I swam (swum // swimmed) for the first time this summer today! My neighbors are kind enough to let my mom and I use there pool when they are at work, and today was basically the first day I actually felt up to going to the pool. I did a few laps of the pool in my fluttery little kicking style, and then just floated in place (that works my legs and core I guess, or so my mom told me but I don’t know). I also spent a good 20 minutes back at my own house laying on the beach chair in the sun and tanning myself ( and by that I mean getting sunburn). 
Later, after dinner, I went out and did my usual 3 mile walk around the neighborhood. It was nice, I didn’t run into any rain, sprinklers, or giant dogs so I was happy with it. Downside of the work on my legs is I now have a cramp that is basically squashing my entire foot in on itself. Hazards of I suppose. That’s okay. 
Remember yesterday’s post about having some of my garden harvest in dinner tonight? Well my mom (bless her shes the only one in the family that can really cook) made fried zucchini rounds and a salad with some of our produce in it! I use the Gluten Free Panko Breadcrumbs and they are the best thing ever if you want/need fried stuff thats breaded and GF. And the salad has our home-grown radishes, cucumbers, and tomatoes in it!.

OK, so I have been asked in a few messages to compile a master post containing some of my food and recipe content. So this will be it. I will add on as much as I can.
Notes:
Some are gluten free and some are vegetarian/vegan friendly. If they are not, why to try replacing some ingredients? Have fun with your cooking!
Measurements are not always listed, as I tend to cook by taste and smell rather than actual measurements. But in some I’ve tried my best, haha.
These recipes are either of my own creation, or passed down through the generations. Moth’s and Lorelei’s Veggie or Vegan Sandwich Tips:
To preface this I’m kind of a picky eater, especially about textures. Most delis in my area's offerings for vegetarians are made up of various roasted veggies, avocado and cucumber, resulting in a very GOOPY unappetizing sandwich. 
I also don’t subscribe to the idea that vegetarians should only eat vegetables,  and that fake meats are all flavorless and pointless. Most of the tastiest vegetarian sandwiches I’ve had include fake meats.
Nothing I’ve written here is crazy insightful or revolutionary but if anything here helps someone make a tasty vegetarian or vegan sammy I will be happy.
Additions specifically written by my lovely girlfriend Lorelei are marked (L) for Luigi.
Sandwich thoughts below the cut!
Fake Meat:
I will start with the cheaper, easier to find fake meats. Good vege sandwiches should be accessible IMO. I believe these brands will be more widely available and you won’t have to go to a specialty health food store to find em.
Morning Star Farms Bacon:
The MSF bacon is salty and savory and can be as crispy or chewy as you like. Just cook it a couple minutes on either side in a dry non-stick pan. I’m not sure that it tastes exactly like bacon, but it’s strong point is that it has a good flavor all on its own which is what I think defines any good vege meat.
Morning Star Chik Patties:
A great chik’n patty if you are looking for a crispy chicken sandwich, easy to cook in the skillet or the microwave (both ways come out tasty and crispy). Overall Morning Star has good stuff and is widely available.
 Tofurkey: 
really succeeds at a lunch meat texture and has a subtle savory flavor that allows it to support other sandwich ingredients. 
 Fancier Fake Meats:
Green Slice Meatless Deli Slices:
(WARNING not all of them are vegan some use egg white) I’ve often wondered why there was no vege ham alternative, on a recent grocery run I discovered there was one! Green Slice’s applewood smoked slice (I have only tried this flavor, but I’m sure the others are also good) these have a lovely very meat-like texture and flavor. My only quibble is that they are very small and there aren’t that many.
Sweet Earth Facon:
This bacon smells amazing and tastes very bacony. It is cooked in oil, make sure to use paper towel to blot off extra oil.
Light Life Smoky Tempeh Bacon:
Tempeh itself gets a bad rap (you have to cook it in a very specific way), but honestly for sandwiches tempeh is not worth using unless its smokey tempeh bacon. It has a lovely flavor, but it is a very different experience to the other two facons in this list. Imagine it as the contrast between your typical everyday bacon and a thick cut, pepper corn encrusted, artisanal bacon. It is thicker and chewier, but has a delicious smoky sweet flavor.
Tofu:
Pan Seared Tofu:
Ok if you’re really not into fake meats or you just like tasty tofu here is a home made, very tasty, and pretty all purpose recipe for a tofu sandwich filling. This recipe is from The Pho Cookbook by Andrea Nguyen. Best part about it, no need to press! Cooking it in the pan before adding oil drives off water super well, and gives a really unique tenderness. We eat this on it’s own, it’s that good!
