Zucchini Pancakes
Zucchini pancakes, a delightful twist on the traditional pancake breakfast. They taste so good that you’d never guess there are veggies hidden inside, but these sweet pancakes features a whopping 2 cups of grated zucchini. This recipe also includes suggestions for using different sweeteners or flours, and options for making savoury pancakes instead. A fun and sneaky way to get more veggies into…

some breakfast idea's
i love food. i love making food. making food, playing with flavours and trying to recreate what i have found online have to be some of my favourite ways to create. i've put together a lil list of some brekkies that i have enjoyed. there's no photos or recipes attached (yet) but maybe i'll work on that throughout the holidays.
i try to eat mostly whole foods,, and make sure that i get enough protein in. i get a lot of my vegetables in through my breakfast, since it is the time i have the most energy and it always sets me up for a good day❤️
tofu veggie scramble
sweet potato savoury pancakes and scrambled egg
chia and almond porridge with slivered almonds and some berries
savoury oatmeal with mushrooms and spinach (and an egg?)
corn fritters and scrambled eggs
pumpkin seed and oat granola with coconut yoghurt and kiwi
banana oat-flour waffles with nuts and yoghurt
loaded omelette
veggie blend waffle with egg
cashew butter and banana smoothie (cashew because i HATE the taste of peanut butter and almond butter)
yogurt bowl with fruits and homemade granola
oats (oatmeal) with sliced bananas and a sprinkle of cinnamon
vegetable waffle fritters with avocado, salt n pepper and a poached egg
quinoa breakfast bowl with honey and roast pears

Homecooking [Sept - Oct - Nov ed]
Sorry. .. this is gonna be a long one.
I had trouble uploading pictures =( so it took a long time on my end. I don't really like this new Tumblr layout. Well, it's not new anymore but I just find it as 'friendly' as the previous version. Uploading takes more time, I find. & there's a cap for number of photos per post. Is it bcos some lag if there are >30 pictures?
Anyway, here we go~ 3 months' worth...
Tumblr media
Zucchini pancake. I wanted to make them more circular but didn't work out lol we had a lot of zucchinis for that 1 week & they were like all going sort of bad. .. so I made a big batch of these & froze them. (reheated some for breakfast)
Tumblr media
Leftover curry beef + napa cabbage with thick rice noodles. The curry beef was actually delivery from Spirit Bistro (saved that for another post). The curry was excellent! A lot of ppl like coconut milk in their curry bcos of the sweetness & extra creaminess. .. but I don't. So this Cantonese style curry was desirable for me.
Tumblr media
STILL the same curry beef but added my own stuff to it (had extra sauce from the restaurant order). Ate it with some veggies, pickled radish & seaweed.
Tumblr media
Busan fish cake + salted seaweed udon <3
Tumblr media
Snack break lol this is "Japanese teriyaki" chips. Sweet & savoury; highly addictive. Got this on sale. .. normally close to $4 for this small bag.
Tumblr media
Beef cubes + napa cabbage soup my mom made . .. with thick glass noodles. My nieces like these noodles in soup only so I decided to give it a try. .. yeah no. Japchae/dry format for me.
Tumblr media
Steak + lettuce .. & orzo mushroom soup. I used the Knorr mushroom broth. Wowww I did not expect it to be so dark in colour (never used it before).
Tumblr media
Have you tried 'fried' orzo? xD I haven't .. so I decided to give it a try. Orzo + salt + pepper + garlic powder. It was pretty good actually! I was pleasantly surprised. Coworker thought it was rice but .. nope! As you know, I don't rice often.
Tumblr media
Usually we get pork belly from Hmart or T&T but this was purchased from Costco. It's leaner & has less layers. But still good! Pork belly is pork belly haha my parents like braised (/softened) pork belly but I like it dry/grilled/pan-fried.
Tumblr media
Cheese ramyeon with leftover hot pot beef~
Tumblr media
Ra-bokki with budae jjigae soup base
Tumblr media
Ginseng chicken soup. This brand is not that good. .. I've learnt from my past mistakes, where upon cooking, the chicken disintegrates. .. so I now just pour out & microwave. The result? Still disintegrates.
Tumblr media
Rice cakes & fish cakes in savoury soy sauce.
