Sunny Flax Gluten-Free Crackers
This recipe originally comes from my book Slimming Meals That Heal. Omega-3 fatty acids in flax seeds act as essential building blocks for cell membranes and help reduce inflammation. Both turmeric and ginger are powerful anti-inflammatory spices, making this the ultimate cracker choice for healing. It may seem like a lot of work to make your own crackers, but this recipe takes only a few minutes of prep time. To prepare these crackers, you will need a dehydrator or a parchment-lined baking sheet.
Ingredients: 1 cup         flax seeds 1 cup         raw sunflower seeds 2 cups       filtered water (used to soak the seeds only) 2                 lemons, juiced, or 4 tbsp lemon juice 1 tsp          honey or 1/2 packet stevia powder 1 tbsp        minced fresh ginger 1 tsp          turmeric 1 tsp          grey sea salt or pink rock salt
Directions: 1.  Place the flax and sunflower seeds in a glass jar and then pour in the water. Soak overnight. (If you’re in a hurry, you can make the crackers with just a 30-minute soak, but the flax will not sprout in that time. Otherwise, the recipe otherwise turns out about the same for taste.)
2.  In the morning (or 6 to 8 hours later), drain off the remaining liquid. (There might not be much.)
3.  Put the flax mixture in a food processor fitted with the S-blade, along with lemon juice, honey, spices, and salt. Blend for a few moments to break down the sunflower seeds.
4.  Evenly spread the mixture onto your dehydrator fruit-roll trays or onto a baking sheet lined with unbleached parchment paper.
5.  If using a dehydrator, set at 115°F (50°C) for about 12 hours.
6.  If using an oven, use the lowest setting and crack the door open with something heatproof, like a ball of tinfoil or a wooden spoon, to allow the moisture to escape. It will take anywhere between 3 hours (if you have convection oven) to 8 hours (if you have an older stove) to dehydrate. Be sure not to cook the flaxseed or you will damage its delicate oil. You should be able to separate the crackers from the tray easily. If it is difficult to separate, they are not ready yet.
7.  When nice and dry, break into big pieces. Transfer to an airtight container and store in a dry place.
Makes 24 to 36 crackers.

Hot Detox Flax Wrap
This wrap from my book Hot Detox, is perfect as a replacement for sandwich bread. I love it with every filling imaginable. Try sprouts and a pickled vegetable (ideally fermented) with your choice of protein. You may eventually want to double the recipe, especially if you own a larger dehydrator, once you realize you can’t live without these! Flaxseeds are an unparalleled source of lignans, which balance the hormones. They are also an excellent source of omega-3 essential fatty acids and a good source of vitamins and minerals, including selenium, that support detox.
Ingredients:
1 1/2 cups        whole flaxseeds (to make 2 cups ground flaxseeds)
1 1/2 cups        filtered water
2 cups              grated carrots (use a food processor)
2 tbsps             coconut oil
2 tbsps             organic lemon juice
1 tbsp               dried parsley or cilantro or 1/4 cup chopped fresh
1 tbsp               onion flakes or 1/4 cup chopped fresh onion
2 tsps               Italian seasoning (basil, oregano, rosemary, sage, savoury and thyme)
1/2 tsp              ground turmeric
1/4 tsp              ground ginger
1/2 tsp              pink rock or grey sea salt
Directions:
1. Using a spice or coffee grinder, grind the flaxseeds. (If you don’t have a grinder, use pre-ground seeds.) Mix the ground flaxseeds with the water in a bowl and put aside.
2. Place the grated carrots in a bowl, and switch to the S blade in your food processor. Add the remainder of the ingredients to the processor, including the flax mixture, occasionally scraping the sides so that everything gets well blended together. At the end, pulse in the carrots to maintain their texture.
3. Preheat the oven to 150°F or dehydrator to 125°F. Line a few baking sheets or dehydrator trays with parchment paper. With moistened hands, spread 1/2 cup of the mixture as evenly as possible in a circular motion until it’s spread as thinly as a tortilla (1/8 of an inch). Repeat with the rest of the mixture. You should end up with 6 wraps.
4. Bake in the oven for 5 to 7 hours or dehydrate for 5 to 8 hours, flipping the wraps halfway through the time to ensure even drying. Avoid doing this overnight. If you go too long without checking, the wraps may lose their pliability and resemble a cracker. There is a big variation in cooking times because every oven is different.
5. Let the wraps cool for 20 minutes, then place in a sealed bag to stay moist and soft.
Makes 6 wraps. Will keep in the fridge, in a sealed bag, for 1 week; can also be frozen for up to 4 months.
Tip: Freshly grind whole flaxseed whenever possible to ensure the highest amount of omega-3 nutrition. Golden flaxseed is prettier than brown flaxseed for this recipe.

Pinza is a Dubai-based restaurant, a home grown product made in UAE (JVC & Business Bay) which was launched last December 2015. And the good news is, is that it has reached in Abu Dhabi now and it opened its first branch in the Emirate in Umm Al Emarat Park (  AED5 entrance fee ).
