The First Avenger info dump because I can
Enlistment/Dog Tags/Awards:
It is canon that Bucky Barnes enlisted on his own right after Pearl Harbor (and Steve tried). This would make his dog tags a type two. His service number would start with a 1 (enlisted army soldier) and a 2 (from New York). This site can be used to generate dog tag numbers (I haven’t tried all the functions, but be aware the O for officers is a 0 starting in 1942). 
During WW2 (amongst other times), there was the Regular Army and the Army of the United States (which no longer exists). Voluntary enlisted men were in the Regular, with draftees in the other (officers were often part of both and had two separate ranks). If you choose to divert from canon and make Bucky a draftee (I personally have always liked this fanon because I’m evil), his service number would start with 32 (drafted, New York). This would also better explain why Bucky rises to the rank of Sergeant so quickly as promotions happened constantly in the AUS ( Dwight D. Eisenhower rose from a colonel to five-star general in three years). 
Steve would have a different type of dog tags than Bucky (including a different chain). He would have a type three (as would anyone between July 20, 1943 and March 31, 1944). I will illustrate the differences below with the custom tags I made for Steve's sister and Bucky in my fanfic (feel free to use the info from them). The N and 7 in her tag are for nurse.
The T42 you’ll see below is the year tetanus shots were recieved. I’ve seen some with two years and some with one. The B is blood type and the P is religion. 
Steve received an award for rescuing the POWs. Seeing as this wasn’t presented by the president, I’ve decided it was the Distinguished Service Cross. This award comes with a $2 pay raise; as a Captain, Steve previously made $200 a month, paid monthly (post-serum). Bucky made $78 as a Sergeant, with a $3.90 pay raise after 3 years of service (December 1944). Steve also obtained SSR pins after joining them (and I believe the Howling Commandos should have as well). (Even though nurses had the rank of an officer, they didn’t get equal pay until after WW2. They earned $70 a month for the first 3 years.)
Many soldiers put their second dog tag in their boot, usually slipped on the shoe laces in between the tongue and top of the shoe.
Not a fact, but I will add a link here to a website where you can either buy Bucky/Steve’s dogtags or make custom ones for $10 (personally, I would advocate for the custom as Bucky’s say he’s not from NY and show he is a draftee. Also, he has type B blood, not O. And Steve is Protestant, not Catholic. The site also states officer’s service numbers didn’t start with 9, but those with special duties did. His service number would most like be between 800000 and 999999, starting with a 0- to show he’s an officer).

Italian Front:
Seeing as the 107th were venturing to England in June 1943, they most likely headed straight to Sicily from there (or diverged if they had fuel) to aid in the invasion, continuing into the invasion of the mainland before pushing troops back toward Austria. Italy surrendered at the very beginning of the invasion of the mainland, so the Allies only fought Nazis and Italian soldiers loyal to Mussolini (National Republican Army), who was arrested during the invasion of Sicily and broken out during the mainland invasion. Seeing as Chester Phillips and Peggy were with Steve, they must have joined the 107th later. In my canon, they (and Howard) join at the beginning of the mainland invasion. 
AM-lira (Allied-Military Currency), 100 "am-lire" for a U.S. dollar, was the currency specifically put into circulation for Allied Military after the landing in Sicily. It was used interchangeably with their normal currency. Once the Howling Commandoes join the SSR, they use British currency. 
The 107th’s camp pre-Battle of Azzano was most likely behind the  Volturno Line. Azzano is part of Umbria, which was about 170 miles into enemy territory. 
Post-Azzano, the camp was most likely behind the Barbara Line. Walking approx 533 miles from Kreuzberg, Austria, with troops alternating resting periods in the trucks, walking approximately 42 miles for 12 hours a day, they would reach camp in thirteen days.
Random:
Steve’s canon address according to Avengers is 1404 Alameda Ave. Brooklyn, NY 11362. This is a Queens zip code. I changed it to 11237.
As a Sergeant, Bucky would command a squad of 12 soldiers (privates), split into 3 fireteams. He was also assigned a PFC (one of the scout riflemen) as an assistant; this soldier could serve as either the squad leader's messenger to the platoon commander or could be used to relay orders to other squad teams, as needed. Sergeants are responsible for the individual training, personal appearance and cleanliness of their soldiers, and are expected to set a standard for lower-ranked soldiers to live up to.
Women did have their own army sect for part of the war (Women’s Army Corps) but they didn’t go overseas as they didn’t legally get benefits overseas {I didn’t read a lot on this, take this with a grain of salt}. They did all the non-fighting jobs like listening to radio transmissions and fixing weapons. 
On the ship, there were three-tier bunks. Enlisted men got footlockers under their beds (you could lift up the base), while officers got standing lockers. I would assume water on ships was cold, filtered from the ocean, and they had showers.
Showers were available but not popular at this time, just like hot water heaters. Many people still boiled water to take baths. People also didn’t bathe as often and there was only one kind of shampoo and no conditioner. Women made their own concoctions, used soap, or straight up would do egg masks. Hair was kept clean by doing the “100 strokes” with a hairbrush that was cleaned after every use. Indoor heating also wasn’t used everywhere, leaving many places still using things like fireplaces and wood stoves.
Soldiers used latrines in WW2. They also used a bucket of water and a bar of soap to wash. When water was unavailable and snow was, it was melted and used. They could also simply use things like rivers and lakes if available but if unnecessary, weren't used as lice was prevalent along with disease. Clothes weren't washed often (depending on the situation, some men went weeks without washing their uniform, only changing into dry socks when necessary) but when they were, they were boiled in big pots of water in mass and hung on a line to dry (there were also other ways, but I preferred this one). They carried an extra shirt, socks and laces, water canteen, ammunition, a spade, grenades, a gas mask, food rations, a cup, a wash kit (toothpaste, razor, comb, etc), first aid pouch, and a helmet (usually on their head) in their haversack's/on their belt (and rations, of couse). There was also a tent pack, but most soldiers would simply carry a raincoat. Lots of candles and oil lanterns to light the night. Canvas water bags – also known as Lister bags – were hung around camps and used for dispensing drinking water in which a dose of chlorine was added for purification.
Medical:
Morbidity from such diseases as tuberculosis (anti-tuberculosis agents didn’t begin to appear until 1949), rheumatic fever, typhus, dysentery, and malaria were high. There were tuberculosis quarantine wards separate from the other patients and were eventually evacuated. Frostbite was also common during the cold. Hepatitis A and B were also prevalent. Trench foot was also common, sometimes leading to jungle rot (often referred to as 'the creeping cruds'). PTSD was known then as 'battle fatigue'; men showcasing symptoms were often just given rest and food near the front lines and would normally rejoin the fight in a few days or were evacuated if necessary. All soldiers were vaccinated against tetanus, typhoid, smallpox, cholera, and yellow fever before shipping out. Dental hygiene was extremely important and many field hospitals were equipped with dental prosthetics. 
Food:
A-Rations referred to fresh/refrigerated meats, bread, and vegetables, prepared in mess halls. These meals were basically the same as C-rations, but fresh and always warm.
C-Rations consisted of one M-unit (12 oz can, meat), one B-unit (12 oz can, bread/dessert), and an accessory pack. Each daily ration consisted of three M-units, three B-units, and three accessory packs (one for each meal). The cans were made of tinplate. The cans had a gold lacquer finish. C-rations can be eaten cold or hot and were cooked with a Coleman's pocket stove (which was made specifically for WW2 soldiers).
M-units initially had three kinds: meat and beans, meat and potato hash, and meat and vegetable stew. In 1943, meat and spaghetti in tomato sauce was added; along with meat and noodles, pork and rice, frankfurters and beans, and chicken & vegetables in 1944. 1944 also brought a chopped ham, egg, & potato unit and compressed cereal B-units to replace meat & vegetable hash.
B-units contained crackers, three sugar tablets, loose candy (Brach's chocolate caramels, candy-coated peanuts/raisins, Charms hard candy), and a packet/small can of beverage mix (instant coffee, powdered lemon drink, or bouillon soup powder). Orange drink powder was added in 1944. Due to spoilage, the loose candy was replaced in 1944 with a Brach's fudge disk or a Jim dandy.
Accessory packs (brown butcher paper) contained sugar tablets, water purification tablets, a flat wooden spoon, a piece of candy-coated chewing gum, three 3-packs or one 9-pack of cigarettes, a book of 20 moisture resistant matches, a paper-wrapped P-38 can opener (with instructions that everyone immediately throws out), and about 22.5 sheets of toilet paper. Cigarette brands included Camel, Chelsea, Chesterfield, Craven A-Brand, Lucky Strike, Old Gold, Philip Morris, Player's, Raleigh, and Wings (these were traded constantly). Can openers were meant to be disposable but soldiers wore them on their dog tags for later use either with opening cans or other things (clean muddy boots, screw screws, open letters, strip wires, trim loose thread, and sharpen pencils). 
Seriously. They really gave every single soldier three can openers a day. With printed instructions. During metal rationing. Of which soldiers just put them on thier dog tag chains for later use. Where did all these excess can openers go? And why half a sheet of toilet paper? 
Clothes:
The nurses wore an olive drab service jacket and skirt (they are seen in pants as well) and cap, khaki shirt and tie, and brown shoes (wore nursing shoes or boots). The rank insignia (a single gold bar for second lieutenants, the vast majority of nurses) was worn on the epaulets. A gold "U.S." pin was worn on each collar, and a gold caduceus with a red N was worn on each lapel. Whenever the service jacket wasn't worn, the rank insignia was pinned to the right collar, the caduceus on the left.
Soldier’s field uniforms looked like this (with some adjustments based on gun used). And yes, the leggings are neccessary, they helped keep feet dry:

