Walnut and Arugula Pesto Cheese Tortellini

I made a pretty good salad tonight & I want to share:
Ingredients for salad
Sliced fresh strawberries; plain crumbled goat cheese; toasted and lightly crushed walnuts; mixed greens with arugula
Ingredients for dressing
Unsweetened, unsalted tahini; honey; balsamic vinegar; sesame oil, white sugar (lemon juice would also probably taste pretty good in here)
Method
Lay the walnuts in one layer in a skillet over medium heat. When they start to heat up and smell good, shake the pan to gently toss the walnuts. Let them toast evenly, developing a few darker spots but without burning, then remove from the heat. Let them cool enough to touch, then roughly crush them into smaller pieces with your fingers.
Slice strawberries to your preferred thinness, and place them on the greens with the crumbled goat cheese (I used soft goat cheese that came in a log; drier, already-crumbly goat cheese could work as well, but that kind tends to be saltier). Sprinkle on the walnuts.
For the dressing: mix together an amount of tahini you want to be close to the final amount of dressing, enough balsamic vinegar to loosen it up and add a good acid flavor, enough honey and sugar to sweeten it, and a drop or two of sesame oil. Or more if you really like sesame oil. Also add a little bit of lemon juice.
Measure with your heart, but taste the dressing frequently and mix well. Pour over salad and u done it

Unbeknownst to me, my parents started arguing over which nuts I used in the cookies I baked today. I used walnuts. My dad kept saying walnuts while my mom said pecans. If my mother says they’re pecans, they’re pecans. I am not arguing with her and I live to spite my father 🫡
