Senap och Dillsås (Mustard and Dill Sauce)

Senap och Dillsås is best known as a condiment to Gravadlax or pickled herrin, but I find it quite versatile, and quite like it with meatballs (köttbullar), too!
Ingredients (makes about 1/2 cup):
2 heaped tablespoons Dijon Mustard
3 heaped teaspoons pure raw honey (I used the Rosendals Trädgårds honig I bought in Stockholm’s last Summer, of course!)
2 tablespoons colza oil
1/2 lemon
6 to 8 sprigs fresh dill
In a small bowl, combine Dijon Mustard and honey, and stir well, until perfectly combined. Whisk in colza oil, until sauce thickens a bit, like the very early stages of a mayonnaise. Then squeeze in the juice of the lemon, and whisk it in thoroughly.
Finally, finely chop dill, and stir into the sauce.
Serve Senap och Dillsås with Gravadlax or pickled herrings...

hi, hope you're well! :)) I have a few specific and definitely not important questions about prince simon that you may have already adressed in the past, but do you speak spanish/swedish or do you just translate the phrases you want to include in the fic? also, are all those letters and queer monarchs a real thing or do you make them up? oh and last thing, are all those things wille shows simon in their stockholm tour at chapter 1 factual?

do i speak spanish/swedish - i speak a little bit of spanish, took lessons for about 7 years but bc i don't get the practice, i unfortunately forgot so much. i love that i'm getting back into it more now bc of yr/this fic though and so yeah, i use a lot of google translate and also have a very dear friend who's helping me out with language and cultural questions and everything!
i don't speak swedish at all, but i do know some basic norwegian so that helps me a little bit. but again, mostly i just translate stuff and hope for the best haha
are the letters and queer monarchs real - i found out about prince eugen completely by chance. he was a real prince who's rumoured to have been gay and i did find a throwaway line about him writing letters to a friend and i just rolled with that. so idk how steamy those letters got lol, i completely wrote those myself. the actual queen kristina i mentioned also was a real person and if you got time, you should totally check out her wiki page it's fascinating. did i mention any other queer monarchs by name? i don't think so.
stockholm tour - all the places they went to are real and the stories behind them are also real. i did take some liberties describing rosendals trädgård just bc i've never been there so despite looking at a lot of pictures, i couldn't be a hundred percent sure what the gardens and stuff look like. but yes. everything else is factual.

• 20/10/2019 Stockholm-My Birthday: unfortunately we woke up to a rainy day, but that didn’t stop us from going on with our plans! After spending the morning visiting the gorgeous Millesgården just a little bit out of Stockholm, we rushed to a place that mom wanted to go so bad before 5pm!! To be honest I couldn’t understand why she insisted to see this place, because the city is full of lovely cafes but once we arrived, I just learned that sometimes I should simply keep my mouth shut 😗😂 It was a place like I’ve never seen before. After a little walk in the calm woods, you could see these organic fields and gardens surrounding a big green house where inside there’s a fairy looking caffè! It was full of people both inside/outside and after grabbing the food that we would have stuffed our faces with, we sat at a table together with two tourists and a Swedish family. I think I was already lost in the food because when I got my senses back, mum was busy in a full conversation with the kind mother of that Swedish family. She then got up and told us that she had to take a picture of the two of us, seated where we were. And that’s how we got probably the best mother-daughter portrait from the whole trip! Swedish Vanilla and Honey Blueberry Cheesecakes