When planted together, the Three Sisters, work together to help one another thrive and survive. Utilizing the corn, beans, and squash together in your garden draws upon centuries of Native American agricultural traditions and expertise. This post covers the benefits of three sisters planting and provides tips for when to plant, varieties that work well in planting together, and suggested layouts for your garden.

Who are the three sisters?
The crops of corn, beans, and squash are known as the Three Sisters. For centuries these three crops have been the center of Native American agriculture and culinary traditions. It is for good reason as these three crops complement each other in the garden as well as nutritionally.
Corn provides tall stalks for the beans to climb so that they are not out-competed by sprawling squash vines. Beans provide nitrogen to fertilize the soil while also stabilizing the tall corn during heavy winds. Beans are nitrogen-fixers meaning they host rhizobia on their roots that can take nitrogen, a much needed plant nutrient, from the air and convert it into forms that can be absorbed by plant roots. The large leaves of squash plants shade the ground which helps retain soil moisture and prevent weeds.

These three crops are also at the center of culinary traditions and complement one another as well. A diet of corn, beans, and squash is complete and balanced. Corn provides carbohydrates and the dried beans are rich in protein and have amino acids absent from corn. Squash provides different vitamins and minerals than corn and beans. These three crops are also important because they can all be dried and used for food year round. These traits are less important today, but were important in the past which lead to their significance as the major cultivated foods.
The tradition of calling these crops the “Three Sisters” originated with the Haudenosaunee, pronounced Ho-deh-no-shaw-nee. Also known as the Iroquois, Haudenosaunee occupy the regions around the Great Lake in the Northeastern United States and Canada. All three types of seeds are planted together in the same mound in the Haudenasaunee planting method. The elevated mound assists with drainage and avoids water logging of the plant roots which is important in this region that receives abundant rainfall in the summer.
In the Southwest, there are traditions of planting the Sisters together as well as in separate fields. In dry farmed areas like Hopi and portions of the Navajo Nation, the Sisters are planted in separate areas of fields with wide plant spacing to maximize limited water. In areas with adequate water the Sisters can be planted together in close proximity to get the companion planting benefits in the same cycle. Regardless of how they are planted, these three crops are some of the most important for Native American peoples of the Southwest in addition to other crops like tobacco, sunflowers, amaranth, and melons.

When and How to Plant
These crops are warm season plants and do not tolerate frost. Plant seeds for the Three Sisters outside with the spring, summer, or monsoon planting periods. Check with your local planting calendar to determine the best time for your area. One major concern for the Southern Southwest is the hot, dry heat of the early summer. Corn in particular does not tolerate high heat and low humidity during the period of tasseling. Therefore, plant before April 15 to ensure that the pollen released during the corn’s tasseling period (30-70 days after planting depending upon variety) will occur before June/early July when it will be more likely to be sterile or infertile. Alternatively plant in mid-late July with the summer monsoon season and the corn will reach maturity when the temperatures drop a little and humidity rises.
We recommend directly planting all of these types of seeds as they will fare better than transplants. Direct planting of seeds leads to stronger root systems that are more adequately able to take up water and nutrients, resulting in more vigorous and healthy plants.
Planting the Three Sisters in the order of corn, beans, and squash will ensure that they will grow and mature together and will not grow at the expense of another Sister. Sister Corn should be planted first so that it can grow tall above the other crops. Plant seeds for Sister Bean 2-3 weeks later, or at least when the corn is a few inches tall. When the beans are sending out tendrils to climb the corn will be tall enough to support them. Plant Sister Squash seeds 1 week later after the beans have emerged. You don’t want the large squash leaves to shade out young corn and bean seedlings before they have time to establish.
There are numerous configurations to Three Sisters Gardens. The main consideration is your space constraints. You will want to give individual plants enough space to thrive and have enough of each type of crop to facilitate pollination. Beans are self-pollinating so even only 1 plant will produce beans. They do get crowded growing up corn plants so expect slightly lower yields than if you grew them in their own plot. Squash require insects to pollinate the flowers so having several plants growing at the same time helps attract sufficient pollinators. Corn is wind-pollinated and while capable of self-pollinating you will have more success with more plants. It is best to have at least 10-20 corn plants to provide sufficient pollen availability but plant more if you have the space to increase your success.

What Varieties to Plant
The corn should be a tall variety so the bean plants have plenty of room to climb and do not overcrowd the corn. Many Southwestern varieties of corn, such as Tohono O’odham 60-day and Hopi Sweet, are shorter plants that mature quickly. This is a beneficial trait selected to use less water, but not ideal for beans to climb. The bean variety should not be a bush bean but rather a climbing type also called pole beans. Non-vigorous climbers and bushy-pole types are best so that they do not take over the corn plants. Lima, runner, and common bean types do best. Teparies are not recommended for this type of planting. Corn and squash need more water than varieties of tepary beans so they do not grow well together. Traditional winter squash varieties can grow vines up to 15 feet long and therefore need adequate space to sprawl. Consider growing more compact summer squash varieties if you do not have much space such as a raised bed garden.
For corn, we recommend varieties like Dia de San Juan, an all purpose dent corn, or Flor del Rio, a tall popcorn that produces 2-4 ears per stalk. For beans, climbers like Tohono O’odham Vayos or Four Corners Gold work well. Recommended squash varieties depends upon your space. If you have a lot of space for the plants to sprawl consider winter squash varieties like Magdalena Big Cheese or Tarahumara Pumpkin. If you are planting in a raised bed or other restricted plot consider summer squash varieties like Dark Star Zucchini or Yellow Crookneck squash.