Tumblr media
Another budae jjigae soup base ramyeon (without rice cakes this time so not ra-bokki).
Tumblr media
Soybean paste stew (deonjang jjigae) + air-fried dry rib + rice.
Tumblr media
Curry ramyeon. Sponsored by Ottogi! lol jk. I wish!! I used the Ottogi brand plain ramyeon (the kind without any seasonings or anything) & the Ottogi brand mild curry.
Tumblr media
Thickn rice noodles with beef & bokchoy. The broth looks plain & flavourless but it's actually pho broth. (the instant cube kind that you just put into the water)
Tumblr media
Perilla seed poweder sujebi with beef, napa cabbage, some chicken breast & topped with seaweed. YUM!
Tumblr media
The thin rice noodles with cabbage & satay sauce. Once in a while, I like random no-meat meals. ..
Tumblr media
Janchi-noodles, aka 'celebratory noodles'. I made a super simplified version using egg, kimchi & seaweed.
Tumblr media
Tried out this new appliance. It is a plug-in skillet-pot(?). I don't know the name but it's like a square pan but has a good depth so you can boil stuff in it, but can also be used as a grill. I made a big portion of spicy wonton noodles.
One drawback: doesn't heat up very fast.
Tumblr media
Bcos of the above drawback that I've just mentioned, using this appliance as a 'heater' is a better use of it. It'll be nice in the winter when we use it to make Cantonese-style 'pots', you know what I mean? But for now, I'm the only one using it bcos my parents think it's too slow to heat up lol this was my ddeokbokki for 2 (leftovers for my lunch the next day).
Tumblr media
Egg noodles with rice cakes + dumplings + fish cake & baby bokchoy.
Seriously, noodle soups is all I need in life lol
Tumblr media
Used pre-packaged ginseng chicken soup base & chicken pieces to make the broth/soup, & then used the soup to make congee! So it's really ginseng chicken congee & it was so good! I should have saved some soup for the chicken to bathe in but I used it all for the congee bcos I scooped in too much rice -.-"
Tumblr media
Thick rice noodles with beef brisket & baby bokchoy. I prefer napa cabbage over bokchoy any day but these bokchoys from Hmart was very good quality & price was decent! Not sure about you if you also live in Edm, but the quality of produce in Chinatown grocery stores has gone down the drain =/ so much of the inside is rotten or you end up with like 'half' of the vegetable bcos the outside leaves are poor quality (hence toss out). It's hard to find the balance between how much you're paying & how much you get out of it. This bokchoy was pricier but you don't throw out as much so. .. on avg, it's better? *shrugs* it's tough! Hence we bought so much! It lasted pretty long too.
Tumblr media
Italian vegetable garden soup (the pre-made ones in container, not can) with some added pasta cooked by me.
Soooo that is it. I will try to be more punctual with my posting. I PROMISE!
PS: Have you all watched The Devil's Plan?? I'm not into game/reality shows bcos I find there's like to much drama &/or too scripted. But TDP was actually very good - a lot of brainy stuff & little drama haha I enjoyed it a lot. I wanna play some of those games!

Breakfast update-Tomato zucchini savoury pancakes with plain yogurt. Due to the presence of rice flour, they came out quite soft. I didn't add any but they can be made using eggs as well. Egg provides a great structure to pancakes. Recipe is there in the highlights. some magnus archive britpick stuff
there are no sidewalks in london. the road, which is made of TARMAC (not asphalt), is framed by PAVEMENTS. there are no parking lots: there are CAR PARKS. those cars run on PETROL (not gas), and they have a BOOT (not a trunk) and a BONNET (not a hood).
there are no intersections - there are JUNCTIONS. there are no traffic circles - there are ROUNDABOUTS. there is no such thing as a cross-walk - there are ZEBRA CROSSINGS or PELICAN CROSSINGS. there are no highways: there are MOTORWAYS.
no one gets takeout. people get a TAKEAWAY. no one goes to liquor stores: they will go to the OFF-LICENSE. there are no drugstores: there are CHEMISTS, or PHARMACIES. there are no stores: there are SHOPS.
no one has a cell phone: they have a MOBILE PHONE. they do not lose cell service: they LOSE (PHONE) SIGNAL.
