120 chocolate chip cookies! I have been baking since I was 11 and never have I ever found a better recipe than this one I started using 3-ish years ago.
Follow her directions for the most amazing chocolate chip cookies of your life!

This is the bibliography for our entry in the Anime Foodies series of panels, “Anime Foodies: Laid-Back Camp The Movie”.  The sources include not only places from which we garnered background of the food we were cooking, but also sources that helped us determine how to craft our own version of the recipes we were creating.
This is the second Anime Foodies panel which has a formal bibliography of sources.  Those marked with double asterisks are regular sources we’ve used in all of the panels in the series and are a good starting point for anyone interested in Japanese food and its history.

I have all 3 kids birthdays in 4 weeks this time of year, so now that's over with I thought I'd share cake recipes I used this year 🎂

Chocolate cake: everyone loves this one, 10/10, no need to ever try another chocolate cake recipe
For the oil I use a couple spoonfuls of coconut, melt that, and then canola for the rest of the 1/2 cup. The coconut really adds a good flavor. Other than that I follow the recipe.
Strawberry cake: first time trying strawberry, turned out great 🍓
I used 2 drops of natural red food color but after baking that vanished lol. The cake flavor was pretty mild but the frosting was amazing so it saved it. I made a batch and a half so I could make a full size + a smash cake for my one year old and fortunately didn't mess up the math 😅

Butterfly cake: pretty easy as far as fancy shaped cakes go, and really good flavor for such a simple recipe
I had to buy a piping bag + tip for this but the design is easy and made the kiddo happy 🩷 The biggest hassle was using grams and converting to fahrenheit as it is a UK recipe. It also calls for some butter substitute. Don't do that to yourself.

Cauliflower
1 small head (up to 2 lbs, or 900 g) cauliflower , cut into 1” (2.5 cm) florets
1/4 teaspoon salt
2 tablespoons almond milk (or other plant-based milk) (Footnote 1)
1 tablespoon peanut oil (or vegetable oil)
1/2 cup (65 g) cornstarch
Sauce
1/4 cup (60 ml) freshly squeezed mandarin orange juice (*Footnote 2)
1 tablespoon mandarin orange peel , thinly sliced
3 tablespoons rice vinegar
1 tablespoon light soy sauce (or soy sauce)
1 tablespoon Shaoxing wine

Blackened Chicken Alfredo

I did not use the from scratch Alfredo part of the recipe, I just added a jar of pre-made Alfredo sauce to the grease after cooking the chicken and mixed it in. Threw a handful of mushrooms in there. (I didn’t have fettuccine so I used egg noodles)
Eating the chicken on its own was a little dry but mixing it with the pasta was delicious.

Miso-Marinated Hamachi Bowl ハマチ漬け丼

INGREDIENTS 
1 lb sashimi-grade yellowtail (hamachi) (Read the blog post on how to defrost frozen sashimi-grade hamachi; Sub: salmon or kanpachi/amberjack)
1 knob ginger (1 tsp grated ginger)
2 Tbsp mirin
2 Tbsp sake
4 Tbsp soy sauce (gluten-free soy sauce for GF)
2 Tbsp miso (Any miso would work, but may need to adjust the amount based on the type. I recommend slightly sweet Hikari Miso Enjuku Koji Miso for this recipe or another shiro miso)
Garnish
10 shiso leaves (perilla/ooba)
1 green onion/scallion
¼ tsp toasted white sesame seeds
sushi ginger (gari) (optional)
INSTRUCTIONS
1. To Make the Marinade
Peel and grate ginger. You will need about 1 tsp of grated ginger.
In a small saucepan, combine mirin, sake, and soy sauce.
Bring it to simmer over medium heat and let the alcohol evaporate for a minute. Then turn off the heat and add miso.
Whisk to combine the miso with the sauce. Then add grated ginger and mix all together. Set aside.
2. To cut Hamachi
With a sharp (sashimi) knife, cut the hamachi into 5 mm slices.
3. To Marinate Hamachi
In a glass deep container (with a lid), put some marinade on the bottom and start placing Hamachi slices in a single layer. Then drizzle the marinade on top.
Then place more Hamachi slices on top followed by the marinade.
Once you finish with all the Hamachi slices, close the lid and refrigerate for 30 minutes to 2 hours (2 hrs maximum; otherwise, it gets salty).
4. To Prepare Hamachi Bowl
Cut the green onion/scallion into fine rounds.
Wash the shiso leaves and pat dry with a paper towel. Roll the shiso leaves up. Keep some of the shiso for serving.
Cut the shiso into chiffonade and separate them loosely.
Prepare bowls of steamed rice and set aside so it’s not too hot. Prepare the toppings and take out the Hamachi sashimi from the refrigerator. Place the shiso on top of the rice.
Place the sashimi slices on top of the rice. Garnish with sesame seeds, green onion, shiso chiffonade, and sushi ginger on top. Enjoy!
