Veganism may seem restrictive to some, but really, it’s replacing 3 types of animals with 500+ vegetables, beans, lentils, peas, nuts and seeds. I’m not starving over here. With such a wide variety of plant-based foods, it’s no surprise there’s evidence that a vegan diet lowers BMI and obesity, along with their accompanying diseases like cancer, heart disease, and diabetes. Dinner: Vegan Mac N Cheese (cheese sauce made with cashews) The cheese sauce is 😘! Cheese has been my hardest thing to cut out! But when I don’t eat cheese, my body feels much better. I’ve been eating plant based meals for about 6 weeks. I find that my neck pain has substantially decreased. I’m finally able to turn my neck without pain. Just need to work on neck mobility. Try the cheese sauce if you’re not allergic to nuts: . . 1/ 2 cup cashews 1/2 water 1/2 tsp salt 1/4 turmeric 1/4 garlic powder 1/2 tbsp lemon juice 1 tbsp nutritional yeast The pasta is a grain free one that’s made with cassava flour. 🍆 All things eggplant? Give me a hands up 🖐🏼 if this is a vegetable you struggle with?
I used to shy away from cooking eggplant. It just felt like such an overwhelming vegetable too cook. I wasn't sure what to do with it, how to flavour it and the shape just always felt strange to me. Fast forward to TODAY 🖤 and it is one of my favourite vegetables to cook with because of its versatility. Roast it and make baba ganoush, chop it up and put in a stew, char grill it, marinate with Asian sauces and stir fry - the list is endless…… The dish pictured is our simple teriyaki grilled eggplant stripe. It literally takes all of 10 minutes to pre and cook, its soft and juicy full of flavour and perfect as a side dish.