if someone requires medical attention, it will be off the NHS, and it will be free. unless you’re elias, i suppose - he probably goes private like the posh dickhead he is, but in the case of an emergency, everyone will initially go in an ambulance to an NHS hospital, private medical care would be a different thing. in any case, in that hospital? they will go to A&E (Accident and Emergency) or Casualty. there is no ER.
and for little booboos, no one will have a band-aid. they will have a PLASTER.
when it comes to the seasons, there is no fall. there is AUTUMN.
no baby is placed in a stroller. they are in a PRAM, a BUGGY, or a PUSHCHAIR. the babies therein do not wear diapers: they wear NAPPIES, and they are unlikely to have pacifiers, and certainly will not have binkies - they will have DUMMIES.
if you put your hair up, you will not be using a hair tie. you will be using a BOBBLE or HAIR BAND. what an american might call a hair band (or head band) to keep back the fringe or keep it in place is called an ALICE BAND. and on that note, no one has bangs - they have a FRINGE.
CHIPS are a hot food made of cut pieces of potato (not fries). CRISPS are a hard snack made of cut pieces of potato that usually come out of a bag (not chips). there are no cheetos here. JELLY (not jell-o) is a gelatinous dessert; JAM (not jelly) is a preserve you might spread on your toast. peanut butter and jam sandwiches are not at all common.
people eat SWEETS, not candy. it’s a CHOCOLATE BAR, not a candy bar. no one is eating cookies: they are eating BISCUITS, unless it’s specifically a chocolate-chip cookie.
no one seasons with cilantro - it’s CORIANDER. there are no eggplants - there are AUBERGINES. there is no zucchini - there is only COURGETTE. no one drinks soda - they drink POP or a SOFT DRINK or a FIZZY DRINK. lemonade is a fizzy drink: it’s not a flat drink made of lemon and disgusting amounts of sugar. PUDDING is either a savoury thing made of blood (black or white pudding) or it’s a synonym for dessert. it’s not some gelatinous chocolate substance.
there is no creamer. you might put milk in your coffee, or MAYBE, if you’re some sort of decadent mad person, some cream, but not creamer. a pancake is basically a french crepe, unless it’s specified as American pancakes, in which case it will be those horrible fat discs that are called pancakes in the US. people might have a FULL ENGLISH for breakfast, if they have the time or inclination - bacon, black pudding, baked beans, toast, fried tomatoes, sausages, etc.
no bed has a comforter. it has blankets - it might have a QUILT (synonym for duvet, not necessarily a patchwork quilt) or DUVET.
no one has an ass. they might BE an ass, but they do not have one, unless they own several shares in the local donkey sanctuary - they have an ARSE. people are more likely to be arseholes than assholes.

Conscious Consumption: 3 Savoury Vegan Recipes
Vegan food can be as delectable as non- vegetarian food. To switch the meat to veggies in your diet, you don’t have to compromise in taste. Detailed below are some recipes that you can try at the comfort of your home to replace the regular snacks and meal options.
Potato Pancakes: This recipe comes from Forks Over Knives blog.
Ingredients:
2 grated russet potatoes
1 grated large zucchini
½ grated yellow onion
½ cup of oat flour
1 tsp of baking powder
½ tsp of freshly ground black pepper
Instructions:
Heat up the oven at 425 degrees.
Take two sheet pans and cover with parchment paper.
On a kitchen towel, spread half of the vegetables and roll it to keep any extra moisture out.
Now do the same with the rest half of the vegetables.
Take a small bowl, mix in oat flour, pepper and baking powder.
Throw this mixture in the vegetable bowl and mix thoroughly.
Take ¼ cup of potato mixture and make a semi-tight ball. With your hand flatten the balls.
Put the pancakes in the pan.
Do the same with the rest of the mix. Keep the mix at a 2-inch difference.
Keep them baking for a good 12 minutes. Then flip and bake the other side for the same time. Serve immediately.

Baked french fries & Ketchup: This recipe is taken from Forks Over Knives blog.
Ingredients:
4 washed potatoes, peeled
Cut them in ½ inch of wide sticks
Instructions:
On a sheet, place parchment paper and spread the cut potatoes.
Bake this for 15 minutes at 400°F.
Take the sheet out and turn the fries on the other side and bake this for 15 minutes as well.
Serve immediately with sauce.
Chickpea Nugget: This recipe comes from Forks Over Knives blog.