Ingredients: firm tofu, 1 TBSP neutral oil, 1 TBSP soy sauce (optional in this case if it doesn’t fit the VIBE of your sandwich, if you leave out the soy sauce make sure to compensate with other umami ingredients in the sandwich) 
Instruction: cut your tofu into desired shape (triangle or domino or whatever) put them in a DRY non stick pan, and drizzle with soy sauce on both sides (if desired, salt and pepper could also be used). 
Cook on medium without disturbing the pieces for ~5 mins. 
Drizzle with oil and then flip them, allow the second side to cook for ~5 mins.
To check if the second side is ready try shaking the pan a little, if the tofu moves you can flip. If they are not to your desired brownness flip again and allow to continue cooking until you are satisfied. You are looking for a mottled brown color.
Crispy Tofu:
If you are looking for a crispier tofu here is a homegrown method that I’ve learned through trial and error, also a great addition to spring rolls.
Ingredients: firm tofu, neutral oil, salt and pepper (any other seasoning you like). OPTIONAL: a sauce as in orange sauce, teriyaki, or even BBQ (never tried BBQ but it could work.)
Instructions:
Most important thing for crispy tofu is to drain and PRESS IT. I would press it for between 15-20 minutes. Either cut up your pieces to desired shape and size before pressing or press the whole block if you want to prepare a big portion.
After they are pressed and the moisture is removed, season your tofu. I’ve experimented with rolling tofu in cornstarch to add an extra crispiness but it should crisp up on its own. You may just sprinkle your desired seasoning on both sides as you like. 
In a non stick pan fry tofu on both sides in oil (enough to coat your pan) on medium high heat until golden brown and crispy. When cooking tofu I’ve heard it’s good to leave it undisturbed before flipping to prevent bits sticking to the bottom and preserve inner softness. Try shaking the pan, if the tofu moves a bit it is not going to stick to the pan and lose it’s crispy outer layer. When they are finished cooking set the tofu on a paper towel to remove any excess oil.
OPTIONAL: in the last minutes of cooking add a sauce of your choosing, flip the tofu to coat.
Fats:
Avocado:
Avocado is a great addition to almost any sandwich, especially if you are vegan or lactose intolerant. It can easily take the place of cheese or mayo in 99% of sandwiches.
Vegan Cheese:
My girlfriend has tried MANY vegan cheeses and has found all of them to be disappointing. So we have no recommendations for vegan cheese. 
Garlic Butter:
A tasty spread to up your sandwiches flavor. we don’t have a recipe with EXACT measurements, this is all to taste. This can be applied to any sandwich for extra flavor and fat.
Ingredients:
A couple spoonfuls of Butter/Vegan butter
1 small garlic clove (or garlic powder)
Black pepper
Italian herb blend (or pretty much any green herb, fresh or dried [dried preferred] will be tasty)
Honey (if vegan just leave out the honey)
Instructions: In a small bowl grate your garlic clove into the butter, add all other seasonings and the optional honey, and mix. Make sure and taste, if you find it under flavored add more of the flavor stuff, if it is overpowering add more butter (this can keep in the fridge if you end up with too much). Then just spread the desired amount on your toasted bread.
(L) Mayonnaise:
Ok listen, it's stinky. But so is almost every cheese. It adds more of a feeling than a flavor, the fattiness can really uplift a lot of sandwiches, especially with tomato. But, if you are opposed to mayo for whatever reason, avocado, cheese, even olive oil, will fill this role. (not sure about vegan mayos but it can't be that hard to nail right? (Moth does not endorse this pro mayo stance)
(L) Vegan/Dairy freeRanch:
I don’t like ranch, but this homemade stuff really justifies it. I used normal mayo but it should work with vegan mayo. This is a very loose recipe, so tweak it to what works for you
½ cup mayonnaise (egg or plant based)
½ a lemons worth of juice
¼ cup oat milk (soy and almond milk don't play nice with savory flavor)
1 tsp garlic powder
Salt and pepper to taste
1 tbsp fine chopped fresh dill (or dried, or any green herb0
Whisk the mayo, milk, and lemon together. Add your herbs, and let it sit in the fridge overnight
This is the most important step, this time allows the garlic powder to rehydrate and the herbs to steep that give the ranch its signature flavor. Ranch is basically garlic powder sauce.
I have not tested this ratio much (ok fine at all), so trust your gut! 
Also fun fact,  juice of 1 lemon + 1 cup of oat milk + time = 1 cup of vegan buttermilk!