These light and delicious Swedish Vanilla and Honey Blueberry Cheesecakes are my contribution for Dessert Week under the Great British Bake Off Tent -and for International Week under last year’s Great Canadian Baking Show Tent, while we’re at it! The inspiration is my trip to Stockholm last year. I used the last of honey made at Rosendals Trädgård I’d bought when I visited Djurgården, and flavoured the blueberry compote with cardamom because Kardemummabullar became my favourite fika treat that Summer! Altough the cheesecakes are morish, they really aren’t heavy and end a meal beautifully!
Ingredients (makes 2 cheesecakes):
1 tablespoon unsalted butter
3 Havrekakor
135 grams/ ounces quark or skyr, starined
1/2 plump vanilla bean
3 heaped teaspoons pure natural honey
1 large egg
5 large cardamom pods
1 tablespoon unsalted butter
1/3 cup fresh blueberries + a few more for garnish, rinsed
3 tablespoons blueberry cordial or syrup (like Ikea’s Blabars Dryck)
Butter two cm/” pastry rings; set aside.
Melt butter over a low flame in a small saucepan. Remove from the heat.
In a mortar, crush Havrekakor into crumbs. Stir in melted butter until well-combined. Divide Havrekaka crumb mixture between each of the pastry rings, and press firmly at the bottom to make the cheesecake base. Chill in the refrigerator, to set, at least half an hour.
Preheat oven to 160°C/320°C. Line a baking tray with baking paper.
Spoon quark into a small bowl. Scrape the seeds off the vanilla bean, and add to the bowl, along with the honey. Give a good stir until smooth and well-blended. Whisk in the egg, until well-combined.
Gently place pastry rings with chilled Havrekaka base onto prepared baking tray. Pour vanilla and honey cheesecake mixture onto the base, dividing it equally between both rings. Place in the middle of the oven, and bake, at 160°C/320°F, 30 to 40 minutes.
Meanwhile, make the cardamom blueberry compote. Heat a nonstick saucepan over high heat. Add cardamom pods, and toast, a couple of minutes. Remove from the heat. Crush cardamom pods and release the seeds. 
Reduce heat to medium, and melt butter in the saucepan. Add cardamom seeds, and cook, a couple of minutes more. Then, stir in blueberries, and cook until they soften and release their juice. Stir in blueberry cordial, and simmer, a few minutes, stirring constantly until compote thickens slightly. Remove from the heat and let cool completely.
Once the cheesecakes are baked, let them cool in the oven, with the door ajar, about 10 minutes. Then, chill in the refrigerator, at least one hour.
Gently run a knife along the pastry rings and lift them off. Place each cheesecake on a dessert plate, and top with cardamom blueberry compote and fresh blueberries.
Serve Swedish Vanilla and Honey Blueberry Cheesecakes immediately.

Stockholm, Sweden - Part 2
The next morning we woke up early and decided to explore Djurgården, the island in the middle of Stockholm. This island is accessible by train but we figured we would try taking a ferry there since it was about the same cost anyway. The ferry did get busy though because it was a weekend and the island is also host to other attractions like a theme park.

Our main reason for going there was to walk around Rosendals Trädgård. The garden on the island is fairly large and has a nice greenhouse/coffee shop in the middle of it. We stopped there for some breakfast and coffee before parting ways. I wanted to explore more of the island and I felt bad because Howard and his mom were still jet lagged from coming back from the states.

My first solo stop was the Vasa Museum. It houses one of the most fully in tact ships in the world. I was really impressed by this museum and spent nearly 2 hours going through the whole ship and reading about its history.

I took the scenic route and walked around to my next destination: Omnipollos Hatt. This was recommended to me by another friend since I enjoy craft beer. Their beers were...strange, but interesting. They had a slushie beer in addition to a popcorn-type. The bartenders were super helpful and the location was in the heart of many restaurants and other bars. It was kind of a hipster area but I enjoyed it.

My final stop before heading back for my flight out of Stockholm was at Meatballs for the People. Yes, I needed more meatballs. But this place had a variety of different kinds. It normally gets busy but I was lucky to get a single spot along the window.
I had to head back to Howard's place to pick up my stuff at this point but I really wish I had more time in Stockholm. I think there was more to see and definitely more to eat. I know I did not do this city justice which is probably why it didn't land as my favorite for the trip but I owe Stockholm another trip soon.
