Before: Preparation for Jollof rice sauce (I cook & store the rice separately). Approximately 7.75 pounds of ground beef 🥩, celery, green peppers 🫑, red peppers 🌶, tomato 🍅 paste, crushed tomatoes 🍅, diced tomatoes 🍅, onions 🧅, & an assortment of spices.

Our first stop in Africa was Accra Ghana. We toured the Kwame Nkrumah Memorial to this leader who helped Ghana to independence and served as its Prime Minister and President. We enjoyed jollof rice - an iconic West African dish. American sociologist and historian W.E.B. DuBois is much revered and is buried in Accra.

To make authentic Jollof rice, you’ll need:
Ingredients:
• 2 cups long-grain parboiled rice
• 1/4 cup vegetable oil
• 1 onion, finely chopped
• 3 tomatoes, blended
• 1 red bell pepper, blended
• 1 green bell pepper, blended
• 3 cloves garlic, minced
• 1 teaspoon ginger, grated
• 2 cups chicken or vegetable broth
• 1 teaspoon thyme
• 1 teaspoon curry powder
• 2 bay leaves
• Salt and pepper to taste
Instructions:
1. Rinse the rice in cold water and set aside.
2. Heat the vegetable oil in a pot, sauté the chopped onion until golden.
3. Add minced garlic and grated ginger, cook for another minute.
4. Pour in the blended tomatoes, red and green bell peppers. Cook until the mixture thickens.
5. Stir in thyme, curry powder, bay leaves, salt, and pepper.
6. Add the washed rice to the pot, stirring to coat it evenly with the tomato-pepper mixture.
7. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer until the rice is cooked and the liquid is absorbed.
8. Fluff the rice with a fork, remove the bay leaves, and let it sit covered for a few minutes before serving.

Jollof rice originates from Senegal and is now a popular dish in many West African. Each country has its own version, I made the Nigerian version by using parboiled rice and adding bay leaves. 👩‍🍳
But no matter which version you make, Jollof rice will always be a star at the dinner table! 🥳

RECIPE (5 servings each 275cal/4P/32C/12F):
-1 onion
FRY in 1/4 cup (60ml) oil
-a thumbsize piece of ginger
-3 cloves garlic
-2 bay leaves
FRY for 2-3mins
-5 Tbsp tomato paste
FRY 3-4 mins
Sauce base:
-1 red pepper
-2 tomatoes
-1 Chili (or more)
-1 onion
BLEND/ADD to the pot/SIMMER 10mins
-2 cups parboiled or long grain rice
-1 1/3 cup (330ml) veg stock
-1/2 Tbsp curry powder and thyme
-salt to taste
STIR IN/SIMMER on low heat for 15-20mins

It is served with the rice spread at the bottom, topped with fish, lamb chops, and an assortment of chunky vegetables like yuca, carrots, okra, sweet bell peppers, cabbage, and squash cooked in the jollof sauce which is later used to cook the rice as well.
