Homemade Mayonnaise 🖤

Mayo is my favorite condiment! No shame here!! When I first figured out I had a soy allergy I was very, very disappointed to find that pretty much every mayonnaise at the store used soybean oil. Yes, even hellman's, even 'olive oil' mayo, even organic mayo!!! I was shocked. If you don't believe me, go look for yourself. I also run into the issue of food starch, which is usually corn or potato starch which makes it a no go for me as well. So, I'm standing in awe, at the grocery thinking 'what the hell? Mayo is just eggs and oil!?!? Why all the bullshit?'.. because shelf life, and cheaper ingredients. I thought 'well shit, I can make mayo at home!!' I originally made my first couple of batches of mayo in a regular blender. Texture was great but it was SO finicky and tedious of a process. Cue the immersion blender (thanks to my honey for buying me one 😘)! Now it's simple as can be. I make the mayo in the same jar I store it in. Minimal dishes, minimal steps. Now in the picture, I did transfer mayo from the quart jar I made it in, to a pint jar to make it look prettier in pictures! Lol!

All you'll need for this recipe is:

A nice quality immersion blender.

A WIDE MOUTH quart jar.

A handled measuring cup.

•2 eggs (room temperature)

•2 tbsp white vinegar

•1/4 tsp salt

•1/2 tsp ground mustard

•1 and 1/2 Cup oil. EVOO is super bitter tasting when using it for mayo so I use a light tasting olive oil I can get at Walmart and it tastes perfect. You can use canola or any other oil you prefer but with my allergies and inflammatory issues Olive oil is my preference.

To start, make sure your wide mouth quart jar is nice and clean and dry. Add your whole eggs (some recipes call for just yolks but I prefer to use the whole egg so nothing goes to waste.), vinegar, salt and mustard. Insert your blender. It should stand up right just fine in your jar, this is also why you have to use a wide mouth, as the blender won't fit in a regular mouth jar. Give it a couple pulses to blend your egg and vinegar mix. Go ahead and measure out your oil in a handled measuring cup so you can very slowly add in your oil while blending constantly. It may seem a little liquidy at first, just remember to add oil very, very slowly and to keep blending. It will eventually and suddenly thicken up to that nice mayo consistency. Once all your oil is blended you'll be done. As with all my recipes I encourage you to follow your instincts. I've added garlic, herbs, pepper, lemon, hot peppers, all kinds of things to my mayo to give it it's own twist. I'm particularly fond of making home made salad dressings and aioli's with this recipe.

I just confirmed that i have a soy allergy. Loved this delicious gluten free, Vegan 🌱 pizza 🍕 from #SageBistro. It’s eggplant, artichoke, pesto and cashew cheese. But the cashew cheese is made with a soy base. Right after I ate it, I got all stuffy, the same way I do after eating Chinese food or sushi with soy sauce. I always wondered if it was the gluten, but I can eat bread and pasta all day with no prob. So it has to be the soy. We found out today that #BabyJaze may have a #milk or #soy #allergy. We tried giving her #bonna #infantformula to see if she will be okay with it since I will be going back to work in a week and we want to have something for back up just in case I have no breastmilk in stock and I'm away or if I'm lacking sleep but she needs to feed. Well, after a few minutes of feeding her formula, she was irritable and her skin became red with tiny white spots that looked liked milia. We went to the hospital right away and they injected her with an #antihistamine called #diphenhydramine. 💉The allergy symptoms cleared up in a few minutes. Whew! Thank you Lord 🙏 She's okay now. Here's A) what it originally looked like just when they injected diphenhydramine then B) 10 minutes after and C) 30 minutes after. Jaze's pedia recommeded the hypoallergenic NAN OPTIPRO HW if we opt to feed her formula but for now we'll stick to breastmilk just to be safe. #soyallergy #milkallergy

Today the UN @unitednations is observing the International Day of Persons with Disabilities, bringing light to the importance of disability inclusion that is so needed throughout the world. Despite being protected under the American Disabilities Act (ADA) with food allergies, it took me many years to admit that I have a disability. The concept of being a “victim” with a disability was unappealing. However, my beliefs about disabilities have completely shifted. I now realize that having a disability is nothing to be ashamed of and is actually a means for many congratulatory moments upon thinking about how much I overcome on a daily basis (e.g. “I ate lunch today without having an allergic reaction – hooray!”). What has been one of my greatest challenges in life has turned out to be an opportunity for growth, connection and purpose. In the work that I do, I fight for inclusion by both empowering people with food allergies to confidently and *safely* include themselves into social settings where they can AND by speaking with non-allergic communities about how they can *safely* include people with food allergies. I believe inclusion is a two-ended street, with both parties trying to meet in the middle. With disability inclusion also comes empathy, and just imagine how many more strides our world could make if we all took the time to be even more empathetic towards one another.