The Other Sisters
For some cultures, other crops are also important in traditional agriculture. For example, tobacco is equally sacred as Sisters Corn, Beans, and Squash for many indigenous cultures of the Southwest. Sunflowers and amaranth are considered other Sisters. They and offer shade to the other Sisters during the heat of the afternoon, attract pollinators, and provide additional stalks for beans to climb. The edible seeds and amaranth greens contribute to a nutritionally balanced diet. Because they have a similar growing habitat, other cucurbits like watermelon and gourds can be substituted for the squash. The long, sprawling vines will shade the ground in a similar way to squash. Consider growing some of these other crops in place of or in addition to corn, beans, or squash depending upon what you like to eat and enjoy growing.

Star Wars: Street Food on Lothal and Mandalore
Alright, so after seeing a post about street food on Dromund Kaas, I got it into my head to do a head canon post about street food in Sundari (Mandalore’s capital city) and Capital City on Lothal. I’m always wanting to know more about food culture in fictional settings like this, so this gives me a way to flesh out the Star Wars-verse for my own fic writing. These two lists are by no means exhaustive; they’re just ideas that I had.
Sundari:
Since warfare has left it so that Mandalore no longer has any arable farmland and the ecosystem has been completely destroyed, Mandalore has to import all of its food, either from other worlds in Mandalorian space or from outside of Mandalorian space altogether. Some people consider it unpatriotic to use foodstuffs that weren’t grown on a Mandalorian world, but at the same time, there are plenty of people who find it easier to be pragmatic about it.
Fresh meat, dairy, fruits and vegetables are all extremely expensive on Mandalore. Cargo containers for food do have stasis fields to help keep these foods fresh, but they’re still incredibly expensive to haul across the galaxy. Cargo containers with stasis seals tend to be larger and take up more space in the cargo hold of a freighter, and they have to be carefully maintained in order to keep the seals from being compromised. You’re most likely to find fresh meat, dairy, fruits, and vegetables in upscale restaurants and grocery stores, the homes of the elite, and Imperial facilities. These foodstuffs are prohibitively expensive to everyone who isn’t a member of Sundari’s elite; it’s literally less expensive to buy the parts needed to construct a bomb from the black market than it is to buy a dozen meilooruns from the grocery store.
Meat isn’t commonly served in food stalls and dives. When it is, it’s almost invariably been preserved in some way, often jerkied.
Grain is somewhat less expensive than other foods, so a lot of the street foods served involve grain products somehow, often in the form of sweet or savory buns. They can be served plain, or with honey, or with fillings, such as dried fruits or vegetables, or bean paste. Yot and denta beans, jogan fruit and chando peppers are especially popular fillings. Jam made from Mandalorian oranges (though at this point ‘Mandalorian’ is a bit of a misnomer, as the trees, along with every other plant life originally native to the planet, no longer grow on Mandalore; the oranges are imported from nearby Concordia) is another popular filling/topping.
It’s not uncommon to look into the back of a food stall and see a multitude of jars of fruits, vegetables, and sometimes eggs suspended in brightly-colored pickling solutions, syrups, or honey, along with jars of dried beans and (rarely) dry pasta. In fact, the display rack of jars is considered almost as important to the stall’s status as the food prepared itself.
There’s a healthy underground trade in unsanctioned mushrooms and other edible fungi in Sundari, since mushrooms and fungi are among the few edible products that can be grown on Mandalore, albeit under heavily controlled conditions. Psychedelic and non-psychedelic mushrooms are both grown, and both are considered restricted substances by the Empire and the Imperial Supercommandos. Someone from the ISC catching you growing mushrooms in your basement can land you with a stiff fine, or even a prison sentence if the mushrooms happen to be of the psychedelic variety.
Despite the legal risks inherent in growing and consuming mushrooms, they are still popular street fare, especially among those less than enamored of the powers that be. Of the non-psychedelic varieties, three are especially prized: Kalevalan cave fungus (delicate and slightly bitter in taste), little red tree (bright, almost peppery in flavor), and above all, Chandrilan Morel, known for its full, nutty taste. Kalevalan cave fungus is often stir-fried; little red tree is eaten both raw and sautéed; Chandrilan Morel is often either sautéed or used as stuffing for buns and cakes. Oftentimes the non-psychedelic mushrooms are considered even more valuable than the psychedelic variety.
Though they are often eaten whole and raw, psychedelic mushrooms can also be found chopped up and baked into dense grain-based cakes. There is no official name for these cakes, but I believe the most popular colloquial term for them is “Fuck the ISC.”
Tea is the most commonly-consumed caffeinated drink on Mandalore, far outstripping caf and the like. Tea shops are more upscale and associated with the elite, whereas tea stalls and certain dives cater to the lower classes. Tea made from powder is looked down upon; instead, tea is often made with loose leaves or flower petals, and additionally flavored with dried fruit. Tea made from the florets of the Cassius tree is popular but rather expensive. Ithorian rose, Star-mist, and Sun-dew flowers are often used for teas, as are Mandalorian oranges, cloudberries, starberries, and Ithorian jewel-fruit.
It’s semi-common in tea stalls for small, sweet buns to be served floating in tea, occasionally with candied orange rind.
Few people in Sundari outside of the upper class can afford to keep pets, but those that do, if they let their pets roam outside (and sometimes even if they don’t) run the risk of coming home one day to find their pet missing. It’s generally better not to ask what happened to it.
Capital City on Lothal:
According to Wookieepedia, Lothal underwent a severe drought during the Clone Wars, as well as a plague that wiped out a large portion of its livestock. These two things did a number on the population of both tame and wild large herbivores on Lothal, to the point that in the age of the Empire, meat from large herbivores is often extremely expensive, and hunting is heavily restricted.
By order of the Empire, no food stall vendor can do business without a license. That wouldn’t be a problem, except that licenses are expensive and can be otherwise difficult to obtain, especially if you have at any point offended the Empire in any way. This just leads those who can’t get licenses to get clever about it. A popular tactic is to serve food straight out of your kitchen, and invite ‘guests’ in to eat (And pay for what they eat).
Lothrat is sometimes served deep-fried in food stalls, but it’s not the most popular choice, and is consumed largely by the desperate and the destitute (Ezra’s eaten lothrat more than once. He doesn’t care for it.).
Large insects are often served whole, fried or sautéed or steamed. It’s also common to mash the insects into paste and serve them as a topping or as a filling inside of a roti cake.
Scorpions are also consumed; they are typically lightly-fried and served on a stick, their stinger removed before hand.
Since Capital City is located by the seaside, seafood is for a long time an indelible part of Capital City’s street food. Shrimp, mussels and small fish are the most popular (seeing as they are also the least expensive) and can be found steamed; lightly-fried or deep-fried; chopped up and baked into small pies; steamed, then chilled, then served suspended in a thin fruit juice (typically a tart juice); or served in soup.
Speaking of soup, soup’s pretty popular on Lothal. In addition to seafood-based soups, there are sweet soups whose bases are seasonal fruits, and more savory soups whose bases are seasonal vegetables. The seafood- and vegetable-based soups typically include fleshy tubers and beans; the fruit-based soups typically include dumplings. All three are commonly thickened with cream and flour, and fruit soups are sometimes served with a dollop of sour cream.
A popular cold dessert soup often prepared in summer has blue milk as a base and is made with pureed jogan, sliced shuura, and sometimes includes chopped nuts as a garnish. Whether the nuts are included depends on their availability, and the exact type depends on what the vendor can get their hands on.
Shaved ice flavored with fruit syrups is another popular summer treat.
Jogan cakes are another popular treat.
Fruits and vegetables are commonly sold by farmers and food stall vendors alike. These fruits and vegetables are sometimes sold whole and raw, but more often they have been prepared in some way. You can find them sliced and deep-fried in a crisp, slightly sweet batter. Fruits might be coated in caramelized sugar after being deep-fried. They might be chopped and mixed into batter for griddle cakes, or into a patty with ground beans, egg batter, spices, and sometimes shellfish
Deep-fried bean cakes stuffed with shrimp puree are often sold by unlicensed vendors.
After the Empire kicks things into high gear and Lothal becomes the ecologically-ravaged hellhole we see in Season 4, there are some changes. The vast majority of people’s food is the rations served by Imperial facilities. All fruits and vegetables are off the menu.
It’s common for stolen Imperial ration packs to be cut into slices and deep-fried in batter made from whatever someone can get their hands on. The batter doesn’t lend a great deal of flavor to the ration packs, but it does lend a little flavor.
Backroom, unlicensed food shops feature communal bowls of stew with meat of indeterminate origin floating in a thin broth. It is considered unwise to ask exactly what type of meat it is.
The lothcat, which was previously regarded widely as a potential pet and a hunter of pests, becomes viewed more as a viable food source. It becomes more common for lothcats to be killed for their meat, and it’s easier than usual to catch them, because the few wild lothcats in the area that survived the burning of the plains have moved to the city, scavenging people’s trash for food, and have grown weak enough to be killed fairly easily.
Few people have pets anymore, and it’s common for those pets to go missing.
One night, a group of teenagers, destitute and desperate for a meal, decide to try to catch one of the loth-bats that have been driven to Capital City to try to scavenge food. It takes some doing, but they catch and kill one. One of the teens goes to slice the loth-bat’s stomach open, only for several pounds of garbage to come spilling out. One of the teens throws up. Another starts crying. They all agree this was a horrible idea and head to one of the backroom food shops to get a bowl of the terrible, terrifying mystery meat stew.