MISC:
Deli dressing:
You can buy this bottled in store or make your own at home easily. It will add that deli je ne sais quoi to a sandwich. Works best on a simple sandwich that might otherwise be lacking in flavor.
Ingredients:
Olive oil 
Red wine vinegar (any vinegar should do TBH)
Italian seasoning (again some dried oregano or other similar dried herbs should be fine)
Salt and pepper
OPTIONAL: put some vinegar hot sauce (tapatio, cholula, taco bell packet, etc) in that bad boy.
Instructions: mix it UP. This is another recipe that I usually just measure out by eye and taste
Falafel: I am not very experienced in making falafel so I don’t have a recipe on hand, but they are yummy.
Sprouts: a welcome addition to almost any sandwich, earthy, light and crunchy. They are also really easy to grow in a jar at home.
Pickles: love these funny dudes, they don't play well with sweeter sandwiches though. Use your judgement.
Chips: put em in there, 12 year olds know what they're doing.  
Dutch Crunch: objectively the best sandwich bread. 
Coleslaw: if you dislike coleslaw maybe you’ve only had a mayo based one. The only good coleslaw is vinegar based. Thin sliced cabbage, olive oil, vinegar of choice, honey (or vegan alternative) a spoonful of grainy mustard and salt and pepper. Great on a chik’n based sandwich.
Vegetarian Sandwich Ideas:
I don’t really have anything ground breaking here but here are some of the tastiest sandwiches I’ve made. If for some reason you want to try making one of these you can add or leave off anything you like. Salt and pepper all your sandwiches. And add cheese to any if you eat cheese!
BLAT or BLA:
To start this off, I don’t like tomatoes in sandwiches, I know I’m not correct, but you can add tomatoes if you want.
Ingredients: 
Garlic butter
iceberg lettuce (or any lettuce)
avocado
facon (my fav is morning star farms, a fancier facon such as smoky tempeh bacon is also good but has a completely different flavor and texture)
tomatoes (optional because I do not like them)
(L) TOMATO TIP: salt and pepper your tomatoes and let them sit a moment, also if its not tomato season cherry tomatoes are ur best bet for a decent tomato from the store.
Orange Tofu Sandwich:
A note: feel free to substitute a different sauce or to omit sauce entirely. The pan seared tofu makes a good sandwich filling without any extra sauce.
 Ingredients: pan seared tofu, crispy tofu, or gardein orange chikn nuggets (these come with a packet of orange sauce)
Orange sauce
Iceberg lettuce (other lettuces or even finely chopped cabbage will be good as well)
Avocado
Thin sliced sweet or bell pepper 
(L) Fancy “Ham” on Rye:
Ingredients:
Rye bread The rye bread adds a lovely funky herby note to the entire experience. Its what makes it fancy.
Green Slice applewood smoked(or any You could use tofurkey, but honestly if you find it/afford it green slice has an amazing texture and deep flavor that tofurkey doesn't. This is a simple fancy sandwich, splurging is gonna go a long way here.
Garlic Honey butter
Iceberg Lettuce (again or any other lettuce, or a mix with arugula and spinach)
Optional mayo: (L) i adore mayonnaise on this kind of sandwich, it really lets the other flavors shine. I havent tried it with avocado, my gut says it wouldnt work as good but I’m not a cop put some on there avocado is yummy. 
Optional cheese a sharp cheddar or fancy gruyere. 
Crispy Chik’n Sandwich:
Ingredients:
Morning Star Chik Patty (spicy one if ur spicy)
Facon (strong recommendation for morning star on this one) 
Vinegary vegan coleslaw (or any lettuce iceberg is recommended and easier on the fly)
Dill pickles (pickles+crispy chicken very yummy, we specify it on this one because its almost necessary for a spicy sandwich.)
Condiments of choice (ketchup, BBQ, honey, hot sauce etc)
Deli Style Sandwich:
A really basic sandwich, add whatever other sandwich fixings you like.
Ingredients:
Tofurkey
Sprouts
Iceberg lettuce
Sandwich dressing
Avocado 
Pickle or Cucumber

All Alone
Mickey left this morning to see his mother in Sugar Hill, Georgia.  That’s just outside of Atlanta but you’d never know it, it’s well removed from the insane hustle and bustle of the city.  He’s run down there to drop off his mother’s birthday gift and get it set up.  Her kids purchased her an Apple watch and I know she’ll make the most of it.  She’s sure as heck not afraid to use new technology.  When I’m in my 80′s I’ll probably ask for gifts like loud, jangly jewelry and cat hammocks.  I know who I am.  So, having said all of that, I’m a single lady for the night.  I have 24 hours to binge polygamy shows and stuff my face with Mickey’s least favorite veggies. That’s exactly what I’ve been doing.
