Basil and Garlic Cream

This fragrant and herb-y Basil and Garlic Cream makes an excellent sauce for pasta, cooked al dente, just drained and folded into it, for a lunch that literally tastes like Spring. It can also be the base of salads or gratins, depending on the season's changing weather!
Ingredients (makes about 1/3 cup):
a small garlic clove
a dozen large leaves Garden Basil 
a pinch of salt and freshly cracked black pepper
1/2 tablespoon olive oil
1/3 cup crème fraîche or sour cream
Peel and halve garlic clove. Add to a mortar, and grind into a pulp with a pestle.
Tear Basil leaves into the mortar, and thoroughly grind them with the garlic into a paste. Season with salt and black pepper.
Gradually stir in olive oil, until mixture emulsifies. Then, stir in crème fraîche until well-blended.
Fold Basil and Garlic Cream into al dente pasta, or use as a base for a salad dressing or in gratins, loaves or quiches...

Do you like Tim Hortons' breakfast wraps? Of course you don't, they're fucking disgusting and the egg is ALWAYS grey. But do you like the sauce they use in the wraps? …even if you don't, I made a copycat that is even better (in my humble opinion). Simple but tangy and easily adjustable if you want a little more kick in your breakfast wrap/sandwich sauce.

(the harsh kitchen lighting will never do it justice just trust me)
All it takes is:
1/2 cup mayonnaise for the base
1 tbsp ketchup
1 tbsp (or more!!) of red curry paste (hot sauce might work as well)
1 tbsp paprika (feel free to go ham tho)
1 tsp garam masala
1 tbsp onion powder
a squirt of lemon juice
salt to taste
And that's it! These are all estimates rather than exact measurements of course, and you're gonna wanna taste test this a lot while making it. It fucking rules on simple egg and bacon breakfast wraps.

Makhani Murgh Butter Chicken The best way to describe this dish from an Indian restaurant is chicken in a hot tomato cream sauce. 2 teaspoons ginger paste, 1 piece cinnamon stick, 1 can crushed tomatoes, 3 serrano peppers, 2 teaspoons garlic paste, 1.5 teaspoons paprika, 1.25 cups water, 1 tablespoon butter softened, 1.5 teaspoons dried fenugreek leaves, 2 tablespoons vegetable oil, 1/2 cup cream, 8 green cardamom pods, 10 whole black peppercorns, 2 skinless boneless chicken breast halves cubed, 1/2 teaspoon salt, 10 cloves lightly pounded

White Wine Garlic Butter Pan Sauce
SERVINGS:  4
 PREP TIME: 5 Mins
 COOK TIME: 10 Mins
 TOTAL TIME: 15 Min
This sauce is great with pan seared chicken, scallops, white fish, salmon and pork chops!
Ingredients:
1 tbsp butter plus 3 for later
1 large shallot, minced
salt to taste
4 cloves of garlic, minced
1 cup dry white wine, I used a sauvignon blanc
1 cup chicken stock
minced parsley or chives for garnish
Preparation: STEP 1.
In the same pan that you cooked your protein, over medium heat, add 1 tbsp of butter and your minced shallots. Salt all over and cook until translucent, around 2-3 minutes. Add the garlic and saute another 1 minute.
STEP 2.
Add the white wine to deglaze, scraping up any of the brown bits with a wooden spoon. Bring to a low simmer and reduce until the sauce is almost dry and the wine is very thickened, around 3-5 minutes.
STEP 3.
Add the chicken stock and bring to a simmer, reduce until nappe (can coat the back of a spoon and not move). This should take around 3-5 minutes. Taste for seasoning and add salt if necessary.
STEP 4.
Add the remaining 3 tbsp of butter and stir in a spoon or whisk. This should emulsify and mix together and thicken. Once it is melted in and combined, and thick and creamy, add the protein back to the pan and top with parsley.
STEP 5.
Serve immediately and enjoy!
How to make a white wine garlic butter pan sauce! Perfect for a fast weeknight sauce to go with chicken, pork or fish!
Troubleshooting – since this is an emulsion sauce it can “break” aka the butter may not properly combine and it looks separated and not creamy. This could be for a few reasons, one you may have not reduced the sauce enough before adding the butter, it has to be thick. Two you may have over reduced the sauce to where it is almost dry and too thick. Three, you reduced it too much while. the butter was already in there. A fix for this would be adding a splash of water and whisking in, water does wonders for fixing a broken sauce.

Chives and Chervil Cream

This fresh and fragrant Chives and Chervil Cream is so versatile it will accommodate fish, pasta and potatoes alike! Happy Monday!
Ingredients (makes about 3/4 cup):
3/4 crème fraîche or sour cream
a small bunch Garden Chives 
a small bunch Garden Chervil 
12 teaspoon freshly cracked black pepper
Spoon crème fraîche into a small bowl.
Finely chop fresh Chives and Chervil. Add chopped herbs to the crème fraîche, along with black pepper. Give a good stir to combine.
Spoon into serving bowl, and chill in the fridge, a couple of hours, to allow herbs to infuse the cream.
Serve Chives and Chervil Cream with poached fish, such as salmon or trout, dollop onto boiled or baked potatoes, or use as a base in salad dressings or pasta sauce...

Vegan/Vegetarian homemade tomato sauce:
This is a basic red sauce that’s absolutely delicious and it’s a lot simpler then you may think;
Start by heating some olive oil in pan over medium heat, throw in some chopped white onions and garlic, cook until fragrant. Add in some diced tomatoes and cook down for about 5-10 minutes, Add in 1 cup of tomato paste OR 1 cup jar sauce and let it come to a bubble, now’s the time to add in fresh basil leaves if you have them on hand, Reserve a half cup or a cup of pasta water, half cup if you used jar sauce, a cup if you used tomato paste. After you’ve drained your pasta add in 1 tablespoon of vegan butter if you used tomato paste, add in 1/2 tablespoon of vegan butter if you used jar sauce. Stir in the butter and let bubble, drop the heat to low so it doesn’t burn and add in 1/2 teaspoon of paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, optional 1/2 teaspoon crushed red pepper flakes. And black pepper and sea salt to taste. Toss the sauce with your pasta and enjoy
