Creamy Smoked Haddock Pasta

A hearty lunch, fragrant with smoked fish and garden herbs, these Creamy Smoked Haddock Pasta make a tasty lunch on a grey Monday!
Ingredients (serves 1):
1 cup short (whole-wheat) pasta (like fusilli or penne)
a small Green Onion
2 fluffy sprigs Garden Parsley 
a small bunch Garden Chives 
1/4 cup crème fraîche or sour cream
1 teaspoon olive oil
½ lemon
½ teaspoon freshly cracked black pepper
30 grams/1 ounce smoked haddock
Stir fusilli into a large pot of salted boiling water, and cook, according to package’s directions, generally 9 to 11 minutes until al dente.
Finely chop Green Onion, Parsley and Chives. Spoon chopped herbs into a medium bowl, saving a few for garnish.
Add crème fraîche. Drizzle in olive oil, and thoroughly squeeze in the juice of the lemon halve. Season with black pepper and give a good stir.
Flake in smoked haddock, stirring well to combine. Set aside.
Once the pasta is cooked, drain quickly, and stir into haddock and herb cream, coating well.
Serve Creamy Smoked Haddock Pasta immediately, sprinkled with reserved chopped Green Onion, Parsley and Chives, with a glass of chilled dry white wine, like Sauvignon Blanc.

So my trip to New Jersey is off to an auspicious start (withering sarcasm). My betrothed and I couldn’t pack lunches and had to get it at the airport. Then we were left at the mercy of their dad bringing us something to eat when he picked us up.
He offered to bring hoagies. My betrothed and I were both dismayed. They like a hoagie just fine but I hate cold cuts, and in general the only sandwiches I like are warm ones that I must eat warm because Food Temperature is a thing for me. I doubt he’s heard of bahn mi and I don’t know how popular it is on the east coast anyway. But the act of saying to their dad: “She doesn’t like hoagies,” is a whole can of worms neither of us want to open. (We are trying our damndest to avoid talking about my food sensitivities as relates to autism. He is a psychiatrist with mountains of prejudice around the word.)
So they ask me what I’d like him to bring instead and I looked at them with the sad wet eyes of a creechur past their limits because the airport is stressful and I was overwhelmed. They decide a bagel and cream cheese would be good and I’m so relieved and happy that they’re so smart.
And he says. “All the places that sell them are closed. Would she just like granola?”
No. No I would not like granola to be my whole dinner. What I’d really like is a massive burger but that would violently offend his yuppy health sensibilities and he’s in no way equipped to actually feed me something that substantive.
We start bargaining with this man. Over where to get a bagel. He hits us with “But they’re a breakfast food,” and, “If I can’t find one I’ll just bring granola.”
Every conversation with him is his quiet judgment that we can’t live on kale chips, granola, and vegetarian protein drinks like he does. But he did manage to bring me a bagel.

Last year my doctor told me i might be prediabetic after a blood test and i spent the last 6 months changing my diet severely to try and not die of beeties and i got a test done like a week ago and i'm ok :) i'm very relieved. My mother has diabetes and my grandmother died from it so i've always known i was high risk. glad eating differently actually worked lol

Tzatziki Pasta Salad (Vegetarian)

Very simple to prepare, this hearty and flavourful Tzatziki Pasta Salad benefits from being made in advance, chilled overnight, and makes a beautiful picnic! Happy Saturday!
Ingredients (serves 2):
2 cups short wholewheat pasta (such as fusilli or farfalle)
1 cup Tzatziki
1/2 ripe lemon
1/2 tablespoon olive oil
In a pot of salted boiling water, cook whole-wheat pasta according to package’s directions, generally 9 minutes until al dente.
Once cooked, drain pasta thoroughly again, and let cool completely.
Spoon Tzatziki into a large salad bowl. Thoroughly squeeze in the juice of the lemon halve, and stir in olive oil. Give a good stir.
Add the pasta, tossing well to coat in Tzatziki sauce. Chill in the refrigerator, at least a couple of hours or until serving time.
Serve Tzatziki Pasta Salad with a well-chilled white wine, like a Chardonnay Vigonier or Sauvignon Blanc. Cheers!

The pitter patter of the rain and a bowl of piping hot pasta certainly makes a heavenly combo. So, we have here some of the best pasta recipes for the rainy season. You can prepare them with whole wheat pasta India or any other of your choice.

Salad of pasta with fruits and cherry tomatoes
Prepare a bowl of boiled whole wheat pasta India. Get some fresh fruits, then cut them into small pieces, place them in a bowl, and put them in the refrigerator to cool. After an hour, remove the fruits from the refrigerator and toss with fresh lime juice, black pepper powder, and cream. Now add the boiled pasta and thoroughly mix everything together. Take a handful of fresh cherry tomatoes and cut them into two equal halves and add them to the salad. Toss the ingredients gently and place in the fridge for another 10-15 minutes. Serve with lemon zest on top.
Sun-dried tomato crunch penne pasta
This whole wheat pasta India recipe has a tangy and crunchy flavour. Warm up some olive oil in a wok. Boil the penne pasta and season it with ginger, garlic, onion, salt, sugar, and chilli powder. Sprinkle with a little water and cornflour to thoroughly coat each piece. Fry these in hot oil and remove when they turn brown in colour. Drain the excess oil and add the garlic cloves, onions, and capsicums. After a few minutes, add the sun-dried tomato sauce and a few sun-dried tomato pieces and bring to a boil. When the curry is done, remove it from the heat and add the crunchy pasta. If you soak it for too long, the pasta will become soggy. Serve immediately with grated cheese and fresh parsley.
Vegetable sauce pasta
In a wok, combine olive oil, garlic, ginger, and green chilies. After a few minutes, add chopped bell peppers, onions, carrots, french beans, and spinach leaves. Add salt and sugar and cook until the vegetables have softened. Remove from the heat and set aside to cool before blending into a puree. Return to the wok and add the butter. Add the ginger and garlic paste and cook for a few seconds. Then add the boiled whole wheat pasta India and cook for a few minutes. Remove them and replace with the vegetable puree, water, grated cheese, milk, chilli flakes, and oregano. Allow to boil until the sauce thickens. Cook for a few minutes after adding the fried pasta to the sauce. Serve immediately!
Pasta with seasonal greens 
Add any seasonal green vegetables and herbs to your pasta and it will be healthy. Take a bowl of pasta, add it to a pot of warm water, season with salt, and bring it to a boil. When the whole wheat pasta India is tender, drain the water. Now, properly dice the capsicums, french beans, and broccoli (which are available all year). Add some chopped garlic cloves to a wok with olive oil. Add chopped ginger and green chilies when it becomes aromatic. Then add the fresh vegetables, but no salt. Toss them for a few minutes before adding the pasta. Saute everything together, season with salt, sugar, and crushed black pepper, and cover with a lid for a few minutes to allow the flavours to blend. Serve immediately with fresh coriander and grated cheese.