Just after lunch I peeled and chopped some carrots for the crock pot. By dinner time I was ready to dig into the deliciousness.

I could eat the whole pot.  I pinned this recipe a couple of years ago and have made it many times, it ‘s always so good. Ladies and gentlemen, meet brown butter carrots.  You’re welcome.
Slow Cooker Brown Butter Carrots
Serves Serves 10    
This sweet tender glazed carrots recipe gets a boost from brown butter. A secret ingredient puts these slow cooker carrots over the top!
Ingredients
2 pounds carrots, peeled and cut into 1-2 inch chunks
1/4 cup (half stick) salted butter
1/2 teaspoon salt
1/4 cup brown sugar or raw sugar
1 or 2 bay leaves
1 teaspoon good vanilla
fresh parsley or sage, chopped (to garnish)
Instructions
Peel and slice the carrots. I tend to like the thicker chunks of carrot, so don't go too crazy, just roughly chopped is fine. Set side.
In a small saucepan add the butter. Turn the heat to medium or just above medium. Stir occasionally until the butter starts to foam and ultimately turns brown. There will be silty brown "bits" that have separated from the yellow liquid. Immediately transfer the mixture to your slow cooker.
Add the salt, sugar, bay leaves, and vanilla and stir. Add the carrots and stir to coat.
Cook on high for about 3 hours or until tender.
Sprinkle with chopped parsley or sage.
If you’re out of bay leaves or you lack the parsley for garnish, it will still be every bit as good.
I also made a copycat version of Chick-Fil-A’s Kale Crunch Salad.  Have you ever tried it? To die for.  I have to say, I nailed it.  The secret to yummy kale is a good massage.  A little bit of olive oil on the leaves and a little rubbing make it so tender - let it sit in a bowl for about 30 minutes while you make the rest of your dinner., it’ll be perfect.  This is the dressing that I mixed up:
¼ cup unsweetened applesauce
2 tablespoons of water
2 tablespoons of extra virgin olive oil
4 teaspoons Dijon mustard
1 tablespoon honey
pinch of salt & pepper
To the kale I added some finely chopped green cabbage and chopped toasted almonds (just like Chick-Fil-A!).

You can see the evidence of my baking in the background, but focus on the CUTE jar that’s holding my dressing.  My sister and I sent each other jars for Christmas because we are just that exciting.  I received six just like the one pictured, and hers are similar.  The jars hold 2 cups - perfect for leftovers, snacks, baking supplies like brown sugar or sprinkles, the possibilities are endless!  I’m crazy about mine.  So I dipped a tablespoon into that jar and drizzled my kale salad with dressing and then tossed it.  So very simple, and so very good. I gobbled up that salad and then added carrots to my plate.  I also cooked one of these.

I’d never tried them before and though I’m no fan of processed foods, the ingredient list on these was not too scary.  I thought they were a tad too salty, but that’s probably because of my flavor choice.  Also, had I eaten it on a bun with lettuce and tomato that might have made a difference.  But I made this pitiful plate...

If I’d also piled some salad on the plate it would have looked a little better, but I’m home alone and who cares?  Don’t judge me.  All I know is that Mickey would have felt that he was being punished if I gave him a plain chicken burger, kale salad, and carrots.  I was in Heaven!  He’ll be home around noon tomorrow and I’ll probably make a pot of chili for dinner.  He’ll like that and I can polish off the leftover carrots and kale....if I don’t eat them for breakfast.  That’s as exciting as it gets when I’m home alone.  The baked goodies are ready to go, my tummy is full of good food, and I’m going to watch something super girly on Netflix.  The cats will be thrilled with all of the space on the bed tonight so I’ll have plenty of company.  Just us girls. And since this blog has been so boring I’ll leave you with something that made me laugh out loud.  These kids meant well.

Day 4: Day late... SORRY!
OOPS! I forgot to post last night. SORRY!
Saturday was interesting. Part of me forgot I was on eating schedule. Boyfriend and little Dooder came over around noon and we did some Dad’s day shopping (I helped Dooder pick out something nice for his Daddy 😊) and I really kept to eating within the planned foods. Today will be a bit harder than I would like, but I will explain that a bit later. 
ON TO THE FOODS!
So I kept to the food schedule I had set for myself during the work week for a few reasons. The first one being my silent FitBit alarms were already set that way and I am a LAZY individual. The second being, my body natural wakes up early and goes to sleep early. What mother nature has destined for me must be what’s best, right? 
