A two way with sweet potato mash - 'Fire cracker' Sausages & mash.
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 2 Large sweet potato
• 1 medium white potato
• 4 Sausages
• Oil - 2tsp
• 1 Onion
• White wine vinegar 1 tbsp
• Marmalade 1 tbsp
• English mustard  ½ tsp.
• Cheese grated, a handful to taste
𝙈𝙚𝙩𝙝𝙤𝙙
1) Bring a medium saucepan of water to the boil. Wash & chop the sweet potato & white potato - put into a pan. Cook for 20 minutes.
2) Prick the sausages & put them into a medium frying pan or sauté pan with the oil. Peel & slice the onion - slices like hot dog onions - and add to the pan.
3) Once the onions have softened, add 1 finely sliced chilli, the vinegar, marmalade and mustard, and cook on a medium heat, stirring to encourage the onions to absorb all of the spicy sweet flavours and turning the sausages to brown and cook through.
4) When the potatoes are soft, drain them, leaving them slightly wet to mash. Finely slice the remaining chilli and toss it into the potato pan along with the grated cheese. Mash with a fork or potato masher according to desired consistency. Spoon the mash into a bowl, top with the spicy sausages & onions, and enjoy.
Cottage Pie
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 400 g beef mince
• 1 onion, finely chopped
• 1 leek halved lengthways & thinly sliced
• 1 large carrot, finely diced
• 1 celery stick, finely diced
• 2 tbsp. tomato puree
• 2 tbsp. plain flour
• 2 tbsp. Worcestershire sauce
• 500 ml beef stock
• 2 Large sweet potato
• 1 medium white potato
• 50 g butter
• 2 tbsp milk
• 200 g frozen peas
• 75g grated Cheddar
𝙈𝙚𝙩𝙝𝙤𝙙
Do as above for the mash.
1) Preheat oven to 200°C. Heat a large frying pan over medium-high heat and once hot add the beef mince. Cook the mince until golden brown all over, about 5-6 minutes.
2) Then add onion, leek, carrot & celery, adding a drizzle of oil if the pan has started to dry out. Cook the vegetables until lightly browned & softened, a further 5-6 minutes
3) Add tomato puree & flour & cook, stirring, for 2 minutes then add Worcestershire sauce, beef stock & thyme. Season, simmer until thickened.
4) Plate up then layer the mash, sprinkle cheese on top.

I swear I went looking to try and find a good representation of her - or her as I view her - but... I just don't think any famous or well-known or influencer-style people look like her because they don't really look... like regular people, y'know? to me, Trina will always just be very much a small-town, chunky, curly-haired girl with a country accent and freckles.

Slow-cooked lamb vindaloo pies

INGREDIENTS
2 Tbsp Vegetable Oil
2 Brown Onions, Finely Chopped
2 Tsp Yellow Mustard Seeds
1kg boneless lamb shoulder or leg, excess fat trimmed, cut into 3cm pieces
4 Tomatoes, Coarsely Chopped
1 Tbsp Brown Sugar
2 Fresh Or Dried Bay Leaves
1 Cinnamon Stick
80ml (1/3 Cup) White Vinegar
2 sheets frozen shortcrust pastry, just thawed
2 Sheets Frozen Puff Pastry, Just Thawed
2 Egg Yolks, Lightly Whisked
Bought tomato chutney, to servespice paste
5cm-piece fresh ginger, peeled, coarsely chopped
8 garlic cloves, coarsely chopped
2 long fresh green chillies, coarsely chopped
1 tbsp garam masala
2 tsp coarsely sweet paprika
1 tsp chilli powder (or to taste)
1 tsp ground turmeric

Directions:
To make spice paste, place all ingredients and 2 tbs water in the food processor. Process until smooth, adding extra water 1 tbs at a time to help blend, if necessary.
Heat oil in a large heavy-based saucepan over medium-high heat. Add onion and a pinch of salt. Cook, stirring occasionally, for 10 minutes or until softened. Stir in mustard seeds for 1 minute. Add spice paste and stir for 1 minute or until aromatic
Add lamb and cook for 4 minutes or until lamb just starts to colour. Add the tomato, sugar, bay leaves, cinnamon, vinegar and 60ml (1 ⁄4 cup) water. Reduce heat to low. Cover partially with a lid and simmer, stirring occasionally, for 2 hours or until the lamb is tender and sauce thickens. Season. Set aside to cool completely.
Preheat oven to 200C/180C fan forced. Cut each pastry sheet into 4 squares. Line eight 8cm (base measurement) pie tins with shortcrust squares. Trim excess. Fill with lamb mixture. Top with puff squares. Press edges together. Use a sharp knife to trim any excess pastry. Use a fork to press edges together to seal. Brush each pie with egg yolk and transfer to a large baking tray (depending on size of your oven and baking trays, you may need to cook in batches). Bake for 20 minutes or until pastry is golden. Serve with chutney.

Just thinking about female reader pregnant with Simon Riley’s baby. How he’d act.

He comes home from his mission, seeing you in the kitchen making dinner. Taking off his boots and throwing his bag on the couch he walks over to you, heavy footsteps before strong large arms wrap around you.
“Missed you, mama.” He whispers, kissing your neck as he caresses your 6 month belly.
You’d turn your head to look at him, smiling. Pulling you into a passionate kiss, whispering sweet things in your ear.
“Go take a shower while I finish cooking, okay?” You say softly with a smile on your pretty pink lips that he loves oh so much.
“Yes ma’am.” He gives you one last kiss before turning around and going upstairs. You hear him taking off his uniform and throwing it in the laundry, followed by the sound of the shower starting.
You finish cooking and set the table, pouring him a glass of bourbon and yourself a glass of apple juice. Sighing and looking out the window as the sunsets. You like this life, just you and your husband and your baby.
Footsteps rush downstairs before you see him walking in the room with a pair of grey sweatpants and no shirt on. His brown eyes pierce through you as he walks straight over to you.
He hugs you and makes sure you know how much he missed you before finally letting go and sitting down so you guys can eat. He’ll ask for what you did while he was gone, staring at you with a lovedrunk smile.
He loves watching the way your lips move as you talk, loves to hear your voice, loves to hear you explain everything and even the small little details. Loves his wife.
He’d wash the dishes after dinner, he’d lock all the doors and windows making sure that nobody dares to harm you, even if they tried they wouldn’t get past him.
He’d massage your swollen feet before bed, kissing your pink polished toes and whispering “I love you.” Each time. He’d cuddle you, even if the pregnancy pillow is in the way, he’d always have a part of him touching you.
