For me the word 'copious' is always tied to the connotation or a questionably large amount, rather than simply a lot. 'Copious amounts' to me implies someone off in the corner raising their eyebrow at your breadstick collection and carries a comedic connotation that is literally just not apart of the word.

The reason why is that it's always used to describe alcohol.