Ingredients:
½ cup of whole-grain bread crumbs
2 tsp of Italian seasoning
3 cloves of garlic
15 ounces of rinsed chickpeas
1 small and cut onion (in 1-inch pieces)
1 ½ cups of cooked rice (brown)
1 tsp of ground cumin
1 tsp of nutritional yeast
¼ cup of turmeric
¼ cup of lime juice
¼ cup of finely chopped parsley
Sea salt
Ground pepper
Ketchup or hot sauce as a dipping
Instructions:
First of all, preheat the oven at 425°F.
Put parchment paper on the baking sheet.
Take a small bowl, now mix together the Italian seasoning and bread crumbs.
Take another bowl(food processor's), put together rice, onion, turmeric, garlic, rice, lime juice, nutritional yeast, salt, black pepper, parsley; then pulse to the mixture.
Scoop out 2 tbsp of the mixture and mould them in an oblong nugget.
After this, dab the nugget in the seasoned bread crumbs.
Put them on the baking sheet.
Keep repeating these steps until the complete mixture is done.
Then put the Nuggets in the pre-heated oven and bake for 20 minutes.
Once, one side is done, flip them and let the other side bake for the same time.
Serve immediately with ketchup or sauce.

Then I put some oil. The consistency has to be quite dense. ✅I poured the mixture in a zip lock bag and I made a tiny cut at the corner. This helps to dispense the mixture in a circle shape. ✅Then I cooked on a hot nom stick pancakes pan lightly oiled. ✅Cooked for about a minute each side. ✅ I served with pan fried grated zucchini and one poached egg. ❤Suitable for all blood groups types for those following the blood group diet #goodmorning #ricettegrupposanguigno #4yourtype #bloodgroupdiet #mydiet #celiac #glutenfree #glutenfreelife #glutenfreeliving #dairyfree #senzaglutine #foodbloggers #foodfit #food #foodgram #healthyfood #healthylifestyle #cleaneating #ricetteperceliaci #ricetteperintolleranti #dimagrirecongusto #instalove #bestfoodpics #fitandhealthyrecipes #zucchini #ilclubdelleinstagolose #cucinahomemade #foodphotographer #eatrealfood #eatwell (at Canton of Zürich) https://www.instagram.com/p/CCaciGVJKYT/?igshid=cf7p54wzyd5g

New Post has been published on https://travelonlinetips.com/13-of-the-best-sunshine-coast-kid-friendly-cafes-and-restaurants-4/
13 of the best Sunshine Coast kid-friendly cafes and restaurants
From aqua parks to wildlife experiences of the up-close-and-personal kind, the Sunshine Coast is a playground for family goodness. But the fun doesn’t stop there.
Soak up the Sunshine Coast’s atmosphere – and take the fam’s taste buds on an adventure too – with this go-to list of kid-friendly cafes and restaurants. Consider the hunt for new eating experiences with menus for everyone, caffeinated drinks for grown-ups and distraction zones for kids sorted.
The Velo Project, Mooloolaba
This back-street community café in Mooloolaba looks after hungry kids and adults alike with a menu that supports local farmers and producers.
Kids will love ‘The Little Harry’s Club’ unicorn chino, grilled toasties with avocado and cheese or Nutella and cream crepes. Mums and dads can avoid FOMO with buckwheat crepes filled with crunchy peanut butter or smoked salmon, or a toasted tortilla wrap filled with slow-braised ginger and soy pork belly.
Velo’s coffee game is strong (they even serve it up in bowls!), but for an alternate pick-me-up, try their healing organic teas. You’ll find a shaded kids’ area out the back with enough toys and cubbies to keep them busy while you sip.
Where: 19 Careela St, Mooloolaba. Open: Breakfast and lunch daily 7am-3pm. Hot tip: Add the Fraser Island spanner crab side for a next-level breakfast.
Guru Life, Rosemount
Head west from Maroochydore and swap the beach for lush gardens, a pond and ducks at Guru Life. The setting is perfect for little explorers and the menu is full of colourful, healthy options.
Start your day under the umbrellas with a wet coconut brekkie bowl (fruit salad with coconut yoghurt for kiddies) or if you’re visiting for lunch, follow the hypnotic smell of their vegan burger with eggplant parmi, cashew cheese, pickled veggies and relish; while the kids can make tracks for crispy calamari or battered fish with chips.
