First cook on the @pitbossgrills pro series griddle - this was a great finish to a great Birthday Day. After the initial burn in we went straight for Onions, Zucchini, Eggplant, steamed corn and Grilled Steaks. Overall build quality is spot on. Picanha is at this moment a well known cut. We often decide to not use anything more than just pepper & salt😊. When we go for that approach we serve something on the side. This is also what we did last time and we made a frito based sauce with a kick of Chipotle pepper🌶🔥🔥. See link in bio @jkbbqnl for the recipe. Below 1. Get it othe picanha of the fridge one hour ahead. 2. Made some carvs into the fat layer and add some pepper & salt. 3. Put in the middle the meat probe and set the temperature to 48 Celsius. 4. Put it on the BBQ with the fat layer above. Our BBQ was around 220 Celsius so this time we did it hot and fast directly instead of reverse sear. 5. 48 Celsius reached? Get it off the BBQ and cover it with a kitchen towel for 10 minutes. 6. Then it is time to cut the meat and start plating.
