Hot Cross Buns and Butter Pudding

I collared two of Ava's Nan's delicious hot cross buns and an egg before leaving Ngāmotu New Plymouth yesterday, so I could bake this decadent Hot Cross Buns and Butter Pudding for breakfast today. A more-ish treat made even more delectable by eating it in bed! Happy Easter!!!
Ingredients (serves 2):
2 day-old (or coulple-of-days-old) Hot Cross Buns
2 tablespoons butter, softened
1/2 cup sour cream
4 teaspoons caster sugar
1/2 teaspoon Homemade Vanilla Extract
1 large egg
30 grams/1 ounce good quality dark chocolate (I used Whittaker's Marlborough Sea Salt Caramel and Saffron Dark Chocolate)
Lightly butter a oven-proof dish.
Halve Hot Cross Buns and generously butter all sides. Arrange Hot Cross Buns halves into prepared dish.
In a small bowl, combine sour cream, caster sugar and Vanilla Extract. Stir until well-blended. Break in the egg and whisk until perfectly combined.
Pour cream and egg batter over the Hot Cross Buns in the dish. Allow to sit and soak for at least a couple of hours to overnight.
Preheat oven to 160°C/320°F.
Place the dish in the warm oven, and bake, for 45 minutes, at 160°C/320°F, until golden.
Break dark chocolate into small morsels.
Scatter dark chocolate morsels onto Hot Cross Buns and Butter Pudding just out of the oven. Enjoy immediately!

Bread and butter pudding

An old-fashioned English bread and butter pudding that goes easy on the wallet. Day-old bread works best in this recipe.
Each serving provides 408 kcal, 12.5g protein, 44g carbohydrates (of which 20g sugars), 20g fat (of which 11g saturates), 2g fibre and 0.9g salt.

Ingredients:
25g/1oz butter, plus extra for greasing
8 thick slices white bread, (crusts removed if desired)
50g/2oz sultanas
2 tsp cinnamon powder
350ml/12fl oz full-fat milk
50ml/2fl oz double cream
2 free-range eggs
25g/1oz granulated sugar
nutmeg, grated, to taste
custard, to serve (optional)

Method:
Grease an ovenproof dish, about 23x28cm/9x11in in size, with butter. Spread each slice with on one side with butter, then cut into triangles.
Arrange a layer of bread, buttered-side up, in the bottom of the dish, then add a layer of sultanas. Sprinkle with a little cinnamon, then repeat the layers of bread and sultanas, sprinkling with cinnamon, until you have used up all of the bread. Finish with a layer of bread, then set aside.
Gently warm the milk and cream in a saucepan over a low heat to scalding point. Do not let it boil. Crack the eggs into a bowl, add three-quarters of the sugar and lightly whisk until pale. Add the warm milk and cream mixture and stir well, then strain the custard into a bowl. Pour the custard over the prepared bread layers, sprinkle with nutmeg and the remaining sugar and leave to stand for 30 minutes.
Preheat the oven to 180C/160C Fan/Gas 4. Place the dish into the oven and bake for 30–40 minutes, or until the custard has set and the top is golden brown. Serve with extra custard, if desired.

Sometimes, if we don’t use up all the bread close to the end of the week, mum puts the last of the loaf in the freezer to salvage it just in case we ever run out of bread.
I opened the freezer today and decided this was pushing it:

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 10 slices panettone
• 400ml double cream
• 150g dark chocolate
• 100g caster sugar
• 85g butter
• 3 large eggs
• Icing sugar
𝗠𝗲𝘁𝗵𝗼𝗱:
1. Butter the sides and bottom of an oven-proof dish (although wasn't necessary in this instance as the sauce is very rich and creamy)
2. Cut the slices of Panettone into small pieces, and place in the dish.
3.Place a large mixing bowl on top of a pan of simmering water.
4. Melt the chocolate, butter, sugar and cream in the bowl and stir gently.
5. Beat the 3 large eggs together in a separate bowl.
6. Mix the beaten eggs with the chocolate mixture, and pour over the brioche.
7. Place the ovenproof dish into the fridge to chill – leave overnight if possible.
8. Pre-heat the oven to 180°C / 160°C fan / Gas Mark 4 and bake for 25-30 minutes.
9. Remove from the oven and dust with icing sugar.
10. Serve warm with a scoop of vanilla ice cream.

It's very rich in flavour and good to use up any leftover brioche or panettone from Christmas you (may) have! Very simple to make too.