Where: 522 Petrie Creek Road, Rosemount. Open: Breakfast and lunch daily 6am-3pm. Hot tip: This is a good spot for bird-chasing kids to play a feathery version of Where’s Wally so you can finish your coffee while it’s still hot.
CK Coffee Bar, Mooloolaba
It’ll be hard to get your kids to leave the cute indoor play area with books, toys and a play kitchen that entertains while the food and drinks are prepared.
The CK Coffee Bar team have also crafted a kid-friendly menu (based on learnings from their own fussy eaters) with short stack banana pancakes with coconut ice-cream for breakfast or mini Angus beef burger with sweet potato fries for lunch.
Parents, get ready to make the tough choice between a sweet or savoury breakfast with banana and cinnamon waffles with coconut yoghurt or truffle scrambled eggs with herb roasted mushrooms and marinated feta.
Where: 17 Brisbane Road, Mooloolaba. Open: Breakfast and lunch daily 7am-2pm. Hot tip: Lactose-free milk is up for grabs for those with sensitive tums.
Cafe Doonan, Doonan
An adorable rustic café set amongst the trees on a country road outside of Noosa, you’ll spot toys and books indoors or you can head down to the big garden area complete with sandpit and toy boxes.
Breakfast options start with the classics: muesli and zesty smashed avocado. But you can also get adventurous with Café Doonan’s quinoa apple waffles, or halloumi stack loaded with grilled vegetables and topped with a poached free-range egg and housemade pesto.
From the drinks menu, kids can choose from the milkshake range or stick with a babyccino to go with their beans on toast or toasted wraps.
Where: 777 Eumundi-Noosa Road, Doonan. Open: Breakfast and lunch Monday to Thursday 6:30am-4pm; breakfast, lunch and dinner Friday and Saturday 6:30am-8:30pm; and breakfast Sunday 6:30am-12pm. Hot tip: Friday and Saturday dinners have an ever-changing blackboard menu. Go à la carte or put your trust in the chef’s three-course set menu, which is usually themed (and always delish).
Izba Espresso, Birtinya
Breakfast doesn’t come handier than a brekky wrap – and the Izba interpretation is top notch (bacon, egg, cheese and Spanish onion drizzled with homemade tomato relish on a wholemeal wrap). Go for the fig and walnut loaf if you’re looking for something lighter or, if you’re up for a serious challenge, take the triple stack pancakes for a run.
Kids can also pick pancakes (just two, though), Humpty Dumpty eggs or the kids’ mini breakfast (two free-range boiled eggs with thick buttery toast) from the all-day brekky menu.
The lunch menu is crammed with burgers and wraps for adults and cheeseburgers and toasties for the little ones. Whatever meal you choose, enjoy some ‘me’ time while they make good use of the playground area suitable for kids aged four and up.
Where: Corner of Lake Kawana Blvd and Birtinya Blvd, Birtinya. Open: Breakfast and lunch Monday to Friday 6:30am-5pm, Saturday and Sunday 7am-5pm. Hot tip: Check out the jaffle bar at one of Izba Espresso’s other Sunshine Coast branches at Bells Reach.
Boathouse at Mooloolaba Surf Life Saving Club, Mooloolaba
Surf Clubs are the go-to venue for many a family get-together and this one is no exception. Located in the hub of Mooloolaba, it’s the spot to refuel after a morning at the beach.
Boathouse’s all-day dining menu begins with breakfast staples like bacon and eggs and toasted muesli; while seafood a-plenty and a roast station is sure to fill bellies later on.
On the ‘Nippers Only’ menu you’ll find old faithfuls like fish and chips, penne Napoli, cheeseburger and chips or chicken schnitzel. The best part (for them) is the free ice-cream cone included. Once it’s demolished, they can escape to the kids corner for arcade games.
Where: The Esplanade, Mooloolaba. Open: Breakfast daily 8am-10am, lunch and dinner daily from 11:30am-late. Hot tip: On the first Sunday of each month, your kids can meet and pat pooches as part of the Surf Club’s support of Smart Pups, a local charity that provides Assistance Dogs for children with special needs.