Fall is in the Air
Fall is in the air here in southwest Virginia. For us, that means the air is much cooler. The leaves are still quite green, but that will be changing soon. Fall in the Appalachian Mountains is the height of the tourist season. What will it be like this year? Who knows? But the leaves don’t care. They will do their thing and it will be beautiful.
Let me take a brief minute and say welcome to all the new listeners and welcome back to the veteran homestead-loving regulars who stop by the FarmCast for every episode. Thank you all so much for your patronage. I appreciate you all so much. This show is for you.
So where have I been and what’s going on at the homestead?
Our Virginia Homestead Life Updates
You might have noticed I haven’t published a FarmCast episode in a couple of weeks. The first time I missed because I simply did not have the time. And last week I was in tremendous pain. I still am in fact. It’s nothing serious but it is painful. Somewhere in my spine about the level of the 2nd, 3rd, or 4th rib I have some arthritic impingement on a nerve. I’m not sure which one but I am sure that it really, really hurts. Pain can really drag you down. It’s exhausting. My ability to think clearly is diminished and so on. This morning I got up determined to go on with my life and so here I am. Let’s talk about what’s happening on the homestead.
Cows
The biggest news I think is that we have added yet another animal to our homestead. She is a beautiful bred heifer named Rosie. We needed another milk cow for the spring and so the search began for a Normande bred heifer. The bad news is that there were none to be found. The good news is we never give up and just moved on to looking for another breed that had A2A2 and good milking genetics. We found Rosie.
Rosie is a Jersey so now we have two of them. I know, I know. We were going to sell Butter at some point so we would end up with only Normandes. So how did we come to add another one that we will also sell in the future? Sometimes you just gotta do what you gotta do. We need milk in the spring. That means we had to get whatever was available. Rosie is adorable and a great addition to our homestead. Who knows, maybe one of you will buy her when we have built up our Normande stock. You will definitely know everything about her life and health if you listen to every episode.
The rest of the girls are doing fine. Violet and Buttercup came into heat yet again. So we know they were still not bred. The best option at this point was to put the bull that we have in with them and see if he can do the job that the AI is not accomplishing. We shall see in a few weeks if he was successful. So far it looks like Cloud, Claire and Butter are all bred but we won’t know for sure until the vet checks them. That will happen next month. We were going to do it this month but now that we have Rosie, we decided to wait a little longer to make sure we can check her as well.
I must say it has been a very frustrating breeding season for us. But that is just another day on the homestead. Challenges abound.
Quail
The last batch of baby quail chicks are doing well. They are in the penthouse now and getting bigger every day. We are going to keep all of the hens and maybe a rooster or two from this batch. Yes fall is in the air and this winter we will be experimenting a little bit more with adding more light to their cages so that they might lay an egg or two throughout the winter. Last winter, once they stopped laying, they didn’t give one single egg until later in March. Then the egg production bounced back to full capacity within a week. With the added hens and a little more light, we might just get a few eggs. We shall see.
Donkeys
I know the donkeys are going to need another manicure soon. That’s always an unpleasant task but needs to be done nonetheless. It’s not so much that it is unpleasant as it is that Scott has to get into very uncomfortable positions for extended periods of time in order to get the job done. But like so many tasks on the homestead, it must be done whether it is comfortable or not. Now that I think about it, that’s not so different than cleaning house. Some of those tasks are much less pleasant than others. Cleaning the bathtub comes to mind.
The donkeys had a good time a couple of weeks ago when a customer brought two of her children along when picking up her beef. I put together a spontaneous homestead tour and the donkeys were central to that. The young lady was the most interested in the animals. She even walked out into the field and braved the various moon pies to get a close up encounter with Virginia, Luna and Wendell. She only got a very brief time to lay hands on the calves before they decided to be elsewhere. But the donkeys – that’s a different story. Donkeys are very, very friendly beasts. They love human attention. Once they got over the strangeness of a person they had never seen before, they were grooving on the affection coming their way.
Sheep and Goats
The sheep and goats are doing well. We got yet another call from a neighbor a week or so ago that one of the goats was out on the road. I think I’ve mentioned that one doe that goes in and out whenever she chooses. So far, she hasn’t gotten herself run over and she’s back with the herd again.
The breeding ram that we have is a bottled-fed lamb from last year. He has four companions that were born this year. All of them are now in the field with the calves. That means I get to see them every day, twice a day when I go out to give the calves their bottles of milk. It’s such a pleasure to see that Lambert grew up to be such a great ram. His dad just keeled over and died last winter. We have no idea why. It happens. But Lambert will pick up the slack beginning in just over a month. Did I mention that fall is in the air? That means sheep breeding is closing in fast.  
Now that I think about it, I’m going to have to decide which ewes get bred and which not. Those chosen for breeding will need to be separated from the rest. Should we do six or eight this year? Last year it was eight, though the plan is for six. Eight worked out pretty well though. We shall see.
Garden
I had a friend come over and pick a whole bunch of tomatoes to take home and make sauce. I gave her everything I had and got some great blueberry jam in exchange. We are both very happy. It is likely that I will not even grow tomatoes next year. I have canned 35 quarts of diced tomatoes and a couple dozen jars of tomato sauce. What will I grow if I don’t grow tomatoes? What will I grow in their place?
Potatoes
The potatoes were apparently planted too late to make a fall crop. I’ll remember that for next year. When it pops up on the calendar, get it done. Don’t wait another four weeks or more before getting them in the ground. Out of about 85 or 90 potato starts, less than 10 have peeked their little leaves above the ground. The cooler days are great for growing good potatoes, but it also means the frost is coming soon. Oh well, there is always next year.
Sunflowers
We harvested all of the sunflowers and they are currently hanging up in the attic over the commercial kitchen and cheesemake rooms. I keep thinking about going up there to see how they are doing. But if I do that, it means that I will then have yet another task on my To-Do list that will need to get done. If I procrastinate, they will still be there and the tasks will still need to be done but I can keep my list shorter for just a little while longer. The illusion of being caught up with all of my tasks is maintained. That’s right. I can fool myself with the best of them.
Peas
The crowder peas are finally slowing down. I will likely plant even more of these gems next year. They are so easy to grow and we love them. It looks like next year the garden may be really heavy on beans and peas. I also plan to grow English peas. Perhaps even two crops of them. Green peas must be started early, before it gets hot. And likewise, this cooler weather is ideal for growing a second crop.
Beans
I’m pleased with the black, red, and white beans that I grew this year. The red and white beans put on bumper crops that are just now getting ready to complete their cycle. The black beans put on one crop and then died back. The other two died back some but then came back strong with a second, somewhat smaller, crop of great beans.
I only had two beds of green beans and could have used many more. This is the one thing that people ask for at the farmer’s market. I’ve heard that there is no money in them at the market but I will grow some extra next year to see why that is so.
Celery
One thing that I have in the garden that I have rarely talked about is the celery. It’s coming along now and I’m getting excited about harvesting some of it. This is another crop that looks like it won’t produce very much income, but I will bring a few to the market anyway. Mostly I just love to share the fruits of my labor. I will have plenty for myself as well. These lovely plants will get chopped up and put in the dehydrator. I’ve already used up everything I had from last year. There was a little mishap just about harvest time last year when the calves got the garden and ate most of the celery. This year, I’m looking forward to building up my stores of dried celery.
Culinary Herbs
This was my first year to grow a significant amount of culinary herbs. It has been a success for the most part. I’ve had lots of extras to sell at market and I certainly have plenty of fresh herbs for cooking and lots of herbs to dry and store for later. This is an area that I want to expand on in the future. However, the next step there is to create a permanent location. So many of them are perennials or annuals and biennials that will reseed themselves. They need a permanent location and, dare I say, an aesthetically pleasing area known as my herb garden. But where? Where is the perfect permanent location? We shall see.
Peppers
The last thing I’m going to talk about is the peppers. I love growing peppers. The problem with peppers is that just a couple of plants can produce so many peppers. I’m thinking of the hot ones right now. What do I do with so many serrano peppers? Anyone got suggestions?
Canning, Drying, Selling at Market
Some of the things I’m doing with all of them so far is canning, drying and selling a few at the market. I’ve canned some of those great banana papers that go so well on sandwiches. And the jalapenos are also great on sandwiches. And what about a mixed pepper with a blend of hot and mild peppers. That one didn’t come out as hot as I would have liked. I’m going to do another batch of those and add more serrano peppers to the recipe. After all, I have a ton of them.
Cayenne
Hanging up in my kitchen are three strings of cayenne peppers, about 2 or 3-feet each. They are gorgeous. I simply threaded a sewing needle and threaded them one after another on the string, put a fancy knot on each end so they won’t slip off and hung them up to dry. One strand is already pretty dry and the other two are well on their way. I don’t know if I will ever use that much cayenne pepper, but they sure make great kitchen decorations. I smile every time I look at them.
Pepper Jam
Another experiment I am doing this year is making pepper jam. I have all the ingredients and I have the task popping up on my calendar for a couple of weeks now. Alas, I haven’t gotten around to completing the task. But soon, very soon, that’s going to happen. I’ll let you know how that turns out.
Final Thoughts

