My easy instant pot version of Vegan Aloo Matar ( potatoes and peas ) in an onion curry. (Water Saute) Onion Celery Carrot Garlic Ginger Red Bell Pepper Add Spices Cardamon Coriander Cumin Chili powder (Ground habanero pepper) optional Black Pepper Pink Himalayan salt (optional...just add small amount to taste). Curry Powder Tomato paste Stewed tomatoes Crushed tomatoes Cilantro Large cubes of 2 potatoes Water Set instant pot to 9 minutes and then do it 15 minute natural release. Since I didn't have any fresh or frozen peas I used a can of peas (drained) therefore I added them after it was done cooking and let them warm up in the hot soup. I wish I had had more peas. I did take the immersion blender and blend it at some to make it a creamier texture. I added some rice that had been cooked separately...totally optional. No oil is needed. Clearly not authentic this is my take on it and it was yummy and comforting. “When diet is wrong, medicine is of no use.