Kelly’s of Peregian, Peregian
Just across the road from one of the locals’ fave beaches you’ll find Kelly’s of Peregian, where you can grab a bite to eat after a morning of sandcastle constructing or an afternoon of salty splashing.

They can then run amok outside on the village green, perfect their sand-building skills in the sandpit or make the most of the fully enclosed indoor play area with toys and cubby.
Where: 2/6 Kingfisher Drive, Peregian Beach. Open: Breakfast daily 7am-12pm, lunch Monday to Thursday 12pm-3pm, lunch Friday and Saturday 12pm-5pm. Hot tip: If you’re looking for a hearty iron injection to round out the week, head to Kelly’s on Friday or Saturday for their $20 steak night special.

If your crew likes to feast on an array of food, try the family-friendly themed dinner buffet at  Nouveau Restaurant.

View Restaurant, Peppers Noosa Resort & Villas, Noosa

Their lunch menu will get your mouth watering with dishes like slow-roasted lamb shoulder with grilled Mediterranean veggies, smoked olives and pesto or spaghettini with barramundi, tomato, capers, garlic and parsley. And you won’t need to bribe the kids to get through their dinner as they’ve got seven meal options that all come with a drink, dessert and Peppers kids pack.
Where: Little Hastings Street, Noosa Heads. Open: Breakfast daily 7am-11am, lunch daily 12pm-2:30pm, dinner daily 5:30pm-late. Hot tip: Kids eat dinner for free if you’re a Mantra+ member, which you can sign up for while dining.
Noosa Boathouse, Noosaville
Wander along the jetty from Noosaville’s main drag where sitting pretty on the Noosa River is Noosa Boathouse with three-levels of foodie fun.
Boathouse’s seafood is pretty special. Parents can share baked scallops, freshly shucked oysters and chilled Mooloolaba king prawns, or go all in with the seafood experience for two which has everything a seafood lover needs from calamari and bugs to crab and fish.
Little foodies can pick battered dory and chips, bangers and mash, or pasta from their own menu.
Where: 194 Gympie Terrace, Noosaville. Open: Lunch daily from 11:30am, dinner daily from 5pm. Hot tip: For the ultimate picnic, grab a family pack from the fish and chips takeaway window and find a spot on the sandy bank of the river.
Coffee Cat on Kings, Caloundra
Place your order inside and snag a table outside with views of Kings Beach at Caloundra.
Go for healthy AM options like the Cocowhip breakfast bowl and quinoa Nasi Goreng, or dial up the heftiness with the Beach Jaffle filled with savoury mince and cheese. Juniors can choose between a bunch of toast-related options with hash brown, salmon or halloumi extras.
Lunches are all about burgers, wraps and salads, with the usual suspects like mini grilled chicken burger and Hawaiian pizza for kids combo options.
Where: Shop 4, 8 Levuka Avenue, Kings Beach, Caloundra. Open: Breakfast daily 6am-11:15am, lunch daily 11:30am-2:30pm. Hot tip: Stick around for the live music and fun vibes on Friday and Saturday evenings and Sunday afternoons.

Yesterday’s show of healthy food thoughts is still sticking to me.. Don’t worry these thoughts do not come often. While my “I should eat healthy, hereafter” thoughts are still there I wanted to post this recipe. Today’s recipe is my health vegetables loaded, gluten free savoury pancakes..
It is flourless, the vegetables and the eggs in them will make you feel light and the sense of accomplishment that you have cooked something so simple, healthy and nutritious is the winning factor here.
Also, it is Saturday morning. Pancakes morning, almost Saturday at our home. So along with the oats banana pancakes(that is a recipe for another day) I was making these savoury pancakes.
Lets get on to the preparation method. And there is no elaborate preparation required if you have a chopper processor. Makes the preparation ultimately easy. But one can use the good old chopping board and knives too.., either way it is easy.
Ingredients required – Makes 6
Onions – 2
Tomato – 1 small or half of a bigger one
Capsicum/Green bell pepper- 1/2 deseeded and cleaned
Coriander leaves – a small bunch
Salt for taste
Pepper and cumin(optional)
Turmeric – a small pinch
Paprika – 1/2tsp
Oil to grease the pan
Tumblr media
The above vegetables are just for the basic version, you can add cheese, red/yellow peppers, zucchini and so much more to it.. All will be delicious🙂😍
Steps to make savoury pancakes
This is much simpler, as mentioned before if you have a chopper processor. Just put all the ingredients(Everything except oil) in it and blitz until you see small colourful vegetable pieces, as shown in my pictures below and the eggs look well beaten.
