Prettiest biscuits in town (GF)
I was excited to try baking my biscuits in the electrical dessert iron that I bought recently, and I must say that it exceeded expectations :) The one I used is meant for small pies, and I imagine you could use a muffin iron or I guess a waffle iron also.
I used my trusted pie cutter as usual when crumbling dough. I really don't know how I managed before.
Cut up in small squares and keep in freezer why you measure the rest:
100 gr butter
Give a quick mix:
7 dl gluten free flour
1 tbsp gluten free baking powder
1 tsp salt
0.5 dl sugar
1 tsp psyllium husk
Give a quick mix:
2.5 dl buttermilk (or 2.5 dl milk and a tbsp lemon juice)
1 egg
Mix the butter into the flour until crumbly and resembling wet sand
Add the buttermilk and mix until it barely holds together
I then used two teaspoons to add a small amount of dough in each cavity, closed the lid and baked until golden and crisp.
Obviously you can bake them in the oven instead:
Roll and fold 3 times, roll into 2.5 cm thick sheet and cut into 5 cm rounds
Place on a greased baking sheet or iron pan
Bake at 200C for 15-20 minutes
We had them like a bread roll with savoury fillings like ham, mayo and cheese or ham, butter, honey and mustard. Delish!

Oat and Tea for breakfast
As autumn is bidding goodbye and temperatures are dropping, I have exactly zero reason to wake up early. The perks of being a final year student is I don't have to - so I end up waking late. That means that brunch is the norm for me. And usually I will frequent the kebab store or eat pasta at home, but today I took a different approach.
I decided to get a lavender tea and oatmeal for my brunch and they were the prettiest thing I have had ever eaten in this month. Look at this.