7 AM - Breakfast OMR - Double Peanut Butter Crisp Bar 
Not a fan of this one... just a little too dry for me... but I also went straight back to my bed after eating and just watched random episodes of random shows (in reality, I binge watched Chef Anne Burrell’s instagram... #sorrynotsorry) ⭐⭐
10 AM - 2nd Breakfast OMR - Golden Chocolate Chip Pancake
This was pretty good! I made one big pancake and ate it plain Jane. Would have been better with some syrup or butter, but definitely yummy! I have a mini waffle maker headed my way this week to try to make some WAFFLES! ⭐⭐⭐⭐
1 PM - Lunch OMR - Chicken Flavored Vegetable Soup
Oh man... this needed SEASONING! I had to use one of my 3 condiments for some Chalula Jalapeno Pepper Hot Sauce for this soup! Just felt really bland for me. But hey, I like spicy and super flavorful foods. Nothing a little hot sauce can’t fix. ⭐⭐⭐
4 PM - 2nd Lunch OMR - Honey Mustard Sticks
Still had a weird after taste... but I discovered my mom loves them! Me thinks I might be trading for something... ⭐⭐
6:45 PM - L&G Dinner - Tilapia with Cauliflower rice and Zucchini 
Sooooooooooo.... I completely made up this recipe and it was okay.  I will post it in the Recipe Vault! Later this week. ⭐⭐⭐
9 PM - Desert OMR - Simple Peanut butter Chocolate Chip Cookie Bar
YUM. ⭐⭐⭐⭐⭐
Sorry to rush this post, but I have SO much to do today (TWO different outings that I am trying to plan around! 😓) I promise to post as soon as I can this evening!

Um so yeah.
I got a new chromebook which is legit one of the best investments I’ve made in quite a while. One problem, I don’t remember my newer tumblr password and email I had set up for my happy new account. So I am stuck here with an older tumblr I made years upon years ago. I was browsing through some of the archive posts and ugh was I whiny little pain in the butt complaining about such stupid things. Anyways! I thought it might be kinda fun perhaps to do a survey that I did in 2013, yes 2013 oh my that seems ages ago. My plan is to have my original answer on top followed by the 2019 answer below it. Because why not? Here we go!
1: Do you sleep with your closet doors open or closed? The closet must be closed! Still closed please.
2: Do you take the shampoos and conditioner bottles from hotel? Sometimes. Not as often as I used, because I honestly don’t ever use it. lol
3: Do you sleep with your sheets tucked in or out? Out? In because that’s how Dan likes it. 
4: Have you ever stolen a street sign before? No. Nope. 
5: Do you like to use post-it notes? Sometimes. Sure, I leave Dan random notes in the morning if I wake up first. 
6: Do you cut out coupons but then never use them? I get coupons but sometimes I don't use them. Haha my above answer tells me two things I wasn’t worried about money in 2013 and I didn’t probably understand the question. So yeah, sometimes that will happen when they expire before I get the chance to use them.
7: Would you rather be attacked by a big bear or a swarm of a bees? Neither sound great so I guess a big bear sounds more interesting. I’ll agree with my 2013 answer. 
8: Do you have freckles? I have some. Last I checked I am the same girl, so I have some. 
9: Do you always smile for pictures? Usually. Sure, unless I am being told otherwise. 
10: What is your biggest pet peeve? I have two major ones, people snapping gum and not messaging someone back. Snapping gum is still up there and people slurping soup obnoxiously. 
11: Do you ever count your steps when you walk? Not really. Um not physically, but my phone does. Thanks Google Fit!
12: Have you ever peed in the woods? Nope. Still no.
13: What about pooped in the woods? Again nope. Still no lol.
14: Do you ever dance even if there’s no music playing? Yeah. Of course!
15: Do you chew your pens and pencils? Not usually, but sometimes I'll chew on a pen. Still sometimes I will chew a pen. 
16: How many people have you slept with this week? Zero. One.
17: What size is your bed? Queen. Queen, but now I share it with Dan. 
18: What is your Song of the week? Runaway- iio. Goodness I have no idea. 
19: Is it okay for guys to wear pink? Yeah.  Since when are certain colors unacceptable for certain people? I like that answer. Good job 2013 Christina. :)
20: Do you still watch cartoons? I don’t really watch a lot of TV. Nope. 
21: Whats your least favorite movie? I am not really big on the Hunger Games. Still accurate or scary movies would be an accurate answer. 
22: Where would you bury hidden treasure if you had some? Wait…why would I want to bury hidden treasure. Dan’s safe?