Planning Our Summer Garden

I am so excited to report that I am starting my work in the garden this weekend!  The snow is gone, for the most part, and I have a few remaining raised beds from last year that I can plant first.  We (meaning my husband...) have to build more beds because we moved things around last fall.  We (husband) also have agreed to build us (me) a cold frame, a small coop in the garden area, and a FENCE!!!! I am so excited. It's been a few years of discussion and I am told that it will finally all come together this year.  The small coop was a new "to-do" list addition because I had the (brilliant) idea of closing the coop girls in the garden area in spring and fall to allow them to clean up the beds.  (it also will work to keep them and other wildlife out during the growing season, of course) Without the fencing it's nearly impossible to keep them focused on the garden beds, so fencing and a nesting box area (as well as shade, food and water) is a necessity. And the man with the skills (and tools) agrees. So, with that hurdle gone, the next hurdle was purchasing seeds.  Have you attempted this yet?  My goodness, I hope so.  It's way worse then years past, which I'm not surprised by.  Unfortunately I attempted it a bit late but I found just about everything I needed to add to my seeds that I've saved.

I determined what I will plant/not plant (and quantity) based on garden space and what we eat.
I eat raw greens every day, usually 3 times a day.  So I purchased a LOT of seeds for greens all season and then in the cold frame.  This includes lettuces, salad greens/mesclun mix, spinach, dandelion, arugula, and baby kale.
We've been eating a lot of beets, so I purchased quite a few more beet seeds then we've had in the past.  I'll plant them spring and late summer.
Carrots and onions are great fresh but they also store well in the fall/winter, so we'll do 2 plantings of each of them.
We add kale to soup and stews so I'll plant enough to freeze for fall/winter use.
I am the only one who eats mustard, collards and swiss chard.  I add these to soups and stews, but also sauté as a side dish, and use collards as a burrito-type wrap.  I won't plant too many of these.
We eat and freeze a LOT of bell peppers.  We have a local pick-your-own farm that we can get these from as well, but we always try to grow enough for fresh eating and freezing (we freeze 8 gallon sized bags of sliced peppers to get us through winter).  We aren't always successful at growing that many so Labor Day weekend we can pick them locally if needed.
I typically plant a little bit of corn because we like to pick it fresh.  We typically, however, purchase it from a local farm in a very large quantity.  We eat it fresh and freeze enough to get us through winter and spring.
We absolutely love brussels sprouts, however, they take up a large amount of space so I won't be planting them this year.  Instead we'll purchase them from the farmer's market.
I always plant too many summer squash/zucchini (usually 8 plants, 4 of each), and will likely do so this year as well.  We love it sautéed, baked, grilled, raw in salads and used in baking, so it all works out.  I freeze just a little bit, grated, for baking.
We like fresh cucumbers and quick-pickled cucumbers so I usually plant about 10 plants.  I don't can or ferment pickles because they are too salty and we don't eat them.

