a few weeks ago i discovered that the grocery store bakery sells half loaf sizes of bread. which is great because i cannot eat a whole loaf of bread before it goes bad.
today though i didn't see any and this time when the lady behind the counter asked if i needed any help i didn't just say i was fine. i asked about the half loaves of bread.
and she split up a full loaf for me! good things do happen when you ask for them !

[Image description: two photos of tteokbokki. It’s garnished with nori and white and black sesame seeds. In the bowl there is also halved jammy egg and two slices of scallion pan-bread. End image description.]
don’t be fooled by the portions i divided – turns out real rice cakes are much more filling that pretend ones 🛌

Nourishing Amy sez:
This vegan recipe is so cheesy and quite “meaty” that you’d never guess they contained no dairy, no eggs, and no animal products. They are light, fluffy, and tender while being easy to make.

Cheese Loaf Bread
Adapted from: https://www.womanscribbles.net/cheese-loaf-bread/#recipe
Recipe
Bread
2 1/4 cup flour
3 tbsp sugar
1 tsp salt
2 1/4 tsp active dry yeast
3 tbsp butter
1/2 cup water
1/4 cup milk
1 large egg
Filling
4 stalks of scallions
1 cup grated cheddar cheese
1/2 cup grated parmesan cheese*
1 tsp garlic powder
In a large bowl, combine the dry ingredients (flour, sugar, salt, and yeast). Microwave the butter, milk and water until fully melted and combined. Mix in the butter mixture into the dry ingredients until combined and then add in the egg and stir until combined. Turn the dough onto a floured board and knead for about 6-12 minutes and then let the dough rest for 10 minutes in a bowl at room temperature. Roll the dough into a 14"x10" rectangle and then sprinkle the powdered garlic, cheeses, and scallions. Roll the dough into a long log and then cut it in half along the length. Braid the dough and put it into the loaf tin and let rest for 1 1/2 hour at room temperature. Then bake at 350F for 43-46 min, putting foil lightly on it 1/2 way through the baking.
* I used powdered parmesan and it still came out pretty good.
