Ingredients:
4 medium zucchinis
2 ripe avocados
1 cup fresh basil leaves
1/4 cup walnuts
2 cloves garlic
2 tablespoons lemon juice
2 tablespoons nutritional yeast
Salt and pepper to taste
Red pepper flakes (optional, for extra spice)
Cherry tomatoes (optional, for garnish)
Instructions:
Using a spiralizer or vegetable peeler, create zucchini noodles (zoodles) from the zucchinis. Set aside in a large bowl.
In a food processor or blender, combine the ripe avocados, basil leaves, walnuts, garlic, lemon juice, and nutritional yeast. Blend until smooth and creamy. If the pesto is too thick, you can add a splash of water to reach your desired consistency. Season with salt, pepper, and red pepper flakes if using.
Pour the avocado pesto over the zucchini noodles and toss until the noodles are well coated.
