Blueberry & banana bake
Original recipe’s link
Ingredients
2 bananas
1/3 cup olive oil (substitute coconut oil)
1/4 cup maple syrup
3 tbsp light brown sugar
1 tbsp water
1 egg
1 tsp vanilla extract
1 cup self rising flour
1 cup blueberries
Instructions
0. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper
1. In a medium/small mixing bowl, mash the bananas.
2. To the bananas, add olive oil, maple syrup, brown sugar, water, egg, and vanilla extract. Stir to combine
3. Add in flour gradually, stirring as you add, until fully combined
4. Fold in blueberries
If you coat the blueberries in flour, they shouldn’t all sink and stay somewhat suspended
5. Pour the batter into the parchment paper-lined pan
6. Bake for 30 minutes, or until well cooked
I think I accidentally did 5 extra minutes
7. Let cool. Slice and enjoy!

TV INTERVIEWER: I do have to admit to being surprised that your band enjoys biscuits-and-gravy breakfasts and midnight every so often. Is there something about the biscuits used that makes such so--uh, entertaining?
KITTY JO, beaming somewhat with pride: We're the sort as takes some measure of pride in serving only "from scratch" biscuits in the biscuits-and-gravy breakfasts. Admittedly, an old family recipe on my side of things, with self-rising flour, shortening and buttermilk for the most part.
TV INTERVIEWER, slightly stunned: You don't even use refrigerator biscuits?
KITTY JO: No way, no how! Nothing but real, homemade biscuits will grace our sausage gravy; it's just the way we Cattanooga Cats prefer things. Simple. Basic. Southern. But without being too arrogant on the Southern Pride angle such as can cross the line into--I assume you get the idea.

Soft Pretzels
Chef’s note: These taste like pretzels! I just got them stuck on the parchment paper, which was shite. I’m hoping the cooking spray mitigates that. Much better fresh out of the oven than the next day

Ingredients
1 1/4 cup self-rising flour, plus more for kneading
1 cup plain Greek yogurt (I used nonfat)
2 cup water
2 tbsp baking soda
2 tbsp unsalted butter, melted
pretzel salt/coarse salt/sea salt OR cinnamon sugar
Instructions
0. Preheat oven to 425°F. Line two baking sheets with parchment paper. Spray with cooking spray
1. Add the 2 cups of water to a small saucepan and bring to a boil.
2. Mix flour and Greek yogurt together in a medium bowl until a shaggy dough forms.
3. Turn the dough out onto a floured surface. Sprinkle the top with flour, knead a couple of times, and form the dough into a ball. Continue adding flour as needed if the dough is too sticky.
4. Cut the dough ball into four wedges.
5. Using your hands (cover your hands with a bit of flour), roll the dough into logs.
6. Cut each log into about 12 small segments.
7. Add baking soda to the boiling water in the saucepan. Stir until dissolved.
8. Using a slotted spoon dip each pretzel bite into the water then let drip dry a couple of seconds and place onto the parchment paper.
This should only be for a few seconds. You just need them to puff up a bit. They should float on their own
9. Bake for 7 to 10 minutes until golden brown.
10. Brush pretzel bites with melted butter and sprinkle with salt or cinnamon sugar.