I won't have enough room to plant all of the tomatoes that we would need.  We eat them fresh quite frequently and then we plan to can tomato sauce, crushed tomatoes and diced tomatoes as well as freeze oven-roasted tomatoes.  I will also try a couple new salsa recipes for canning this year.  I will plant enough for fresh-eating and oven-roasting and we will pick, from the same farm we pick peppers at, enough for canning.
I have struggled with potatoes on and off.  I'll only plant 6 or 8 this year and we'll purchase the remainder from our farmer's market.
I have only grown sweet potatoes once before.  They were easy, but I wasn't eating them as much as I am now, so I've chosen to save garden space for other veggies in the past. This year, however, I will be planting quite a few for Oliver and myself to enjoy.
I have never had good luck with watermelon or cantaloupe.  It's a bummer because we eat them a lot.   I've decided to just purchase them from the farmer's market, as I inevitably have to do when the plants fail, rather than continue trying them.  Some day I'll try them again.
I eat broccoli every single day and Jay enjoys it as well so I will grow a lot of it for fresh eating and for freezing.  I'll do 2 large plantings of it.
I also eat a lot of cauliflower and Jay enjoys it from time-to-time.  I'll do 2 moderate plantings of this as well and we'll eat some fresh and freeze the remainder.
My fence (I'm told) won't be built until late summer/early fall, so I'm going to fence off one bed to grow cabbage in.  It seems that all of the wildlife that passes through our yard loves to feast on my cabbage, so hopefully this will allow us to harvest it before others take bites from each head.  I was not successful in getting seeds for red cabbage, so green is the only one I will be planting.

We really like fresh kohlrabi so I'll plant probably 8-12 plants for fresh eating.
I found that freezing jalapeno peppers & poblano peppers worked really well for us this year. I'll plant 5-6 jalapeno plants so we can enjoy some fresh, pickle some for canning, and then freeze both diced jalapenos and stuffed jalapenos.  For the poblanos, I'll plan on 5-6 plants so we can grill them and store in the freezer for use in soup, enchiladas, tacos or for stuffing.
I've had great success with tomatillos in the past so I'll plant probably 3-4 plants for fresh tomatillo sauce and salsa this summer.
We are growing mushrooms for the first time this year.  We bought shiitake plugs and then a boxed set for button mushrooms.  We shall see how that goes.  I'm not sure if it will be financially worth it or not.   I think if we get comfortable with it and can switch to purchasing sawdust spawn then it would be a cost savings (for the shiitake).  Not sure about the button mushrooms though.  I'll have to keep looking for better pricing to grow your own.  Comparatively, a 24 oz. package of button mushrooms are just over $4.00 at BJ's (when groceries are plentiful) so it will depend on how many this box produces.  The claim is "up to" 6 pounds.  We eat quite a lot of them so it would be nice if we can make it work.
We love green beans.  We eat a lot fresh but we actually don't mind them frozen.  I know a lot of people are turned off by their texture, but we still enjoy them so I usually grow a lot of these.  I'm going to try two new varieties this year as well.
Sugar snap peas are something we munch on all spring.  I am planting tons of these this month because I can use their space for cucumbers once they are done.  We freeze any excess (although we don't usually have much excess).  I haven't been planting shelling peas and won't be doing so this year.  I do love them in salads so maybe next year.
I've planted celery in the past and I have some seeds so I may plant a little bit.  I like to dice it and use it in salads and freeze it for soup.
We don't eat a lot of eggplant but we do enjoy a few dishes such as baba ganoush and eggplant parm in the fall so I always plant 3-4 plants and will do so this year.
I've started eating more radish so I'll probably increase my planting this year and do 2 plantings instead of just a spring planting.
We don't enjoy parsnips, turnips, fennel or okra (it's ok in soup but not my favorite) so I won't be planting these.  And leeks give Jay migraine's so we haven't had them since we figured that out about 14 years ago. 
We eat quite a bit of winter squash and our favorites are blue hubbard and sugar pumpkin.  They take up a lot of space so I usually plant only a couple plants of each of those and a couple each of delicata, acorn, and butternut.  If I have space I'll do that but with the increase plantings of the other veggies, I may default to the farmer's market and the pick-your-own field.
I adore bok choy both in stir fry and miso soup (Jay will eat it but it isn't his favorite) so I'll plant a few plants of it.

We have horseradish and asparagus already planted.  Best decision ever!  Our rhubarb is no longer around and I probably won't worry about that this year.  I would like to add more blueberry bushes and maybe another fruit tree to round out our fruit.  We currently have a grafted pear tree (6 varieties) and an Asian pear tree as well as a couple elderberry bushes.  We have a paw paw tree too but I keep forgetting to order another and there aren't any available locally.  It needs to cross pollinate.  Someday I will remember to do this before they are sold out.  We planted thornless blackberry two years ago so hopefully it will produce this year.  
I will plant herbs continuously throughout summer in containers on the deck again.  It worked really well last year.  I usually plant dill, basil, cilantro, oregano, chives, mint, thyme, sage, and parsley.  I dry what we don't use fresh for use later in the year.
I'm not planting shelling beans this year but would like to do so next year.

I would like to cut down what produce I buy from the grocery store throughout the winter.  I typically purchase mushrooms, greens, broccoli, carrots, onions, tomatoes (for salsa), potatoes, cilantro, and fruit regularly.  We always freeze enough corn, peppers (bell/jalapeno/poblano), berries, and green beans to get us to the start of summer.  I also keep winter squash in our basement as well as freeze some.  
This year I hope to grow enough greens throughout winter in the cold frame, micro greens in the basement, and find a good canned salsa recipe to cut those off of the grocery list.  Also I need to freeze enough broccoli & cauliflower (I prefer it fresh, but frozen is fine for winter), carrots, and onions to keep those off of the list as well.  This way I would only need mushrooms, potatoes and fruit in addition to pantry staples, meat and dairy.

A fun science project: A simple cloud chamber!
Safety warning: This project involves dry ice, which can really damage your skin if you make direct contact with it. If you attempt this activity, use appropriate safety precautions (like oven mitts and tongs to move the dry ice)
When I was a kid I always wanted to make a cloud chamber, which makes vapor trails of atomic particles visible to the naked eye. I first learned about it from reading a book by C. L. Stong titled “The Amateur Scientist”, which was a compilation of Stong’s columns in Scientific American. It’s an amazing book, and if you love tinkering as much as I do, it’s a terrific source of inspiration. It was published in 1960 (yes, I’m old) and I still have my copy (yes, I’m a bit of a packrat).

You can still order a used copy on Amazon for almost $60, but for the DIY science geek it’s well worth it (even today). Some of the chapters include “A homemade atom smasher”, “The Millikan oil-drop experiment”, “A simple magnetic resonance spectrometer”, “Homemade electrostatic generators”, “A low-speed wind tunnel”, “An electronic seismograph”, “A transistorized drive for telescopes”, and lots of other fun projects in many fields of science. 
The chapter on cloud chambers is very thorough, explaining many different designs and even showing how you can use magnetic fields to detect curvature in the particle tracks and determine exactly which types of charged particles they might be.
Back in those days I didn’t have access to dry ice so never did the experiment, but now it’s available in every supermarket. When one of our boys needed a science project, I suggested this one, and he jumped at it.
Nowadays there are many resources available online, and one of the best is the one by Science Friday, but I want to describe some things we learned from doing it using that book from 1960 in case you want to try this yourself.
The basic idea is to take a glass jar with a metal screw top, stuff a sponge in the bottom of the jar, pour some 90+% rubbing alcohol on the sponge, screw on the lid, invert it, place it on some dry ice, shine a flashlight from the side, and see what happens. When it works, you first see what looks like a tiny drizzle of alcohol droplets, then every so often (a few times a minute for us) you see a trail of condensed droplets that appears and then falls at the same rate as the alcohol “rain”. Those are atomic particles making their way through the alcohol clouds (see the Science Friday link above for examples of how these look).
It’s not as simple I made it sound in the previous paragraph. The inside of the jar lid needs to be black, for contrast. The light needs to be just so. Your container needs to be clear enough for visibility.
It’s important to choose the right container. Our first attempt used a pickle jar (the one we happened to have) that didn’t have super clear glass (it was a bit wavy). Once we got a better jar it worked great, so check the visibility through the glass before choosing a jar. We also tried this with a short (about 3″) tall jar, and that didn’t work as well because the glass frosted over from cold too quickly. Get a taller one (more like 6-8″ high).
Some websites advocate using permanent marker on the inside of the jar lid to make it black, but we found that the alcohol removed the marker so this didn’t work so well. Based on advice from the Stong book, we ended up buying some velvet (about half a yard) from the fabric store and cutting a piece that was about 1.5 feet square. We placed this over the open jar and then screwed the top on (velvet side was inside the jar).

