These nachos are loaded with protein-rich seasoned lentils, beans, chickpeas and topped with two mouth-watering Indian chutneys!

We all love Nachos! But Nachos with super yummy toppings and dips and chutneys is what we’re dealing with here now. These Loaded Nachos make a wonderful Snack and appetizer. The chutneys enhance the flavour a lot and adds a tang & juiciness to the dish. The chutneys I made are two very staple North-Indian chutneys. The first one that is the tamarind and jaggery chutney easy sweet and sour chutney with a tiny amount of spiciness. The other one that is the coriander and mint chutney is more on the sour side with a refreshing feel to it.You can make these chutneys in advance and store them in your fridge and they will live happily in there for a month!

So much more time for cooking

I’m halfway through my week off - and in normal circumstances, I don’t know why, it’s always a revelation that when you stop working and stop still for a while, you realise how much you needed the break. I didn’t expect that to happen during lockdown, I expected to be twiddling my thumbs and getting bored quickly - but not so. I’ve actually relished the long hour I take for breakfast, the daily ritual of going for a run, tidying or sorting, and of course, the time for cooking.

Yesterday I made one portion of sweet potato soup with garlic and a crunchy chorizo topping just because it’s what I fancied and I had the time. Today I craved cheese so I fried off some halloumi bites in dried oregano.

Tonight’s dinner took about an hour, which is not usually something I have the patience for, especially midweek - nor the energy for at the weekend. But I had local butchers’ cumberlands I’d frozen a couple of weeks ago and I bought a leek with the intention of doing something with the sausages. And our garden herbs are thriving in this warm weather and constant attention - they were calling to be picked.

Well, it was all worth the process. And it was super tasty so here’s the recipe...

Toad in the hole with leeks - serves 2

- mix 100g plain flour with a tsp of mustard powder and a pinch of salt, make a well and crack in two eggs, gradually whisk with 200ml of milk to form a smooth batter. Add chopped tarragon and set aside

- slice the leek and sauté in a knob of butter and a splash of oil until soft, and set aside

- place sausages (I had two pretty enormous ones) in a baking dish with a tbsp of oil and cook on 180 (fan) for 15 minutes

- add the leeks to the sausages (careful of the hot oil) arranging evenly, and top with the batter. Bake for another 40 minutes until golden and cooked through

- for the gravy I mixed two tsps of gravy granules with 200ml of boiling water, heating it through on the hob with a knob of butter and sprigs of fresh thyme