Tumblr media
If you have got no chopper, no worries. Just chop the vegetables, and add the eggs and seasoning and beat well with a whisk..👍
Heat the pan, spray in some olive oil and pour in the batter. Let it get cooked, when you see golden edges, flip them carefully and let the other side cook too.
Server hot. These pancakes will be delicious without any sides, but you can serve with mint chutney or tomato ketchup if you like.

It was my first time here and I was wondering where was I hiding these past few years? I just wished I knew of this place long time ago as these guys prepare an amazing Italian Fare. I had been to Italy many times and this place reminds me of the food there, aroma, texture, colour, ingredients etc.
Located beside the bridge in K’Road, just across Coco’s Cantina (another great restaurant) this is the place I usually don’t wander around but now that I was introduced to this place, I felt the need to discover what’s around it. The place is quite spacious specially for a K’Road establishment, there were ample seats and it was not cramped.
Menu is simple where every section is headed by its price, NZ$6, NZ$16, NZ$22 and NZ$10. First being the Antipasti, a the myriad small starter dishes; then comes what looks like a Secondi mixed with some Contorno (interestingly cheaper then the Primi), this is a selection of meat courses and side dishes; then Primi which is a selection of gnocchi, risotto, or pasta; and finally the Dolce which are the desserts. In each heading there are only 5 to 7 items.
We ordered almost every item on the menu except for the dessert as we don’t have room for them. And before starting this lovely meal we grabbed a couple of beer just to quench that thirst.
First orders that came with the beer are the Fermented Fries Feta Oregano (NZ$6.00) which has a very interesting strong flavour which goes well with any drink, nice and salty, but a very unique fries. Soft inside and crispy on the edges, it was perfectly cooked.
Then the next starter was the Zucchini Fritti (NZ$6.00), another great dish and was totally unexpected for me. I was not expecting this to taste like such, texture was light and crispy. It was so good I recreated Zucchini Fritti this at home.
Farinata (NZ$6.00) was also served as suggested by the waiter, it may look like a pizza, but this dish is type of thin, unleavened pancake or crepe made from chickpea flour. It was topped with some crispy fried sage and grated parmesan.
At this point we grabbed another round of beers, if I can remember these were just the tap beers, it was perfectly cold.
Pork Belly Peperonata Aged Balsamic (NZ$16.00), came next. Definitely way much better than your usual roast pork. Meat was not bland, it was fork tender and filled with flavours, skin was so crispy as well.
Then came the Saffron Arancini Smoked Ricotta Nduja (NZ$16.00), again it’s not just your average arancini, this was well made, cheesy, rice was al dente, and this is one of the arancini’s that I never felt heavy after eating.
We also had some veggies on the side, in the form of Eggplant Caponata Whipped Feta (NZ$16.00), certainly one of the best eggplant dishes in Auckland, it was light, airy and crispy on the outside. Whipped feta that accompanied this dish was the perfect complement to that already wonderful aubergine.
Then came the pastas, and I heard this is the pride of Cotto, fresh handmade pasta everyday so definitely orders some when you visit this place.
First on our pasta order was this Tortelloni Salted Hapuka Cherry Tomato Wilted Cos (NZ$22.00), that sauce was to die for, the filling was so creamy which contrasts nicefully with the tangy savoury tomato sauce. Pasta was the perfect thickness and cooked well.
Maltagliati Lamb Shoulder Ragu Chilli Fennel (NZ$22.00) came next, which basically is like small lasagne sheets served in a nice lamb ragu with a bit of kick! This one reminds me of the authentic nona cooking in Italy, rustic and tasty, one of the dishes with that homey feel.
Third pasta was Gnocchi Pea Asparagus Buffalo Mozzarella Basil (NZ$22.00). Another great dish, gnocchi was surprisingly light and tender, the sauce was magnificent, creamy, I just want to lick that plate clean.