The nice thing about this setup is that you can cover the block of dry ice (ours was about 10″ square and 1.5″ high) with the velvet and the metal top conducts heat away from the metal top and through the velvet. Stong recommended adding a little alcohol to the velvet also (in addition to charging the sponge with it) and that seemed to work for us. The cloth also covers the dry ice and prevents dry ice “steam” from interfering from viewing. It also prevents direct contact with dry ice, as a safety measure.
We then needed to create a light, and we improvised using a headlamp and a can of beans.

Here’s how it looked inside after we put the jar with velvet and the lighting source inside an Amazon pantry box, with the whole thing on a cookie sheet for ease of carrying. We also put a doubled up towel underneath the dry ice to insulate it.

You’ll need to play with the lighting a bit. We used the rest of the velvet to make curtains so you can put your head inside the box for best viewing.

Soon after the lid cools down you can see tiny droplets falling, like alcohol rain. You have to watch intently for awhile before you see this, but once you recognize this effect, you know it’s working. Every 15-30 seconds you’ll see a trail, which is a line of droplets that condensed around a particle of some kind. These lines fall at the same rate as the alcohol rain, so they disappear quickly. We’ve seen a handful of really visible ones but it’s not like a giant rainstorm of particles, just an occasional one.
Timing is important for this. In 5-10 minutes after you place the jar lid on the dry ice it should be cold enough for the alcohol rain to start. After about 45-50 minutes the jar starts freezing up so best to get viewing in relatively soon after you’ve identified the alcohol rain.
In the Stong book they mentioned finding the little bit of radioactive material that exists in some old smoke alarms, which can in some cases lead to many more tracks if you place it near the chamber, but we didn’t have an old smoke alarm and so couldn’t try it.
Because this was for a science fair where other kids got to see the project, my son made a safety sign:

Kids will need to be careful not to touch the dry ice or the velvet. That’s the only big hazard here. Adults (or high school age kids) should also be the ones to pour the alcohol onto the sponge and velvet.
My son Nicholas made a movie (big file, about 57 MB, MP4 format) about our efforts. It starts with a discussion of making the cloud chamber from a metal coffee can, an effort we abandoned because we ran out of time, but then it moves to the design on which we finally settled (we had two designs going at once, just in case). It might help you when making your own. Please forgive the “home video” nature of it, and our messy garage. It even shows the alcohol “rain” (but we didn’t capture any particle trails on the video).

Tracking October Deer Transitions
October lull: Fact or fiction? I'm still not convinced, though I have on occasion experienced a lull around the third week of October as many others have. But are the deer actually reducing their daytime activity, or are they merely moving it somewhere else? And how do you tell?
In many parts of the whitetail's range, October is a month of transition. It begins with warm temperatures. Leaves are still on the trees and deer are just starting to abandon their summer routines. Things are changing, and in order to stay on top of those changes, hunters sometimes need to double their scouting efforts. Fortunately, they can narrow their focus. In general, deer are on their feet during daylight hours for two things — feeding and breeding.
Feeding
This time of year both food availability and preference change. With less need for protein, deer spend increasingly less time in those clover fields you've watched them in every evening. Instead, more time is used for seeking out foods high in carbs, like hard and soft mast.
Where I live, the white oaks drop their acorns first, and over a relatively short period. Deer will be on the sweeter, smaller acorns right away, but the bounty won't last much beyond mid-October. Then they move on to the more bitter, but larger red oak acorns. Sometimes the change is subtle and other times it can be quite dramatic.
I once did an early season hunt in Kansas where, based on the landowner's reports, we spent the first few days hunting the edge of soybean fields. But the deer seemed to have disappeared upon our arrival. "A typical October lull," we thought. Then somebody discovered a small grove of persimmons dropping fresh, ripe fruit. One of our party killed a nice buck that evening and I saw at least seven rack bucks the following afternoon.
Hunting crops can be hit or miss, as the aforementioned example illustrates. The deer weren't on the beans early, but I've had great luck hunting bean fields in December in Iowa. Corn can be similarly problematic. Hunting in and around standing corn can be tough, but you're going to want to be along the field edge the day after they cut the corn, particularly if it's not a super-efficient machine harvest. These are but a few examples. The deer where you live may go through other diet shifts as need and availability change; and you'll just have to get out there and study.
Breeding
Things are also changing with regard to social interaction in October. The transition is slow at first, but the pace picks up as the month rolls on. Bucks open up a few scrapes in early October, but may not revisit them for a week or more. They're waiting for a trigger.
From reams of research we know that in mid to northern latitudes, most does enter estrus around the same time every year — mid-November. There are exceptions, including a couple smaller peaks, one occurring roughly 28 days before peak rut when a few early does cycle and their pheremones incite a sudden increase in buck activity. But if the does move away from where they were in early-October, so will the bucks — especially with love in the air. If you want to be successful you have to keep up with these transitions.
Keeping Tabs
One way to try and keep up with changes in deer activity is to be in the woods as much as possible. But no one can be everywhere they want to be every day. You can't hunt every day, and even if you could, you wouldn't want to put that much pressure on one place. Additionally, you can't hunt multiple locations at once. But your trail cameras can.
I usually put mine out in late August or early September, mostly to take stock of this year's crop. It will give me a rough idea who is out there and where they hang out, but I know the latter can change over a relatively short period of time, based on the aforementioned factors. It's not at all uncommon for an early-fall spot to go dry. Then I start to move my cameras around and put more out to see where the deer are.
That info is valuable in and of itself, but it can be exponentially more useful when evaluated over time. If you use an app, like ScoutLook, you can plot activity around and between stands from your image files and look for patterns. Over several seasons you may also start to recognize trends using the time and date stamps on your images.
Every situation is different and it may take you several seasons to figure out what's going on in your area. And one year may be different from the next as farmers rotate their crops or natural foods like acorns experience cyclic variations, or environmental conditions like drought alter food availability. What Is Fermentation in Coffee?
Fermentation is a natural process in which microorganisms such as yeasts (Saccharomyces cerevisiae) and bacteria (Lactobacillus) consume and metabolize compounds such as sugars and acids within the cherry. As a result, these compounds are broken down into acids and alcohol.
But why do we ferment coffee? First of all, for washed coffees, it is necessary for the non-mechanical removal of the mucilage.
Francine Vidal is the Coffee Project Manager at Lallemand LALCAFE, the branch of Lallemand that provides yeasts and bacteria for the controlled fermentation of coffee. The company offers several types of yeast with different effects on the coffee profile, ranging from mouthfeel to acidity and specific fruity or floral notes. “During this coffee fermentation or maceration, yeasts can degrade the mucilage from the beans,” Francine tells me. “This type is called demucilagination.”

