Shredded Chicken Without Trying
No need for a fancy mixer. This slow cooker chicken practically shreds itself. A shredded chicken that is easy to put together, adaptable for a variety of dishes, and stays juicy even as leftovers. Make and serve immediately, or make ahead of time to prep for another meal. Just make enough to steal a few bites, it’s hard not to.

Pulled / Shredded Chicken
Sauté the Chicken
You’ll start by drizzling a little olive oil into a sauté pan over medium heat. Add the chicken and sprinkle salt and pepper generously on the top side. Let this cook for 5 minutes (it should be slightly golden), then use tongs to flip the chicken over.
Cover and Poach
Once the chicken is flipped over, add 3/4 cup of chicken broth to the pan and cover with a lid. This will keep the chicken moist while cooking it fast. Cook the chicken for another 7-10 minutes. Chicken thighs will require a little more time than chicken breasts.
Shred
Stand Mixer: If you have a stand mixer, this is by far the fastest and easiest way to shred chicken. Place all of your chicken breasts in the bowl of stand mixer. Add the paddle attachment and make sure to lock the tilt head (if you have one) to prevent it from bouncing up. Turn your stand mixer on low and in 15 seconds you’ll have shredded chicken.

Homemade pulled chicken tacos. I think you could say “inspired” by chicken tinga, but it’s not really that, I just throw a lot of stuff I like into a slow cooker and this comes out. It includes a lot of ingredients you’d find in tinga, but with various other additions. I like to pan fry cheese to one side of my soft corn tortillas because… fried cheese. Need I say more? Anyways, I think they’re tasty.

Healthy BBQ Pulled Chicken
Ingredients:
* 3 pounds of boneless chicken breast
* 1 medium onion; diced
* 1 (6oz) can tomato paste
* 1 (8oz) crushed pineapple
* 1/4 cup apple cider vinegar
* 1 teaspoon liquid smoke
* 2 teaspoons paprika
* 1 1/2 teaspoon chili powder
* 1 1/2 teaspoon garlic powder
* 1/2 teaspoon cumin
* 1/2 teaspoon salt
* 1/2 teaspoon onion powder
* dash cayenne pepper
1. Mix tomato paste, pineapple, apple cider vinegar, liquid smoke, paprika, chili powder, garlic powder, cumin, salt, onion powder and cayenne together to create a sauce
2. Add chicken, onion and mixture to slow cooker and mix all together.
3. Set on high for 3 to 4 hours when chicken starts falling apart.
4. Shred chicken and let sit on mixture for a minute.