23: If you’re a girl, bra size? If you’re a guy, pants size? 34 B 32-34 B depends on the bra. lol
24: What do you dip a chicken nugget in? Plain or honey mustard. I like those previous answers, but I do sometimes like BBQ. 
25: What is your favorite food? Some type of chicken with a bread coating. Chicken and dumplings from Cracker Barrel with carrots and green beans! 
26: What movies could you watch over and over and still love? Love and Other Drugs, Crazy Stupid Love, Easy A, Something Borrowed. So chick flicks I guess. Crazy Stupid Love is still in my top favorite movies ever. 
27: Last person you kissed/kissed you? Jeffrey. Eww I am sorry 2013 Christina that sucks. Anyways, Dan!
28: Were you ever a boy/girl scout? I was girl scout back in the day. Still a true statement. 
29: Would you ever strip or pose nude in a magazine? Eh I don't know. I am no model, so no.  30: When was the last time you wrote a letter to someone on paper? On paper?  A while ago. I write Dan little notes in the mornings sometimes. Does that count? 31: Can you change the oil on a car? Nope. Still nope.  32: Ever gotten a speeding ticket? Surprisingly no. Warning, yes. lol 33: Ever ran out of gas? Close, but no. Nope!
34: Favorite kind of sandwich? Turkey and swiss with spinach toasted.  Grilled cheese!
35: Best thing to eat for breakfast? French Toast or Waffles. French Toast sounds lovely. 
36: What is your usual bedtime? Unpredictable. Still accurate, but now it depends on if Dan is around or not.  37: Are you lazy? More than some would think. I can be.  38: When you were a kid, what did you dress up as for Halloween? I don’t even know. Probably a princess.  39: What is your Chinese astrological sign? I believe I am a sheep. Correct.  40: Are you horny? No. Not really.  41: Do you have any magazine subscriptions? No. Yep, Cosmo. And it’s annoying they send out the following month way too early all the time.  42: Which are better legos or lincoln logs? I could care less. Still true. 
43: Are you stubborn? I some ways. Kinda.  44: Who is better…Leno or Letterman? Letterman. Still true hence why Letterman is still on the air? 45: Ever watch soap operas? Sometimes Spanish ones with Rach and her roommates. Nope. 46: Are you afraid of heights? Not as much. What kinda of answer was that back then? lol. Christmas of 2015 lol. 52: Do you think musicals are cheesy? Some can be. Usually.  53: Is Christmas stressful? Not really, but this year I’ll be working the holiday season so we shall reassess. Turn down the heat a little. Add the sauce to the pan/wok and stir to coat the chicken until it's nice and glossy..
Once the sauce has thickened and coated the ingredients, add in the water and gently simmer until reduced down into a sauce, this should only take 1-2 minutes..
Once the sauce on the chicken has reduced down and thickened remove from the heat. Serve up the rice and top with the delicious honey and mustard chicken. Garnish with a pinch of reserved lemon rind. Enjoy! :).

Day 2: Hey look ma, I made it!
Well, if I thought yesterday was hard, it was NOTHING compared to TODAY!

I am going to cut right to the OMRs for tonight... I am tired this evening (which seems to be expected as my body transitions from its normal food intake to this new routine). 
7 AM - Breakfast OMR - Sweet Blueberry Biscuit
This is not my kind of biscuit... I am a savory kind of person... not a big fan of sweets at breakfast time... but it did tide me over for a while! I did have to have a celery stalk before my next fueling.⭐⭐
10 AM - 2nd Breakfast OMR - Chocolate Covered Cherry Shake (with really cocoa)
Please see my previous post for this rating... If I could give it more stars, it would probably be a 12! Definitely better ice cold, however. ⭐⭐⭐⭐⭐
1 PM - Lunch OMR - Garlic Herb Smash Potatoes 
These smelled SO GOOD when I was making them... I even bragged to Boyfriend about how YUMMY they smelled and that I kinda cheated and tasted it before I was ready to eat them! However, by the time I actually at them, they were blah. Not terrible, but definitely left me wanting more food.  I had a celery stalk immediately after eating this fueling.⭐⭐
4 PM - 2nd Lunch OMR - Honey Mustard Sticks 
So these were not bad. The only reason they are getting a two star rating is because they left a funky-dunky aftertaste. There were PLENTY in the bag (similar to the Jalapeno YUMMINESS from yesterday) so I didn’t feel like I needed to eat more and this particular meal kept me full until dinner. ⭐⭐
7 PM - L&G Dinner - Balsamic Glazed Chicken with Spinach   
This was another recipe taken right out of the book that came with the program. Definitely WILL be repeated! It was packed with flavor and I made an additional serving for my dad and took the marinade and made a reduction sauce to put on top of his dish. 9:30 PM - Desert - Caramel Delight Crisp
This was like a Kashi crisp bar met some fake caramel... but it satisfied my caramel craving! It was perfect for on the go (driving home from a friends place). ⭐⭐⭐
My take away from today-- this program is TOTALLY do-able for my lifestyle!

