One Pot Lentil With Coconut Curry Soup

Ingredients:
1 tablespoon coconut oil
1 onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 carrots, diced
2 celery stalks, diced
1 bell pepper, diced
1 cup dried red lentils, rinsed and drained
4 cups vegetable broth
1 can (14 oz) coconut milk
2 tablespoons curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
Salt and pepper to taste
Juice of 1 lime
Fresh cilantro for garnish (optional)
Instructions:
Heat coconut oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and ginger to the pot and cook for another 1-2 minutes until fragrant.
Stir in diced carrots, celery, and bell pepper. Cook for about 5 minutes until vegetables begin to soften.
Add rinsed red lentils to the pot along with vegetable broth, coconut milk, curry powder, turmeric, and cumin. Stir to combine.
Bring the soup to a boil, then reduce heat to low and let it simmer uncovered for about 20-25 minutes, or until lentils are tender.
Season with salt and pepper to taste, and squeeze in the juice of one lime.
Serve hot, garnished with fresh cilantro if desired.
