional cheese. 4. Roast in the oven for 40 to 50 minutes, or until the flesh of the spaghetti squash is very tender when poked with a fork. She ain't pretty but she's delicious! So what the hell is that slop in the red bowl? Spaghetti squash buffalo chicken! Yaassss. I had a fat kid craving and wanted chicken wings but I'm also trying to lean out so what's a girl to do? Call that mistress spaghetti squash. What you need: 2 spaghetti squash 1 rotisserie chicken skin removed Green onion 1 shallot 1 large garlic clove Cheddar cheese Buffalo sauce (about 2/3 of the bottle or to taste) Sour cream As listed before prepare spaghetti squash. I had a super busy day and just got home from the gym had to run to Whole Foods and have dinner ready in an hour for my family so I cheated and used a pre made organic rotisserie chicken. If you're feeling dangerous and want to make your own by all means you go girl or guy. Shred that chicken with your hands, give the skin to your puppies, eat it while you prep, or toss it. In a large pot add olive oil and sauté garlic and shallots, after about two minutes add the shredded chicken and buffalo sauce. Toss in he spaghetti squash until everything is incorporated. Garnish with green onions, shredded cheddar cheese, and sour cream. You're welcome