I ended up needing to go pick up my new glasses and meeting up with my Best Friend and her son today. I had informed her that I was doing a strict diet routine/regime/food thing. Said I would bring my food with me... Not 💯percent sure how it was going to work out... BUT IT DID! I was able to easily make my L&G and eat with her and Kiddo. SUPER EASY and not a HUGE disrupt to my evening or her evening. It took a little bit of prep work (i.e. marinating the chicken and having the oven ready to go) but we both enjoyed our evening. And, as mentioned earlier, it did not disrupt our lives! 
After talking with my coach tonight, this hunger and weirdness I have been experiencing today and yesterday should subside by day 4 or 5... I think it might take a bit longer.. I am going to give it until day 7 or 8, I think (the hanger mood is a REAL thing, just ask Boyfriend).

How to Turn Salads Into Epic One-Dish Meals
Salads are such a fantastic concept because they can carry such a diverse load of flavors. The trick is in making healthier choices for what you are mixing up in your salad bowl, and realize that you don’t need the cheese, sugary vinaigrettes, ranch dressings, or croutons in order for them to be tasty. Salad building can range from super simple to completely sophisticated. There are so many options, there is something for everybody’s tastes!
14 Ways to Build a Meal-Quality Salad
You can get really wild when it comes to salad building. Between the different greens, nuts, meats, veggies, fruits, and salad dressings, one could never tire of the endless possibilities! Below are some of the best salad tips to ensure that you are getting the most out of your salads during any season or meal.
1. Go for Protein
Be sure to get enough protein into your salads if you are having them as entrees or you’ll be hungry shortly after your meal. Balance is what you must learn when becoming a professional salad builder.
Creating a Paleo entrée salad means building your dish around protein! Adding seeds and nuts are a great way to go, but don’t forget that you can prepare yourself a lovely piece of meat just for your salad, or use leftovers from other meals! Some ideas for your salad protein include, but are definitely not limited to:
Grilled or sous vide steak
Pulled pork or chicken
Coconut fried shrimp, chicken, oysters
Marinated shrimp
Pan fried, baked, or steamed fish
Crab or fish cake
Eggs, soft boiled, hard boiled, poached
Bacon
Meatballs
Sausage
Tenderloins
Roasts
Duck breasts
2. Learn Some Knife Skills
The way your vegetable or protein is pulled, chopped, ribboned, or diced can make a big difference when it comes to salad building. Learning to use the proper knives for the proper ingredients can be as simple as finding a YouTube tutorial, or taking a basic cooking skills class.
3. Spiralize and Shred
Use your veggie peeler or spiralizer to create ribbons of cucumber, summer squash, carrots, or just about anything else!
4. Add Leftovers
Try topping with last night’s leftover protein or starches. Nothing is off limits when it comes to building up your salad to create yummy texture and heartiness! The “salad rules” that exist for what can and can’t go in a bowl should be thrown out the window.
5. Build Your Own Greens Blend
Pair butter lettuces with mache, arugula with spinach, and so on. The pre-made salad mixes are handy, but if you get stuck in salad ruts and aren’t sure why, it may be your salad mix holding you back! Try reaching beyond the spring mixes and experiment with some peppery and spicy additions, sprouts, or tender heads of red leaf or bibb lettuces. You can also try adding some sturdy kale, or throwing in chard with your chopped romaine.
Amping up your leafy base can start you off on the right foot with salad building, and can also introduce a wide variety of different nutrients. Some great salad greens include:
Bibb and butter lettuces
Kale, lacinato, red or curly varieties
Chard
Red leaf
Green leaf
Romaine, red tipped romaine
Arugula
Watercress
Micro greens
Spinach
6. Think Outside the Box
Experiment with mixing cooked and raw veggies and fruits together to create interesting texture and flavor. Here are some ideas for you to get some fun and funky flavors into your entrée salad rotations, not to mention some serious nutrients:
Berries
Marinated vegetables, like eggplant
Herbs, like combining basil, mint, and cilantro
Quick pickled veggies, like sliced cucumbers, fennel, or daikon radish
Ferments, like kraut or kimchi
Roasted veggies, like sweet potatoes, squash, cauliflower, and broccoli
Dates or figs
Apples, pears, mangos, cherries
Sea vegetables, like hijiki or arame
Red, green, and Napa cabbage, shredded thinly
Olives
Grilled romaine or lemon halves for a smoky and charred flavor and texture
7. Get Your Granola On
Most of the following items can be tossed with coconut, sea salt, and raw honey and roasted at 325ºF for 15 minutes to create a savory and sweet grain-free granola to add to your salads. Or use individual items a la carte.