Finally the Cannelloni Beef Short Rib Rocket Walnut (NZ$22.00), this was one of the best of the pastas, and it looks very interesting since you might associate it with a spring roll, it may look fried but I guess is baked. Filled with beef short rib and it was meaty delicious, the green sauce might push away those non vegetable lovers but trust me it was done perfectly here, it blended well with all the elements.
That was a lot of food, I was so full I just want to snooze after that. If I must rate all the dishes that I had from 1 to 10 then the lowest score was a 7 and most of them were a 9. Like I said the minute I grabbed a spoonful, I felt like I warped to Italy, the food was just simply fantastic.

Fancy having a Pancake Day with a Vegan Twist?
(adsbygoogle = window.adsbygoogle || []).push({});
Pancake Day, also known as Shrove Tuesday, is a traditional Christian celebration before the period of Lent. This year, Pancake Day will be celebrated on Tuesday March 5 2019. Historically, before Lent fasting took place, many people didn’t want to waste their remaining ingredients, so instead they made pancakes.
Traditionally, it is custom to eat sweet pancakes on Pancake Day but as more people are turning towards a vegan diet, you might want to consider replacing the sweet tradition with a tasty savoury, vegan alternative instead.
Veganism has skyrocketed in recent years, with 7% of Brits now choosing to enjoy a plant-based life. According to a recent survey by comparethemarket.com there has been a significant spike in the number of people going vegan in the UK since 2016, with more than 3.5 million British people now identifying as such.* Equip yourself for a vegan recipe Hop on board and join the vegan and avocado food trend by trying a vegan pancake recipe filled with avocados, dill courgettes and hummus Ingredients pancake for two pancakes: 1/4 cup of self-raising wholemeal flour 1/4 cup of gram flour (chickpea flour) 3/4 Cup of soy milk or any plant-based milk 1/4 tsp salt 1/4 tsp garlic powder/granules Ingredients for filling: 1 small avocado 1 small courgette (zucchini) Some dill 1 tbsp lemon juice Some garlic (or garlic powder/granules) Soy sauce Hummus Method: Start with cutting deseeding an avocado and cut into small cubes and set aside. Do the same with the courgette and fry in a bit of oil, lemon juice, soy sauce and garlic. Once they soften turn down the heat and add some fresh cut dill to it. Set aside as well.
And if like us you’re short on a utensil or two, health aware high street retailer, Robert Dyas is equipped with all the essentials to create delicious vegan crêpes this Pancake Day as part a plant-based diet.
Measure your self-raising flour, gram flour (chickpea flour), soy milk, salt and garlic using the Morphy Richards Electronic Kitchen Scale – Black (£21.99) for a precise amount of ingredients – you don’t want to accidentally add in too much flour. Or worse, too much salt! To start blending the ingredients, why not use the Colourworks Silicone Whisk – Red(£2.99 was £5.99)? Alternatively, if your manual whisking days are behind you then the electric Beko Sense Hand Mixer - White (£18.66 was £27.99) may be ideal for you. Whisk up a storm in this Colourworks Large Melamine Two Tone Mixing Bowl - Red(£6.49 was £15.99). The 4L capacity made from durable melamine means you can use the long-lasting bowl to make enough batter for the whole family. To scoop up the pancake batter, use the Kitchen Craft Master Class Soup Ladle with Soft Grip Long Handle (£4.99). This ladle is made out of stainless steel making very durable as well as being dishwasher safe will make it very easy easy to clean up after scooping up all the pancake batter.  Pour your batter carefully onto the Breville Traditional Crȇpe Maker (£22.49 was £29.99). Use the ‘T-stick’ to evenly spread out your batter to create a flawless, circular pancake shape. If you prefer to cook the pancakes in a frying pan, add some oil to the Hairy Bikers Aluminium 2 Piece Frying Pan Set (£12.99 was £29.99). The pair have a non-stick feature means you don’t need to worry about your pancake sticking onto the pan’s surface.  If you’re not a pro at flipping with the pan and you’re worried that your pancake will hit the roof, use the Colourworks Silicone Spatula - Blue (£5.99). After your pancakes are a lovely golden colour, lay out your pancakes evenly on a flat surface using the Robert Dyas Bamboo Chopping Board – Large (£6.49). Finally, add in the avocado, dill courgettes and hummus in the middle. Simply fold and roll the pancakes up and enjoy your vegan pancake!
Prices are correct at the time of release.
