You’ll need:
750g Chicken breast
1/3 cup Oil
Fajita spices (1 tsp of paprika, garlic powder, onion powder, oregano, cumin powder, black pepper)
1 tbsp Salt
Juice of 1 Lemon
Sliced Peppers (preferably 2 to 3 colours)
Two white onions sliced
1/2 cup water
For the sauce
1 Avocado
3 cloves of Garlic
1 red or green Chilli
Handful of Coriander
1 cup Greek yogurt
juice of half lime
1/4 tsp Salt
Tortilla wraps
Garnish with coriander
& red chillies.
P.s do not cook for more than a min after adding the peppers & onions as it might over cook. It tastes & looks better when the veggies are still crunchy.
We are preparing a very tasty lunch lemon chicken with rice. This dish is perfect for a holiday lunch or just an everyday dinner. Fragrant chicken combined with juicy rice and fresh lemon served with rosemary gives it a special touch
Ingredients :
4 – chicken thighs
1 – cup rice
1.5 – cups water
1- lemon
Rosemary
dry herbs
For the marinade, we need :
50 ml – vegetable oil
2 tbsp – mustard
2 – cloves garlic
1 tsp – salt
zest from one lemon
juice of half a lemon
Method :
Let’s start preparing the marinade. In a bowl, mix vegetable oil, mustard, chopped garlic, salt, lemon zest and juice. Mix all ingredients until a homogeneous consistency is obtained
Now put the chicken thighs in a baking dish and pour the prepared marinade onto the meat. Be sure to thoroughly dry the chicken and marinade so that every piece is infused with flavor. Leave for 15-20 minutes to marinate
While the chicken is marinating, let’s start preparing the rice. Add a glass of rice and a glass of water to the baking dish. We also add some dry herbs for flavor, for example, rosemary or any others you prefer
Cover the baking dish with rice and cooked chicken with foil and place it in the oven, preheated to 200 degrees. Bake our lemon chicken with rice for 1 hour
About 10 minutes before the end of cooking, remove the foil from the chicken pan so that the chicken gets a golden and appetizing crust. Continue baking until done
And now our delicious and aromatic lunch is ready! Remove the pan from the oven and cut the chicken into portions. Place on plates and place crumbly rice next to the chicken, which has been saturated with the aroma of lemon and herbs. Serve the dish to the table and enjoy the magnificent combination of flavors

Chicken Marsala is an Italian-style recipe for tender pan-fried chicken breasts in a sweet Marsala wine and mushroom sauce. It's super quick and easy to make for a weeknight dinner AND sophisticated enough for company.

I really like that chicken Marsala one-pot dish…with easy cleanup!
Ingredients
▢ 4 chicken breasts sliced horizontally or pounded until 1/2" thick
▢ 1/2 tsp kosher salt
▢ 1/4 tsp black pepper
▢ 1/3 cup + 1 Tbsp. all-purpose flour
▢ 5 Tbsp olive oil , divided
▢ 3 tbsp unsalted butter , divided
▢ 8 oz white button mushrooms sliced
▢ 8 oz cremini mushrooms sliced
▢ 2 Tbsp shallots (or your favorite onion) minced
▢ 2 cloves garlic minced
▢ 2/3 cup dry Marsala wine
▢ 2/3 cup beef stock
▢ sprig of fresh thyme (optional)
▢ Fresh parsley minced, for garnish
Instructions
To a large pan or skillet, add 2 Tbsp olive oil and 1 Tbsp butter and heat over MED-HIGH heat.
Sprinkle pounded chicken cutlets with salt and pepper on both sides, then lightly dredge in the 1/3 cup flour. Shake off excess flour and add chicken to hot pan. Work in batches if needed, as over-crowding the pan will prevent the chicken from crisping up.
Cook chicken about 3-4 minutes per side, until golden.
Transfer chicken to a plate and set aside.
Add 2 Tbsp olive oil and 1 Tbsp butter to the pan and add mushrooms.
Saute about 5-8 minutes, seasoning with salt and pepper about half-way through cooking.
Remove mushrooms to plate with the chicken and set aside.
Add remaining 1 Tbsp olive oil, then add shallots and garlic. Saute about 1 minute, until soft and fragrant.
Sprinkle in the 1 Tbsp flour and stir to coat. Cook for a minute to get the flour taste out.
Pour in Marsala wine and beef stock, scraping the bottom of the pan with a wooden spoon.
Cook, stirring often, for 2 minutes, or until sauce is slightly thickened.
Slide chicken and mushrooms back into the pan, making sure to get all the juices from the plate into the pan - that's pure flavor there!
Add 1 Tbsp butter to the center of the pan, toss a sprig of thyme in there if desired, then cover the pan and let cook about 2 minutes.
Stir and spoon sauce over chicken.
Garnish with parsley if desired and serve.
USE THE RIGHT MARSALA WINE
Marsala wine is a fortified wine that can be found in grocery stores. There are two main kinds; sweet and dry. Since chicken marsala is a savory dish, dry is definitely recommended. If you’ve never had marsala wine before, it’s very deep in flavor, and won’t disappoint in this dish!