Sunflower seeds
Pumpkin seeds
Black sesame seeds
Hemp seeds
Goji berries
Mulberries
Unsweetened dried fruit
Coconut flake
Freeze dried berries

8. DIY Your Dressing
Making your own dressing can be really fun, and better tasting than most that are store bought! When eating Paleo, sneaky sugars and ingredients can be hard to avoid when buying packaged or bottled convenience foods, like dressings. So try your hand at making your own combos.
Try flipping the classic ratio of 3:1 fat to acid to 3:1 acid to fat. This creates more vibrant and tangy dressings which work best on hearty salads! A little hack to save you time: add all vinaigrette ingredients to a glass jar with a lid and shake to combine. Bonus, now it’s ready to store in the fridge for your next use.
Another trick: the next time you are at the end of your mustard jar, instead of tossing aside, add minced garlic, apple cider vinegar, or red wine vinegar, a dab of honey, sea salt, and some avocado or olive oil. Shake vigorously, and voila!—a mustard vinaigrette, ready to use and ready to store!
For a dairy-free creamy dressing, blend nuts and veggies together, with plenty of sea salt and lemon juice. Some of my favorite innovative creamy dressing combos:
Carrot, ginger root, apple, apple cider vinegar, coconut aminos, sesame oil, sea salt
Green apple, cilantro and some stems, jalapeno, garlic cloves, champagne vinegar, avocado oil, sea salt
Avocado, spinach, basil, garlic clove, lemon, olive oil, avocado oil, sea salt
Walnuts, coconut aminos, lime juice, a little maple syrup, olive oil, avocado oil, sea salt
9. Eat the Rainbow
The pigments which add color to your fruits and vegetables are great for collagen production, providing antioxidants, trace minerals, phytonutrients, and can even contain cancer fighting properties. (1)
Plus, colorful food is just so much fun to eat! Don’t be nervous to blend fruits, berries, seeds, nuts, herbs, and veggies.
10. Choose a Theme
If I am in the mood for richness, I will have a creamy dressing made from homemade aioli or an avocado based dressing, adding buttery olives, and tender deep greens like spinach. Or if I am in the mood for something bright and tangy, I will lean towards lime juice cilantro over red leaf lettuce with lots of spicy microgreens!
Some tips for creating themes and balance within your salads are as follows:
With bitter leaves, try adding sweeter nuts and fruits to balance, like pecans and berries or walnuts and apples.
For inspiration, I focus on foods that I like or that I am craving and try to build around that concept. Lasagna, for example, is what I am craving, so I will try to use ingredients that lend themselves to that flavor profile: spinach, oregano, basil, chili, tomatoes, olives, chicken sausage, or beef and bison meatballs with a creamy cashew-lemon and pine nut dressing!
Or maybe I have a hankering for Thai food. I would lean towards cilantro, shredded carrot, cabbage, radish, coconut flakes, lime, mango, macadamia nuts, black sesame seeds, kimchi, and shrimp, fish, or chicken.
11. Toss That Salad
I make my salads in a large metal or glass mixing bowl first, so that it is simple to dress and toss, and easier to plate it up in my prettier bowls. It may sound like a small tip, but it changes the game when your salad is evenly dressed, seasoned, and served well.
12. Keep It Simple
I eat leafy green salad with every meal, even on top of my eggs in the morning. Do not underestimate the value of simple. Lemon and olive oil with salt and pepper is just scrumptious, and sometimes just what the doctor ordered! It is always a good idea to sidle up a simple salad alongside your entrée protein.
13. Take It With You
Mason jars for salad packing are fantastic. Always start by putting your dressing on the bottom, so it doesn’t sog out your greens and more delicate toppings. Just layer up all your fixings, screw on the lid, and shake when ready to eat!
14. Reuse
For anyone who likes a bathtub-sized salad, try reusing salad greens containers, like Organic Girl. These are the perfect size for my entrée-style salads. I take it with me on the road, to the airport, into meetings, and more. I just find them so handy to pile up all my favorite salad fixings! You don’t even have to pack dressing. Just add lemon halves along with some avocado, and voila: you’ve got your acid and your fat, perfect to dress your salad and make it delicious down to the last bite.
