How do you like your ampalaya? Sa ensalada? Pan fried with onions? How about with egg? There are many ways to prepare one of the best of bitter flavors... ampalaya or bitter melon.
A simple delicious recipe involves ampalaya, kamatis, and scrambled egg, tossed and fried together.
Not everyone loves the bitter taste, so some home cooks add a bit of sugar, others put the freshly-sliced ampalaya in water for a few minutes before cooking, others "wash" the ampalaya in a mix of salt and water, others blanch it, while others just leave it alone and embrace the bitterness ampalaya has to offer. Sometimes bitter is better!