Yet she also explains that fermentation is crucial because it affects the flavors and aromas that are developed in the cup.
“Mucilage is composed of sugar, amino acids, aroma precursors, and so on,” she tells me. “So, if you want to reveal and express the potential of aromas in the beans, you have to take care of that.”
Remember how sugars and acids are broken down during fermentation? It’s these very same reactions that make up flavor. If the sugars and acids break down under controlled circumstances, within suitable temperatures and time frames, the flavors and aromas developed in the bean will be more desirable.

Good vs Bad Coffee Fermentation
Francisco Quezada is the CEO of Montenegro Farms in Guatemala. He tells me, “With good fermentation, you can draw out the characteristics that a coffee has. In other words, good fermentation will not elevate a coffee’s quality, because coffee already has its quality from the field. But we can draw out and maintain those characteristics that come from the field.”
Yet fermentation isn’t always good. “A bad fermentation, this lowers or produces bad qualities in the coffee,” he stresses.
“In an over-fermented coffee, what we find are wine flavours, but those of wine that has gone bad,” he says. Even before he cups the coffee, he can recognise the signs of over-fermentation: the beans have a reddish color and the unappetising aroma of rotting fruit.
For these reasons, it’s imperative that producers understand fermentation and can control it as much as possible.

Consistency: Almost as Important as Quality
Luiz Roberto Saldanha, Owner of Capricornio Coffees in Brazil, tells me that consistency is also essential for accessing markets and seeing repeat purchases.
“If you don’t have a consistent product, it’s super difficult to make long relationships,” he says. He tells me to imagine if a buyer came back to a producer after buying a beautiful lot of coffee. Probably, he says, the buyer will be expecting the same qualities in their coffee the second time around. But they don’t receive the coffee they were expecting.
“So, then you started a relationship that you cannot keep going, your clients are not going to receive your coffee any more and you close the door and it’s super difficult and expensive to open it again,” Luiz explains.
One of the reasons why fermentation can be so challenging is that it’s the result of chemical reactions between microorganisms such as bacteria, yeast and fungi. And, according to Lallemand LALCAFE, these are essentially everywhere: in the soil, in fruits and berries, and as spores in the atmosphere. Under different circumstances, their reactions will change, modulating in different ways the flavors and aromas in coffee beans.
Yet consistency in fermentation is achievable. Mauricio Villegas has a PhD in Agronomical Engineering, has worked at Finca La Esperanza in Colombia, and is currently working on yeast trials. He tells me, “It’s not random. Simply, it’s that you have to define and control certain aspects to obtain more repeatability, and that repeatability will result in that [same] cup profile.”

How to Ensure Consistency & Quality in Fermentation
So, which factors should producers pay attention to in order to control fermentation and ensure consistent, quality coffee?
1. Cherry Quality
Margaret Fundira, Product Manager at Lallemand LALCAFE, tells me that the quality of the harvest is fundamental. “The quality of the raw material or cherries is important. Yeast [in fermentation] can only work with what is available in order to reveal or enhance certain aroma compounds due to their different metabolic processes,” she says.
Luiz Roberto agrees and explains that plants need minerals, nitrogen, and amino acids. “The only way to provide this is having a health plan where you decrease the stress and you [create] better conditions in order to grow and develop the cherry,” he advises.
“So, you need to apply everything in the field to have a good cherry, and when I say everything, it’s absolutely everything: nutrition, plagues, and diseases management to take care of the plant, and the amount of water, shade, and pruning.”

2. Cleanliness
Microorganisms are everywhere, and they aren’t all good for your coffee. Luiz Roberto explains that coffee cherries “already have microorganisms adhered to their surface, as well as the soil, harvesting materials, hands of the workers and infrastructure of transport, reception and processing.”
These, he says, can lead to contamination.
While it’s impossible to have a microorganism-free farm or mill, cleanliness can help greatly. Washing tanks should be cleaned after use. So too should all the tools used.
3. The Presence of Oxygen
Mauricio tells me that there are two types of fermentation: aerobic and anaerobic.
In aerobic fermentation, oxygen is present, which contributes to the respiration and growth of microorganisms. “Aerobic fermentation is the one that has been conventionally used,” he explains. “Nevertheless, that is a fermentation process in which you have less control of what is happening.”
This is because there are microorganisms everywhere, and the oxygen affects their growth in a way that can be hard to predict and control.
In anaerobic fermentation, Mauricio explains that the coffee is usually placed in a closed tank with no oxygen presence and a valve for the release of carbon dioxide. This gives producers more control over the chemical reactions happening.

4. Microorganism & Yeast Type
Different yeasts and microorganisms will have different effects on the fermentation process. For example, Lallemand LALCAFE uses the yeast Saccharomyces cerevisiae for all of their products. However, depending on the strain used, the yeast can have a different impact on the coffee: one can “enhance the fruity flavor (apricot, passion fruit, flower notes, vanilla), the mouthfeel of the coffee and the final cup quality;” another, the “brightness and citrus notes… [and] the mid-palate mouthfeel;” while a third one “is often preferred when processing time and efficiency is a priority.”
Mauricio also tells me that he has been conducting experiments with Lallemand LALCAFE’s yeasts. In his trials, the added yeasts overcame the indigenous or native microorganisms during the fermentation process, resulting in more controlled fermentation.
“When you use microorganisms in a population where you saturate the fermentation tank, you can obtain more consistency and cleaner cup profiles than compared to when you ferment with random processes and you don’t know what is really affecting the fermentation,” he explains.

5. Time & Temperature
These two factors are critical because temperature affects the rate of fermentation. “When the fermentation process within the bean is taking place under 20ºC, then I can take that fermentation up to 36 hours,” Mauricio explains.
On the other hand, at higher temperatures, he tells me that fermentation tends to happen faster – often too fast. “It is possible that after 24 hours, I can already have problems that will appear as defects in the cup”.

6. Data & Records
Without recording data and processes, it is harder to follow the same protocols in the future. From the temperature of the harvest season to the time of day at which the coffee was harvested and the length of the fermentation process, every piece of data is useful.
Be sure to measure pH levels, which indicate how acidic your coffee is. Record your Brix levels, which Luiz tells me won’t only let you know the amount of sugars present in your coffee but also the amount of substrate or food that bacteria and yeasts are feeding on.
“If I don’t have data or a process or I don’t know the background, I don’t have a way to do it again… So to obtain repeatability, you indisputably have to measure and know how variables behave during the process,” he says.
“And you definitely you have to know the temperature flux or behavior during fermentation, the dynamic of the Brix levels during fermentation, and the dynamics of the acidity on the mucilage during fermentation, because based on that, you can make decisions or even abort the process.”

Every Coffee Is Different
But remember: even those these six factors are key for consistent, high-quality coffee, you can’t treat every lot the same way.
“There are varieties with which you can work with different fermentation processes, long or short, with higher or lower temperatures, with the addition of microorganisms or without them,” Mauricio says.
So, know your coffee well. Take into account the varieties you have and the flavors they usually possess. And also make sure you know your farm, from the soil to the local climate.
Luiz emphasizes the importance of understanding which processing method works best in your region. Fermentation is a topic that’s not yet widely understood, but it can have far too significant an impact on coffee quality for us to ignore it. Francisco tells me, “We have to leave the fear behind and start experimenting so we can have better results and better characteristics in the coffee.
“This is part of the crisis we are living,” he adds. “Something that can save us is having that consistency in our products and so augmenting their quality with more controlled processes throughout the production chain.”
