ROASTED PEPITAS - Recipe
I'm sorry, but roasted pepitas fresh from the oven, still popping and crackling?
THE BEST SNACK EVER.
- 1 cp fresh pepitas (hulled pumpkin seeds/the green inner bit)
- 1 tsp high heat oil (vegetable, peanut, avocado, ect)
- 1 tsp mixed spices (garlic powder, onion powder, chili powder, ect)
- salt to taste
Seriously, any spice will work for this. If you want them sugary, go for it. Try your favorite flavor combinations. I don't even measure, just eyeball it all. You want shine and flavor on all the pepitas.
1) Line a baking sheet with foil and turn the oven to 325F.
2) Dump pepitas and spices in the middle
3) Add oil and stir together until all the pepitas are shiny
4) Spread the pepitas out in a single layer.
5) Bake at 325F for 10 minutes.
Done.
As the pepitas cool you'll hear them crackling and popping. It means they were fresh and are now cooked and tasty. Eat them by themselves, put them on a salad, share with you friends if you want. I put mine in a tiny dish meant for dipping sauces and eat them at my desk.
Pepitas have 5g of protein, are high in calcium, and have a ton of magnesium. Which means they taste good and are good for your body, will help with muscle cramps, and boost your mood. they also have phosphorous, copper, and zinc.
If you're having a bad day or want a snack to get you to your next meal, make some pepitas. They'll keep well in a jar on the counter for about a week. And, when you make them at home, you control your flavors and salt levels so you don't need to worry about that. Make them as spicy or mild as you want!

Let me introduce to you, the swedish traditional autumn food. "Fläsklägg & Rotmos". 10 hours in the cooker made it perfect!
I had already been considering trying to make some of this (though probably in the Instant Pot), after seeing the appropriate ham hocks on sale pretty cheap. But, this post gave me another push! 😁
Besides that recent root vegetable heavy beef stew, I just used the other half of that chuck for a pot roast with the same veggies the other day. It wasn't all root vegetables; there was stalk celery in there too!
That kind of seasonal delight has been tasting particularly good to me lately, okay? 😊 It's so fresh and seasonal and cheap!
Not sure everyone in the house would be as enthused at the prospect of more turnips quite yet, however. Even in my best attempt at Proper Swedish Style this time. Minus any parsnips, because I do have some limits where root veggies are concerned.
(Not that this is really very different from the recent basic hillbilly pot roast, except for the type of meat and mashing the vegetables up together rather than just leaving them in big chunks. ¯\_(ツ)_/¯ Blame the Scots way back, probably.)

hey jsyk while hellofresh is dummy expensive and i wouldn’t recommend it if you already know how to cook (if you’re a beginner like i was when i had it for 3 months, then it’s worth it), you should know that ALL OF THEIR RECIPES are free on their website and they all fuck hard
i will say that all the cooking instructions for veggies are pretty much the same (season with salt + pepper and roast on the top oven rack at 425F), but if it ain’t broke don’t fix it.
that being said, it also introduced me to methods i wasn’t at all expecting. i would have never thought to use cream cheese in my meat sauce, and now all my friends are constantly asking me to make my special rigatoni.

Also increasingly aware that a LOT of people "manage" getting through the 40+ hour work week by sleeping less than is healthy and relying on stimulants like coffee and energy drinks to keep them going.
For people who are unwilling or unable to do this...work really does just dominate your life. Like we really should not have to rely on unhealthy practices just to have a social life or keep on top of housework or whatever.
I know I post about this a lot but I'm so TIRED all the time and it's just so depressing that this is how we're expected to spend the one life we have.
