Planting Summer Squash

Summer squash (yellow crookneck or zucchini) is a tender vegetable that requires careful timing for planting. Start seeds indoors 4 weeks before planting outside, after the last frost.

It’s the season! Check out Front Porch Pantry at @thesunriseproject Farmers and gardeners share their bounty Last week I picked up the beautiful, fresh, like an hour ago, picked zucchini and summer squash. Some of it went into Vegetarian Creamy Red Pepper Soup that I made by sautéing onion, garlic, and red pepper in vegetable broth. I added a bit of cream cheese to ad so me zippy flavor. I puréed it with the immersion blender and added milk. That went to @inkwell_waterfalls who just had dental surgery. Then I chopped up zucchini, squash and tomatoes and simmer till just soft for @slimzadie and me. Filling, delicious, healthy and simple. The fridge and the pantry at Sunrise is in constant motion. It will be packed and then two hours later, empty. Then it fills up again in just a few hours. If you stop by for non-perishables, frozen meals or ingredients for dinner and you don’t find anything don’t give up. Go back later! It will be a different story!
